Just like adding a pinch of salt to dessert recipes makes them even sweeter and more delicious, the addition of pepper in this cookie really makes the chocolate even more chocolaty. The cookies aren't really spicy, but you can definitely tell something strange and wonderful is happening.

½ cup dried currants
2 tablespoons coffee flavored liqueur (such as Kahlua®)
4 ounces unsweetened chocolate
2 ounces bittersweet chocolate
3 tablespoons unsalted butter
½ cup all-purpose flour
½ teaspoon freshly ground black pepper
¼ teaspoon baking powder
¼ teaspoon salt
⅛ teaspoon ground cinnamon
⅛ teaspoon cayenne pepper
¾ cup sugar
2 eggs
2 teaspoons vanilla extract
1 cup dark chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Line two baking sheets with parchment paper or silicone baking mats.
  • Heat currants and coffee liqueur in a saucepan over low heat until it begins to simmer, about 2 minutes. Remove from heat and set aside.
  • Combine unsweetened chocolate, bittersweet chocolate, and butter in bowl. Place bowl on top of a saucepan filled with 1-inch of water set over low heat. Stir chocolate mixture occasionally until melted, about 5 minutes. Remove from heat and set aside.
  • Mix flour, black pepper, baking powder, salt, cinnamon, and cayenne pepper in large bowl and set aside.
  • Whisk sugar and eggs in a small bowl until light, fluffy, and pale yellow, about 5 minutes. Slowly whisk in vanilla and melted chocolate mixture.
  • Fold flour mixture into sugar and chocolate mixture until combined.
  • Stir in dark chocolate chips and liqueur-soaked currants.
  • Drop spoonfuls of cookie dough 2 inches apart onto prepared baking sheets.
  • Bake in the preheated oven until cookies are almost set, about 12 minutes.
  • Remove from the oven and leave on baking sheets to cool, 5 minutes.
  • Transfer to cooling rack and allow to finish cooling, 5 minutes.

1 cup (2 sticks) unsalted butter
1 1/2 cups firmly packed dark brown sugar
2 large eggs
1 teaspoon pure vanilla extract
2 cups all-purpose flour (see Cook¿s Note)
1/2 teaspoon baking soda
1 teaspoon fine salt
One 12-ounce bag (a scant 2 cups) semisweet chocolate chips

Steps:

  • Position the rack in the middle of the oven and preheat to 350 degrees F.
  • Put the butter in a microwave-safe bowl, cover and microwave on medium power until melted. Alternatively melt the butter in a small saucepan. Brush some butter on the inside of a 9-by-13-inch pan and cool the remaining butter slightly. Whisk the remaining cooled butter, brown sugar, eggs and vanilla in a large bowl until smooth.
  • Whisk the flour, baking soda and salt in another bowl. Stir the dry ingredients into the wet ingredients with a spoon or spatula, taking care not to over mix. The batter should be thick and all of the flour mixture should be fully incorporated. Fold in the chocolate chips.
  • Spread the batter evenly in the prepared pan. Bake until the edges are browned and the center is completely set, about 30 minutes. Cool completely, at least one hour, cut into 24 pieces and serve.

1 cup light brown sugar, lightly packed
3 tablespoons granulated sugar
1 stick unsalted butter, at room temperature
1 large egg
1/3 cup white miso paste
1 teaspoon vanilla extract
2 cups all-purpose flour

1 1/2 cups semisweet chocolate chips (sometimes I use chunks)
Nonstick cooking spray, for the baking sheet

Steps:

  • Beat both sugars and butter together in a medium bowl with an electric mixer until creamy. Add egg, miso and vanilla and beat until well mixed. Add flour and baking soda and mix until just combined. Stir in chocolate chips. Cover with plastic wrap and refrigerate at least 1 hour (this is very important in order to have a chewy cookie that doesn't spread out too much).
  • Preheat oven to 350 degrees F. Spray 2 baking sheets with nonstick cooking spray.
  • Use a medium ice cream scoop to portion cookie dough on the prepared pans. Use two fingers to lightly flatten each scoop of dough. Bake, rotating and switching the pans halfway through, 13 to 14 minutes for a chewy cookie (a few minutes longer if you like a more well-done cookie). Eat warm with a glass of milk and cool the rest on a wire rack.

1/3 cup good quality unsweetened Dutch-process cocoa powder
2 teaspoons of your favorite ground chile powder, such as ancho chile powder

3/4 cup (1 1/2 sticks) unsalted butter, at room temp
1 cup packed dark brown sugar
1/2 cup granulated sugar
1 large egg
1 1/2 teaspoons vanilla extract

1/2 cup unsalted pepitas (shelled pumpkin seeds), lightly toasted

Steps:

  • Preheat oven to 350 degrees F. Line two baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, cocoa powder, chile powder, baking soda and salt. Set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the butter on medium-high speed until light and creamy, about 1 minute. Add the brown and granulated sugar and beat until slightly fluffy, about 2 minutes, scraping down the sides of the bowl with a rubber spatula as needed. Add the egg and vanilla and beat until well combined.
  • Reduce the mixer speed to medium-low, add half the flour mixture, and beat until just combined, then add the remaining flour mixture and beat until the mixture just comes together, 1 to 2 minutes, being careful not to overmix. Add the chocolate chunks and pepitas and beat on low until just combined.
  • Use a 2-ounce ice cream scoop or a 1/4 cup measuring cup to scoop the cookie dough onto the prepared baking sheets, making about 14 cookies total and leaving at least 2 inches between each cookie.
  • Bake until the edges of the cookies are crisp but the centers are still tender, about 15 minutes, rotating the baking sheets top to bottom and front to back halfway through the baking time. Remove from the oven, set the baking sheets on wire racks, and let the cookies cool completely on the pans. They should keep up to 5 days in an airtight container.

  • Meanwhile, position oven racks in the top and bottom thirds of the oven and preheat the oven to 350 degrees F.

100g caster sugar
175g dark muscovado sugar
2 tsp vanilla extract
2 eggs , beaten
300g plain flour
50g cocoa powder

100g bar dark chilli chocolate , roughly chopped
100g bar white chocolate , roughly chopped
100g bar dark chocolate , roughly chopped

Steps:

  • Beat the butter and sugars together, then gradually mix in the vanilla and eggs. In another bowl, combine the flour, cocoa, a pinch of salt, baking powder and cayenne pepper, then mix these into the butter and fold in all the chocolate.
  • Heat oven to 180C/160C fan/gas 4. Place walnut-sized spoonfuls of the mixture on baking sheets lined with baking parchment, leaving enough space between so they don't melt together. Bake in batches, for 10-12 mins, depending on how gooey you like your cookies. Allow to cool on the baking sheets for 1 min before removing to a plate to cool completely. Serve with vanilla ice cream.

This recipe makes a perfect chocolate chip cookie that is both chewy and crispy. It is from Dorie Greenspan's excellent cookbook, "BAKING: From My Home to Yours". Including nuts is highly recommended. Some variations: for chocolate chocolate chip cookies, substitute 3/4 cup of flour for 3/4 cup unsweetened cocoa powder; for espresso chocolate chip cookies, add 1 1/2 tablespoons espresso powder after the vanilla extract; for a coconut version, add 1 1/2 cups sweetened (toasted or untoasted) shredded coconut when adding the chocolate chips; and for peanut butter chocolate chip cookies, substitute 1/2 cup of peanut butter for 1/2 a stick of butter and beat them together before adding sugar (and use peanuts). Enjoy! Note: The dough can be covered and refrigerated for up to 3 days, or frozen. If you'd like, rounded tablespoonfuls of dough, ready for baking. Freeze the mounds on a lined baking sheet, then bag them when they're solid. There's no need to defrost the dough before baking-just add another minute or two to the baking time.

Steps:

  • Heat oven to 375°F
  • Line baking sheet with parchment paper.
  • In small bowl, combine flour, baking soda and salt; mix well.
  • In large bowl, combine sugar, brown sugar and shortening; mix well.
  • Add eggs, liqueur and vanilla; mix well.
  • Slowly stir in flour mixture until of uniform consistency.
  • Stir in chocolate chips and pecans.
  • Drop onto baking sheet in teaspoonfuls 3 inches apart.
  • Bake 10 to 11 minutes or until light brown.

Chocolate Chip Cookies With Honey-Roasted Almonds and Chile image

This is not your average chocolate chip cookie. Like the classic, it's chewy and layered with milk chocolate chips, but it's also packed with salty-sweet honey-roasted almonds and coated in a glimmering exterior. Drawing inspiration from the snack aisle, its generous dusting of cinnamon- and gochugaru-spiced sugar and a finishing of flaky sea salt mimic the coating used on the honey-roasted almonds. These cookies freeze incredibly well and bake up in just 10 minutes. The recipe is easy; the only challenge will be restraining yourself from not devouring too many at once.

1 3/4 cups/225 grams all-purpose flour
1/4 cup/30 grams whole-wheat flour
3/4 teaspoon baking soda
1/4 teaspoon baking powder
1/2 cup/115 grams unsalted butter (1 stick), at room temperature
1 2/3 cups/365 grams light brown sugar
1 teaspoon fine sea salt
1/3 cup/80 grams unsalted creamy almond butter
1 large egg plus 1 large yolk
1 tablespoon honey
1 cup/170 grams milk chocolate chips (or roughly chopped milk chocolate bar, disc or fèves)
1 cup/140 grams honey-roasted almonds, roughly chopped
1/4 cup/50 grams natural or organic cane sugar (or regular granulated sugar)
1/4 teaspoon gochugaru (Korean red-chile flakes) or similar mild flaky chile, such as Aleppo or silk chile
1/4 teaspoon ground cinnamon
Flaky sea salt

Steps:

  • In a small bowl, whisk together all-purpose flour, whole-wheat flour, baking soda and baking powder. Set aside.
  • In the bowl of a stand mixer, combine butter, light brown sugar and fine sea salt. Using the paddle attachment, cream for 3 minutes on medium until light and fluffy, scraping the mixer and bowl as needed to ensure the butter is well incorporated.
  • Add the almond butter and beat for 1 minute until smooth, scraping the bowl as needed.
  • In a small bowl with a fork, whisk the egg and egg yolk to combine. With the mixer running on medium-low speed, stream the egg into the creamed butter until fully incorporated, followed by the honey. Stop and scrape, return to medium speed and beat for another minute.
  • Add the milk chocolate and almonds to the mixer and set to low speed just to combine. Turn off the mixer. Add the reserved flour mixture, then blend on low just until incorporated.
  • Remove the bowl from the mixer and, using a spatula, fold the dough over in the bowl a few times.
  • On a parchment-lined baking sheet, scoop rounded tablespoons or 1-ounce scoops of cookie dough. (You'll finish shaping them later.) Chill the scooped dough in the fridge for 1 hour until firm. (If baking later, freeze scooped dough on baking sheets, then transfer to a resealable freezer bag or container. When ready to bake, remove as many cookies as you intend to bake, let warm slightly, then proceed.)
  • When ready to bake, heat the oven to 350 degrees and arrange two racks in upper and lower middle positions. Line two baking sheets with parchment paper or silicone baking mats.
  • Prepare the coating: In a small bowl, stir together cane sugar, gochugaru and cinnamon.
  • Remove chilled dough from the fridge and form each ball into a 1-inch-thick puck, rounding the edges and flattening the top and bottom. Drop each puck in the sugar mix as you go, flipping until fully coated.
  • Place on the prepared baking sheets about 2 inches apart (about 15 cookies per sheet). Sprinkle each with a pinch of flaky sea salt, crushing between your fingertips as you distribute it.
  • Bake the cookies for 8 minutes. After 8 minutes, rotate each sheet tray and lightly rap it to force the cookies to settle. (You should see craggy eruptions on the surface.) Bake the cookies for 2 to 3 more minutes, until the cookies are just golden at the edges but still slightly gooey in the center.
  • Remove the cookies from the oven and let them cool on the baking sheets for 1 minute. Using a spatula, transfer the cookies to a cooling rack to cool completely. Repeat with remaining dough.
