300g self raising flour
1 teaspoon baking powder
50g cold unsalted butter cubed
80g caster sugar
150g milk or plain chocolate chips
2 eggs , lightly beaten
225ml milk
1 teaspoon vanilla extract

Steps:

  • preheat the oven to 200 c / 400 f / gas mark . line 12 muffin cases.
  • Mix the flour and baking powder together in a large bowl. Rub in the butter untill the mixture is like breadcrumbs. Stir in the sugar and the chocolate chips.
  • In a separate bowl mix the eggs , milk and vanilla extract together , then pour the mixture all at once into the dry ingredients and mix briefly.
  • Spoon the batter into the muffin cases and bake for 15-20 minutes or until risen , golden and firm to touch. cool in the tin for 10 minutes.
  • after 10 minutes of cooling in the tin , transfer to a cooling rack or serve straight away.

  • Make a well in center of dry ingredients.
  • Add milk mixture and stir just to combine.
  • Stir in chocolate chips and nuts.
  • Spoon batter into prepared muffin cups.
  • Now bake for 15-20 minutes or until a cake tester inserted in center of one muffin comes out clean.
  • Remove muffin tin to wire rack.
  • Cool for 5 minutes.
  • Remove from tins to finish cooling.

Steps:

  • Heat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 muffin cups or line with baking cups.

Cooking spray (or 12 paper baking cups)
1/2 cup (1 stick) margarine or butter
2 eggs
1 cup milk
2 cups all-purpose flour
3/4 cup packed brown sugar
1 tablespoon baking powder

1/2 cup semisweet chocolate chips

Steps:

  • Heat the oven to 400°. Spray each cup in muffin pan with the cooking spray, or put a paper baking cup in each muffin cup. Save for later (you will need the muffin pan in step 4).
  • Put the margarine in the saucepan. Heat over low heat for about 1 minute, stirring a few times with the wooden spoon, until margarine is melted. Take saucepan off hot burner. (Or put margarine in the microwavable bowl. Cover bowl with waxed paper. Microwave on High 30 to 45 seconds or until margarine is melted.) Cool for 5 minutes.
  • Crack the eggs on side of the small mixing bowl, letting eggs slip into bowl. Add melted margarine and milk to egg. Beat with the fork until well mixed.
  • Put the flour, brown sugar, baking powder and salt in the large mixing bowl. Stir with the wooden spoon until mixed. Add the milk mixture to flour mixture. Stir just until flour is wet (the batter should still be a little lumpy; you don't want it to be smooth). Stir in the chocolate chips. Spoon batter into the sprayed muffin cups until cups are about 2/3 full.
  • Bake 18 to 20 minutes or until the muffins are golden brown and the toothpick poked in center of muffin comes out clean.
  • Use the pot holders to take muffin pan out of oven. Carefully tip pan on its side to take muffins out of cups, and put muffins on the wire cooling rack. Cool muffins on cooling rack 10 minutes before serving.

6 Tbsp vegetable oil (80g)
1 large egg, room temperature (56g)
1 tsp vanilla (4g)
2/3 cup chopped chocolate or chocolate chips, tossed with 1 tsp of flour (110g)
2 Tbsp coarse sugar, optional

Steps:

  • Preheat the oven to 425°F / 218°C and line a muffin pan with 6 paper liners. Set aside.
  • In a medium-sized bowl whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
  • In a separate bowl whisk together the buttermilk, sour cream, oil, egg and vanilla extract until combined.
  • Fold the dry ingredients into the wet ingredients with a rubber spatula, and mix until just combined (DO NOT OVER-MIX YOUR BATTER!). Your batter should not be all the way smooth, and it's ok if there are still some small chunks in it.
  • Gently mix the flour-tossed bits of chocolate into the batter until they're evenly distributed.
  • Divide the muffin batter evenly between the 6 muffin cups, filling them to the top of the liner.

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Butter 12 large muffin pans well or line with paper muffin cups.
  • Sift together all-purpose flour, whole wheat flour, and baking powder. Reserve.
  • Combine mashed banana with brown sugar until smooth.
  • Beat in eggs, milk and melted butter.
  • Stir in dry ingredients only until blended.

  • Heat oven to 200C/180C fan/gas 6 and line a 12-hole muffin tin with paper cases. Sift the flour and bicarbonate of soda into a large bowl, then stir in the chocolate chips and sugar. These double chocolate chip muffins are more cake-y than some versions, but that means they keep for longer. Ideal if you're making for hungry mouths who have a few days off school.

Number Of Ingredients 12

250g/9oz plain flour
45g/1½oz cocoa powder
125g/4½oz golden caster sugar
65g/2¼oz soft light brown sugar, any lumps crumbled
1½ tsp baking powder
½ tsp fine salt
2 free-range eggs
150ml/5fl oz buttermilk (or milk plus 1 tbsp lemon juice)
1 tsp vanilla extract
175ml/6fl oz hot water
110g/3¾oz unsalted butter, melted, plus a little extra for greasing
125g/4½oz milk chocolate chips, or try a mixture of milk and white

Steps:

  • Preheat the oven to 200C/180C Fan/Gas 6. Grease a 12-hole muffin tin and line with paper cases.
  • Sift the flour and cocoa into a large mixing bowl. Tip in the sugars, baking powder and salt and mix together. Make a well in the centre.
  • Whisk together the eggs, buttermilk, vanilla extract and hot water. Pour into the well, then quickly use a spatula to blend into the dry ingredients, followed by the melted butter. Fold in most of the chocolate chips. Divide the batter between the paper cases - they should be about three-quarters full. Scatter the rest of the chocolate chips over the top and bake for 18-20 minutes until well risen and cooked.
