This yummy pudding is so easy to make and tastes so much better than store bought or boxed mixes. I really like knowing exactly what's in the food we eat. Give this one a try, you'll never go back to the boxed pudding again!

Steps:
- Mix sugar, cocoa, cornstarch and salt in heavy bottom saucepan. Gradually add 1/2 of the milk, whisking until smooth. Add remaining mix, whisking to combine.
- Over medium heat, continue whisking until pudding thickens and comes to a boil, about 5 minutes. Allow to boil 1 minute longer and then remove from heat.
- Add chocolate chips and vanilla extract and whisk until chocolate melts and pudding is smooth.
- Divide between 2 dessert dishes, cover with plastic wrap touching the surface of the pudding so that it doesn't form a skin (yuck!). Cool completely- overnight is best.
- Serve with whipped cream.

- Preheat oven to 350 degrees.
- Combine first 5 ingredients.
- Stir in milk, butter, vanilla.
- Pour into a 1 quart baking dish.
- Combine 1 Tbsp sugar and 1 1/2 tsp cocoa. Sprinkle over cake batter.
- Pour 1/4 cup hot water over sugar/cocoa mixture.
- Bake at 350 degrees for 18 minutes.
- Remove from oven and let stand for 10 minutes.
- Spoon onto dessert plates and top with ice cream if desired.

- Butter the inside of a 1.2 litre pudding bowl and line the base with a disc of buttered greaseproof paper.
- Melt the butter, syrup and sugar in a saucepan. Remove from the heat and stir in the milk and egg. Add the cocoa to the flour, then tip this mixture into the pan with the cinnamon and soda.
- Pour the mixture into the pudding bowl, cover tightly with foil and steam for 11⁄4 hours. Just before the end, heat the sauce ingredients until melted, stirring all the time.
- Turn the pudding out (run a knife around the inside of the bowl if necessary) and discard the paper disc. Pour the sauce over the top and serve immediately.

CHOCOLATE PUDDING FOR ONE
Looking for that chocolate pudding fix, and don't want to make alot ? Then here's the recipe to try. I found the basic recipe in the TOH 's 2001 Annual recipes, it was sent in to them by Anne Boesiger of Meridian, Idaho. Since I like a thicker and more intense chocolate flavor, the amounts of cornstarch and chocolate were changed.The database wouldn't let me add just a pinch of salt, so I had to put 1/8 teaspoon. Also, the way that the ingredients were added was changed too. Chill time is included in cook time. The longer you let this chill, the more intense the chocolate flavor will be. - In a small bowl, mix together baking mix, white sugar, and cocoa.
- Stir in milk and vanilla (batter will be stiff).
- Divide batter between two greased 8 to 10 inch custard cups.
- For topping, combine brown sugar and cocoa in a separate bowl. Stir in boiling water and divide evenly over batter.

- Put the cream, milk, 100g of the dark chocolate, the cocoa powder, sugar, vanilla and a pinch of salt in a saucepan over a low-medium heat and whisk until the mixture is smooth and fully combined. Pour into a large bowl to cool slightly.
- Meanwhile, split the hot cross buns and spoon 1 tsp chocolate spread over the base of each, then sandwich with the bun tops. Arrange the buns in a 5cm-deep, 30 x 20cm baking dish in a single layer, then sprinkle over the rest of the chopped dark chocolate.
- When the chocolate cream mixture has cooled to room temperature, whisk in the eggs. Slowly pour this custard over the hot cross buns, then cover and chill for 1 hr until some of the custard has been absorbed by the buns.
- Heat the oven to 180C/160C fan/gas 4. Bake for 40-45 mins until the top is golden and the custard is gently set. Leave to stand for 5 mins, then serve with ice cream, if you like.

- 1. Pour your cornstarch and sugar in a sauce pan. Whisk them together until they are combined
- 2. Heat the pan over medium/high heat and slowly incorporate the milk to the mixture constantly whisking the mixture to avoid lumps
- 3. Bring the milk,sugar,cornstarch mixture up to a simmer, allow it to simmer for about 5 minutes
- 4. Remove the pot from the heat.Add your chocolate chips, butter and vanilla into the pot. Stir until the chocolate is melted and everything else is incorporated
- 5. Pour the pudding into four small individual containers Chill for at least 2 hours
- 6. *Note* whether your using a mixer or a hand held one; put the bowl that you will be using in the fridge or freezer for a few minutes before making this recipe. It will help the cream whip faster and a lot more fluffier (is that even a word?!?! LOL)
- 7. Take your bowl out of the fridge or the freezer Add your heavy cream and powder sugar and vanilla Mix on high until you get stiff peaks Top your pudding with the whipped cream and enjoy!
