Place the bananas cut into pieces, the yogurt, and the cinnamon in a blender and blend on high until creamy. Add the banana mixture to the eggs and sugar mixture and mix for 3 to 4 minutes until it's nicely incorporated. Add the flour mixed with the baking powder and beat until obtain a creamy and homogeneous mixture. Pour the dough into the prepared tin and sprinkle with brown sugar. Bake for about 50 minutes. 125 grams (4 1/2 ounces) yogurt
150 grams (2/3 cup) granulated sugar
200 grams (1 1/2 cups) all-purpose flour
1 teaspoon baking powder

Steps:

  • Preheat the oven to 180ºC (350ºF). Grease a loaf tin (24 x 10 centimeters with 7 centimeters high (9 1/2 x 4-inch with 2 3/4-inch-high)) with margarine and dust with some flour.
  • In an electric mixer, beat on medium speed the eggs and the sugar until obtain a creamy mixture. Place the bananas cut into pieces, the yogurt, and the cinnamon in a blender and blend on high until creamy. Add the banana mixture to the eggs and sugar mixture and mix for 3 to 4 minutes until it's nicely incorporated. Reduce the mixer speed to low, add the flour mixed with the baking powder and beat until obtain a creamy and homogeneous mixture.
  • Pour the dough into the prepared tin and sprinkle with brown sugar. Bake until a toothpick inserted in the center comes out clean, about 50 minutes (the time depends on the oven).
  • When the cake is cooked, remove from the oven and unmold. Let cool to room temperature and serve.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease two 9x5-inch loaf pans and line the bottoms with parchment paper.
  • Sift flour, cocoa powder, cinnamon, salt, baking powder, and baking soda together into a bowl. Whisk buttermilk, water, and vanilla extract together in a separate bowl.
  • Combine butter and sugar in a third, large bowl; beat with an electric mixer until light and creamy, about 5 minutes. Add eggs, one at a time, beating after each addition until egg is completely incorporated. 1/3 cup canola oil

100ml sunflower oil, plus extra to grease
175g caster sugar
175g self-raising flour
½ tsp bicarbonate of soda
4 tbsp cocoa powder
100g chocolate chips or chunks
175g very ripe bananas
3 medium eggs, 2 separated
50ml milk
100g milk chocolate
100ml soured cream
handful dried banana chips, roughly chopped

Steps:

  • Heat oven to 160C/140C fan/gas 3. Grease and line a 2lb loaf tin with baking parchment (allow it to come 2cm above top of tin). Mix the sugar, flour, bicarb, cocoa and chocolate in a large bowl.
  • Mash the bananas in a bowl and stir in the whole egg plus 2 yolks, followed by the oil and milk. Beat the egg whites until stiff. Quickly stir the wet banana mixture into the dry ingredients, stir in a quarter of the egg whites to loosen the mixture, then gently fold in the rest. Gently scrape into the tin and bake for 1 hr 10-15 mins, or until a skewer inserted comes out clean.
  • Cool in the tin on a wire rack. To make the icing, melt the chocolate and soured cream together in a heatproof bowl over a pan of barely simmering water. Chill in the fridge until spreadable. Remove cake from tin, roughly swirl icing over and scatter with the banana chips.
