SUPER MOIST SPICE CAKE
Homemade and super moist spice cake with tangy cream cheese frosting. Such an easy recipe packed with TONS of flavor!

Steps:
- Preheat the oven to 350°F (177°C) and grease a 9×13 inch pan. I always use this glass pan.
- Whisk the flour, baking powder, baking soda, salt, cinnamon, and other spices together in a large bowl. Set aside.
- Whisk the oil, brown sugar, applesauce, eggs, vanilla extract, and molasses (if using) together in a medium bowl. Pour the wet ingredients into the dry ingredients and whisk until combined. Fold in the shredded apple until combined.
- Spread batter into the prepared pan. Bake for 45-50 minutes. Baking times vary, so keep an eye on yours. The cake is done when a toothpick inserted in the center comes out clean. If you find the top of the cake is browning too quickly in the oven, loosely cover it with aluminum foil.
- Remove the cake from the oven and set on a wire rack. Allow to cool completely. After about 45 minutes, I usually place it in the refrigerator to speed things up.
- In a large bowl using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the cream cheese and butter together on high speed until smooth and creamy. Add 3 confectioners' sugar, vanilla, and salt. Beat on low speed for 30 seconds, then switch to high speed and beat for 2 minutes. If you want the frosting a little thicker, add the extra 1/4 cup of confectioners sugar (I add it). Spread the frosting on the cooled cake. Refrigerate for 30 minutes before serving. This helps sets the frosting and makes cutting easier.
- Cover leftover cake tightly and store in the refrigerator for 5 days.

- In a large bowl, cream butter and brown sugar until well blended. Add eggs, one at a time, beating well after each addition. Beat in applesauce and 1/2 cup coffee. Combine the flour, 1/4 cup baking cocoa, cinnamon, baking soda, allspice, salt and cloves; gradually beat into creamed mixture until blended. CHOCOLATE CHIP SPICE CAKE
I made this by playing with a basic quick bread/cake recipe that my mother taught me when I was about 10. She used to flavor it with anything she had on hand: oranges, chocolate, pureed carrots or just plain vanilla with pecans to name a few. It's very moist and is a friendly companion for your morning coffee. I'm not a fan of frostings but you could frost it if you like.

- Preheat oven to 375 degrees. In a bowl, mix all the dry ingredients except the sugar and set aside. In another bowl, cream the butter with the sugar. Add the eggs one by one, mixing well after every addition. Add the vanilla and mix well. Start adding the flour mixture, 1/3 at a time and alternating it with the milk, beating on low so that it incorporates smoothly. Pour the chocolate chips in and mix them in with a spatula or spoon. - In a large bowl, cream butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. CHOCOLATE CHIP APPLESAUCE CAKE
At last, an easy-to-make "scratch" cake recipe that does not need frosting! Recipe has been modified from one given to me by a friend years ago... 6/30/07 NOTE: This is not a standard chocolate cake recipe nor a spice cake recipe. The cocoa and chocolate chips help add to the "dark chocolaty" flavor and appearance but the applesauce and spices give it a unique flavor addition, producing a dark, moist cake with a different flavor with the added bonus of being a no-frost cake.

- Grease and flour a 13x 9" baking pan.
- In large mixing bowl, mix oil and 1 1/2 c sugar.
- Add beaten eggs, flour (no need to sift), cinnamon, salt, applesauce, baking soda and cocoa and mix until well-blended.
- Pour into pan and sprinkle with 1 1/2 T sugar, nuts (chopped walnuts or pecans) and 3/4 C chocolate chips.
- Bake at 350 dg. for 30-40 mins, until top springs back when touched, covering with foil if top gets too brown.
- Moist and delicious!
