This recipe was passed down from my Great Grandma Crawford. It is a simple cookie that goes great with coffee or hot chocolate on a cold winter's day. I've baked them with both butter or Crisco. The butter version is a flatter cookie, similar to the ones my Grandma made. Enjoy these cookies, they are a real treat from my childhood.

1 cup butter or 1 cup shortening
1 cup white sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
1 teaspoon baking soda
1 1/2 teaspoons baking powder
1 teaspoon salt
2 cups flour
1 cup crispy rice cereal
1 cup crushed corn flakes
2 cups old-fashioned oatmeal
1 cup shredded coconut

Steps:

  • Mix brown sugar and white sugar in the mixer.
  • Add butter, beaten eggs, and vanilla. Mix well.
  • Mix four,baking soda, baking powder, and salt in a separate bowl. Add to sugar mixture, mix well.
  • Add oatmeal, crushed cornflakes, Rice Crispy cereal, and coconut. (When I do this in my mixer the batter is very thick.).
  • Spoon on a cookie sheet and flatten a little with a fork or spoon.
  • Bake at 400 degrees for 8-10 minutes.

1 cup unsalted butter
1/2 cup granulated sugar
1 1/2 cups sifted all-purpose flour
3/4 cup cocoa, sifted
1 cup mascarpone
2 tablespoons confectioners' sugar
1 cup sifted confectioners' sugar
1 tablespoon egg white or powdered egg white mixed according to package instructions*

Steps:

  • Cream together the butter and sugar for 5 minutes. Add the cocoa and flour and mix together well until it combines. Allow to rest for 1 hour, covered in plastic.
  • Preheat oven to 350 degrees F.
  • With a rolling pin, roll the dough to 1/4-inch thickness and with a cookie cutter shaped like a football, cut the dough into footballs. Place on parchment paper on cookie sheet and bake for 10 minutes. Turn the sheet and bake another 5 minutes. Allow to cool.
  • Mix together the mascarpone and 2 tablespoons of confectioners' sugar until well blended. Spread a little of this mixture on 1 football and top with a second football to make a sandwich. Continue spreading the mixture until all cookies are used.
  • To make the royal icing, combine the 1 cup of confectioners' sugar with the egg white. Mix until the consistency is very smooth. Pour icing into a piping bag fitted with a round #1 tip. Pipe a football lace design on the cookies. Let dry.

Tempted to eat these for breakfast everyday. These are a staple as a breakfast food on the long drive to Grandma's house. You can add raisins or any other dried fruit if you desire. Honey, can we stop for a coffee? I know we have only been driving 10 minutes!

  • Cream butter and sugar.
  • Add eggs and vanilla.
  • Stir in everything else.
  • Drop by spoonfuls onto greased sheets.
  • Bake 375' 12 minutes.

Currently I am obsessed with no bake cookies. #34401 are some of my favorites, but I was looking for ones without chocolate and came across this recipe in my "More With Less" cookbook. Really easy and fast and taste quite wonderful. My child who hates coconut even liked them!

1/2 cup brown sugar
1/3 cup light corn syrup
1 teaspoon vanilla
3/4 cup peanut butter
3 cups flake cereal
1 cup coconut

Steps:

  • In a large pan mix the brown sugar and the syrup.
  • When it starts to boil add the vanilla and the peanut butter, stirring well.
  • Take it off the heat and add the cereal and coconut. Mix well and drop by teaspoonfuls onto a cookie sheet you have sprayed with non stick spray.
  • Let cool.

1/2 cup light corn syrup
1 tablespoon butter
1/2 teaspoon vanilla
4 cups Cocoa Pebbles cereal
white decorating gel

Steps:

  • Microwave chocolate, corn syrup and butter in large microwaveable bowl on High 2-1/2 minute Stirring after 1-1/2 minutes. Blend in vanilla.
  • Add cereal: Mix well. Cool 10 minute Shape into 18 (3 inch long) football shapes with lightly moistened hands. Place on wax paper and cool completely.
  • Use decorating gel to add laces. Let stand until laces are firm.
