Tastes just like a chocolate wafer pie crust...but only has 5 ingredients as opposed to about 50! This is extremely easy and I promise you won't do more work than if you used chocolate cookies.

⅔ cup all-purpose flour
¾ cup unsweetened cocoa powder
1 pinch salt
½ cup butter, melted

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Whisk sugar, flour, cocoa powder, and salt together in a bowl until thoroughly combined. Pour melted butter into the mixture and stir to incorporate. Press dough into the bottom and up the sides of a 9-inch pie pan.
  • Bake crust in preheated oven until the sides are firm and the bottom bubbles slightly, about 10 minutes.

½ cup dark cocoa powder
½ teaspoon baking soda
½ cup butter, softened
⅓ cup white sugar
⅓ cup brown sugar
1 egg
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
  • Whisk flour, cocoa powder, and baking soda together in a bowl. Beat butter, white sugar, brown sugar, egg, and vanilla extract together with an electric mixer in another bowl until smooth and creamy. Gradually beat flour mixture into butter mixture until dough is just incorporated. Spread dough out onto prepared baking sheet.
  • Bake in the preheated oven until set, about 14 minutes. Cool completely and crumble as desired.

1 cup plus 2 tablespoons chocolate graham-cracker crumbs (from about 7 cookies)
1 tablespoon cocoa powder
1 tablespoon turbinado sugar
1/2 teaspoon coarse salt
2 tablespoons butter, melted and cooled
1 large egg white

Steps:

  • Preheat oven to 350 degrees.
  • Place graham cracker crumbs, cocoa powder, turbinado sugar, and salt in the bowl of a food processor; pulse to combine. Add melted butter and continue pulsing until well combined. Add egg whites and continue pulsing until crumbs begin to stick together.
  • Trace an 8-inch circle on a piece of parchment paper. Place paper pencil-side down on a baking sheet. Turn crumb mixture out onto parchment and form into a flat, even 8-inch disc, using the tracing as a guide.
  • Transfer to oven and bake until firm and middle appears dry, 12 to 15 minutes. Let cool completely before using.

1/4 cup cocoa powder
1 1/2 cups milk
3 large eggs

1 teaspoon baking powder

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter the inside of a 9 inch springform pan. Line the bottom with a piece of parchment paper and lightly butter the paper. Set aside.
  • In a large bowl, stir together the breadcrumbs, cookie crumbs, cocoa powder and milk. Allow the mixture to sit and hydrate for 5 minutes. This homemade version of a chocolate cookie crumb crust blows the kind made with packaged cookies away! It's a perfect crust for cheesecakes, crumb crust pies, and tarts. It's a little extra work, but I promise, the pure chocolaty flavor and sweet/salty balance is worth it!

7 tablespoons butter, softened
3/4 cup granulated sugar
1 cup all purpose flour, sifted
1/2 cup dutch process cocoa powder, sifted
1/2 teaspoon kosher salt
3 tablespoon butter, melted and cooled

Steps:

  • Preheat the oven to 350° Fahrenheit. Line a baking sheet with parchment paper and set aside. In the bowl of a mixer fitted with a paddle attachment, cream butter and sugar for 4 to 5 minutes on medium to high speed, scraping down the sides of the bowl as needed.
  • Turn off the mixer and add flour, cocoa powder, and salt. Turn the mixer on low and mix until homogeneous, taking care to scrape down the sides and bottom of the mixer. The mixture will feel very dry and crumbly.
  • Pour the mixture onto the prepared pan and spread it out so it's approximately 1/2 inch thick. Bake for 10 minutes, rotating halfway. Remove the pan from the oven and stir the crumble around, moving the outer edges into the center to prevent burning. Bake for an additional 10 minutes. Cool completely in the pan.
  • In the bowl of a food processor, pulse to pulverize the cookie chunks until they are a small uniform crumbs, about 20 seconds. Transfer the crumbs to a bowl and stir in the melted butter. The crumbs will feel slightly wet. Using your fingers, press the crumbs into the bottom and sides of the pie plate, forming a uniform crust. Refrigerate for 20 minutes before filling.

  • heat the sugar and water in a pan.
  • cut the Plain chocolate into small pellets about the size of a finger nail.
  • when the sugar reaches 130 degrees celsius / 266 fahrenheit.
  • note: if you haven't got thermometer wait until all sugar dissolved and starting to change medium brown colour.
  • then take off the heat.
  • get a whisk, add the chocolate bits and stir with the whisk.
  • make sure all the sugar coats the chocolate and stir for about 2 minutes.
  • empty out the mixture to a container.
  • pour hot water into the pan with the whisk and boil until the mixture starts to dissolve. it makes it easier to clean.
  • you can add different chocolate flavours if you like and spices.
