2 tablespoons unsalted butter, softened
1/2 cup plus 1 tablespoon unsweetened cocoa powder
3 cups all-purpose flour
1 1/2 cups granulated sugar
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
2 cups freshly squeezed orange juice, plus 2 tablespoons finely grated zest
3/4 cup mayonnaise
2 tablespoons balsamic vinegar
1 teaspoon vanilla extract
1 cup confectioners' sugar
2 tablespoons unsweetened cocoa powder
2 tablespoons freshly squeezed orange juice

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Mix together the softened butter and 1 tablespoon of the cocoa to make a thick paste. Use this paste to paint the inside of the Bundt pan. Set aside.
  • In an electric mixer, combine the flour, granulated sugar, baking soda, salt, cinnamon and remaining 1/2 cup cocoa and mix until blended. Add the orange juice, mayonnaise, vinegar and vanilla and mix until just combined, 1 to 2 minutes. Fold in the orange zest. Pour the batter into the prepared pan and bake until a toothpick inserted in the cake comes out clean, 45 minutes. Cool in the pan for 10 minutes, and then turn out onto a cooling rack to cool completely.
  • For the chocolate glaze: Mix the confectioners' sugar and cocoa together. Whisk in the orange juice, 1 tablespoon at a time, until it reaches a good consistency to drizzle. Drizzle the glaze over the cake.

200g caster (super fine) sugar
200g soft butter
finely grated zest of two oranges
3 medium eggs, beaten
1 teaspoon orange extract (optional)
225g self raising flour
100g dark or milk chocolate chips
1/2 tablespoon plain flour (for the chocolate chips)
FOR THE ORANGE SYRUP:
100g Icing (confectioner's) sugar
juice of one orange

Steps:

  • Preheat the oven to 180C/160Fan/350F/Gas mark 4. Grease and line the base and sides of a 900g (2lb) loaf tin.
  • Place the sugar, orange zest and butter in a large mixing bowl (I use a free standing mixer.) Beat on high speed for about 5 minutes or until the mixture is very light and fluffy.
  • Gradually add the beaten eggs, beating well after each addition. Once all the eggs have been added and the mixture is smooth, fold in the orange extract if using and flour - taking care not to over mix. Finally, coat the chocolate chips in the flour (to prevent them from sinking to the bottom of the cake) and fold in to the batter.
  • Pour the batter into the lined cake tin and bake for 40-45 minutes or until risen, golden and a skewer inserted in the middle of the cake emerges clean.
  • While the cake is baking, make the syrup. Place the icing sugar and orange juice in a small saucepan and simmer on a medium to high heat until the mixture has thickened and starts to look syrupy. Remove from the heat and set aside.
  • As soon as you remove the cake from the oven (and checked it has fully baked in the middle) pierce it all over with a skewer. Slowly and evenly pour the syrup all over the cake, allowing the holes to soak it all up. Leave the cake to fully cool in the tin - if you attempt to unmould the cake while it is still warm, it will collapse!

I found this posted a few places and it seemed intriguing enough to try (and I had the ingredients for it). I was very happy with the way it turned out. It's a loaf cake, not too sweet, and the hint of orange seems to intensify the chocolate. It's somewhere between a cake and a bread, and quite good, especially with a cup of coffee. As an added bonus, it's not a lot of work to make, all easily done by hand without beating or a mixer. (I did leave out the nuts because I can't have them, but I'm sure it would be just as good with them added).

2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 cup sugar
1/2 cup chopped walnuts
1 cup semi-sweet chocolate chips, divided
2 eggs
1/4 cup milk
1/2 cup orange juice
2 teaspoons grated orange rind
1 teaspoon vanilla
1/3 cup butter or 1/3 cup margarine, melted & cooled

Steps:

  • Preheat oven to 350.
  • Grease and lightly flour an 8 1/2 x 4 1/2 inch loaf pan.
  • In a large bowl, combine flour, baking powder, salt, baking soda and sugar.
  • Stir in nuts and 3/4 cup of the chocolate chips.
  • In a medium bowl, beat eggs with the milk, orange juice, rind and vanilla.
  • Blend in the butter or margarine.
  • Add egg mixture to the flour mixture, folding just until the dry ingredients are moistened.
  • Spread batter in the prepared loaf pan and sprinkle evenly with the remaining chocolate chips.
  • Bake until golden 55-60 min or till a wooden pick inserted in middle comes out clean.
  • Cool in the pan 10 minutes, then turn out onto a wire rack.
  • Cool completely before slicing.

Steps:

  • Preheat oven to 350°; grease the inside of a 9 x5 inch loaf pan and dust with flour.
  • Combine the flour, baking powder, baking soda, and salt in a bowl.
  • In a large bowl, combine the butter and brown sugar; cream with an electric mixer on med-high speed until fluffy, about 3 minutes, scraping down the sides of the bowl once or twice as necessary.
  • Beat in the eggs, one at a time, scraping down the sides of the bowl after each addition.
  • Beat in the sour cream; stir in the orange zest and vanilla.
  • With the mixer on low, add flour mixture 1/2 cup at a time, scraping down the sides of the bowl a few times as necessary.
  • After the last addition, mix for 30 seconds on medium speed; stir in the chocolate chips.
  • Scrape the batter into the prepared pan and smooth the top with a rubber spatula.
  • Bake until the cake is golden brown and a pick comes out clean, 50-55 minutes.
  • Let the cake cool in the pan for about 10 minutes, invert it onto a wire rack, and then turn it right side up on a rack to cool completely.
  • Make the glaze: whisk together the sour cream, powdered sugar, and vanilla; spread the glaze over the top of the cake with an offset spatula, letting it drip down the sides.
  • Let stand until the glaze is set, about 1 hour; slice and serve.
  • Store uneaten cake in a cake keeper or loosely wrap in plastic and store at room temperature for up to 3 days.

8 ounces cream cheese, softened
3/4 cup fresh orange juice
1/2 cup oil
1/4 cup sugar
4 eggs

  • Preheat oven to 325. Grease and flour 12 cup Bundt or tube cake pan.
  • Place all ingredients in mixing bowl, and mix at low speed for about 1 minute, scraping bowl constantly.
  • Increase mixer speed to medium and beat for 2 minutes more, or until batter is well mixed.
  • Pour into pans and bake for 60-65 minutes, or until tests done.
  • Cool in pan for about 25 minutes, then remove from pan and cool completely before drizzling with a glaze made from powdered sugar and orange juice.

This is my absolute favorite cake, which I request every year for my birthday. It comes from a lovingly-used, almost-falling-apart Betty Crocker cookbook that my mother owns. It is very rich and somewhat dense with bits of chocolate chips throughout, creamy butterscotch filling and decadent chocolate glaze. It is best served with a large glass of milk or scoop of vanilla ice cream. It can be made as a layer cake or bundt cake (omitting the filling) with or without the glaze. (Note: Preparation time does not include time required for cooling cake or filling.)

2 cups flour
1 cup brown sugar, packed
1/2 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt

1 1/4 cups milk
3 eggs

1 1/4 cups chocolate chips, roughly chopped (or miniature chocolate chips)

Steps:

  • Preheat oven to 350°F.
  • In a large mixing bowl, combine all cake ingredients except chocolate chips and walnuts. Blend well with a handheld mixer, scraping the sides of the bowl with a spatula. Fold chocolate chips and walnuts (optional) into batter.
  • Divide batter in half and pour evenly into two greased and floured round layer cake pans. Bake for 40-45 minutes or until toothpick inserted into center comes out clean. Cool on a wire rack for at least one hour before turning out.
  • Carefully turn first cake out of pan onto cake plate with flat side on plate and round side facing up. With a knife, carefully trim the rounded edge to make a flat surface for the filling.
  • For filling, stir together brown sugar, cornstarch, salt and water in a medium saucepan. Over medium heat, cook (stirring constantly) until mixture begins to thicken (to a pudding-like consistency) and boil. Boil and stir for one minute. Remove from heat. Cool for at least 10 minutes. Spread filling over top of bottom layer of cake.
  • Carefully turn second cake out of pan. Place flat side of cake atop bottom layer of cake (covered with filling) with round side facing up. Do not trim rounded top surface of cake.
  • For glaze, heat chocolate chips, butter and corn syrup over low heat, stirring constantly, until chocolate is melted and mixture is smooth. Cool slightly. Spread over top layer of cake, allowing some of the glaze to drip down the sides of the cake.
  • For bundt cake without filling, follow cake and glaze instructions. Baking time for cake may vary due to its being one layer instead of two. Turn cake out of bundt pan with flat side facing down and top with glaze as directed above.

I found this recipe while looking for things to do with my surplus of oranges this season. I've made this several times now and must tell you that this cake is divine! It looks like a lot of work, but really isn't. If you have a Microplane zester it's a dream to make!

1 large orange
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1/2 cup butter, at room temperature
1 cup granulated sugar
2 large eggs, at room temperature
1/4 cup orange juice (from the orange listed above)
3/4 cup buttermilk (see Note) or 3/4 cup sour milk (see Note)
1 cup white chocolate chips
1 tablespoon orange zest (from the orange listed above)
1/4 cup orange marmalade
2 tablespoons butter
1 cup confectioners' sugar
2 ounces cream cheese, at room temperature
orange juice (from the orange listed above)
orange zest (from the orange listed above)

Steps:

  • Preheat oven to 350°F Line a 9 x 13-inch baking pan with parchment paper.
  • Using a Microplane zester, remove the zest from the orange. Set aside 1 tablespoon for the cake and leave the rest for the icing.
  • Juice the orange. Keep 1/4 cup for the cake and leave the rest for the icing.
  • In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  • In a large bowl, cream together the butter and sugar.
  • Add the eggs, one at a time, beating until combined.
  • Beat in 1/4 cup orange juice and the buttermilk or sour milk (see Note).
  • Add the dry ingredients to the wet ingredients.
  • Beat for 3 minutes on medium speed.
  • Fold in the orange zest (reserve the remaining zest for the icing).
  • Pour the batter into the prepared baking pan.
  • Sprinkle the white chocolate chips on top of the batter.
  • If they do not sink in, tap pan gently once on the counter.
  • Bake for 20 to 25 minutes until lightly browned and cake tests done in center.
  • Glaze:.
  • While cake is baking, melt the orange marmalade and butter in the microwave about for 45 seconds.
  • Stir to combine.
  • Brush the glaze over the top of the warm cake as soon as it comes out of the oven.
  • Then let cake cool on a rack to room temperature before adding icing.
  • Icing:.
  • Combine the confectioners' sugar with the cream cheese and about 1 teaspoon of orange juice until smooth.
  • Add a little more juice or milk if too stiff.
  • Mix in the remaining orange zest.
  • Scrape into a zip-top bag, press out the air, and seal.
  • Cut a small corner from the bottom of the bag and drizzle the icing over the top of the cooled orange cake in a zig-zag pattern.
  • Note: You can easily make sour milk: Measure 1 tablespoon of lemon juice or distilled vinegar into a 1 cup measure, then add enough milk to make 1 cup. Plain yogurt may also be substituted for the buttermilk or sour milk.
