My family likes sweet breads, and this loaf incorporates many of their favorite ingredients. I'm a former newspaper food columnist, and coming up with flavorful recipes that are a little out-of-the-ordinary is a favorite pastime.

Yield 2 loaves.

Number Of Ingredients 15

3 cups all-purpose flour
1 cup sugar
1 cup packed brown sugar
2 to 3 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground ginger
1/4 to 1/2 teaspoon ground cloves
3 large eggs
3/4 cup orange juice
3/4 cup vegetable oil
1 teaspoon vanilla extract
2 cups grated carrots
1 cup semisweet chocolate chips

Steps:

  • In a large bowl, combine the first nine ingredients. In a small bowl, beat the eggs, orange juice, oil and vanilla. Stir into the dry ingredients just until moistened. Fold in the carrots and chocolate chips. , Transfer to two greased 8x4-in. loaf pans. Bake at 350° for 55-60 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks.

3 c flour
1 c sugar
1 c brown sugar
2 1/2 tsp cinnamon
2 tsp baking powder
1 tsp baking soda
1 tsp vanilla
1 tsp salt
1 tsp ginger
1/4 tsp cloves
3 eggs
3/4 c orange juice
3/4 c vegetable oil
2 c grated carrots
1 c chocolate chips

Steps:

  • 1. In a large bowl, combine the first 9 ingredients. In a small bowl, beat the eggs, orange juice, oil and vanilla. Stir into the dry ingredients just until moistened. Fold in the carrots and chocolate chips. Put in 2 greased 8x4x2-inch loaf pans. Bake at 350 degrees for 55 to 60 minutes.

1/2 cup sugar
3/4 cup cake flour
1 teaspoon baking powder
1/4 cup cornstarch
9 tablespoons butter, at room temp
2 eggs, at room temp
1 teaspoon vanilla extract
2 tablespoons raisins
1/4 cup finely chopped walnuts
1/2 grated lemon, rind of
1/4 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350*.
  • Combine flour, baking powder and cornstarch in a small bowl and set aside.
  • Line bottom and long sides of an 8.
  • 5 x 4inch loaf pan with waxed paper and grease.
  • Sprinkle 1 1/2 tbl of the sugar into the pan and tilt pan to distribute evenly on bottom and sides; tip out any excess.
  • In a medium bowl, cream the butter until soft and add the remaining sugar.
  • Beat until light and fluffy and then add eggs, one at a time, beating well after each addition.
  • Gently fold in the dry ingredients, in 3 batches; do not overmix!
  • Fold in the vanilla, raisins, nuts, lemon rind and chocolate chips until just blended.
  • Pour batter into prepared pan and bake for 45-50 minutes or until tester comes out clean.
  • Let cool for 5 minutes in pan and then cool completely on a wire rack.

Number Of Ingredients 10

2 cups all-purpose flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2 eggs
1 cup mashed ripe bananas (2 to 3 medium)
1/3 cup canola oil
1 cup grated carrots
1/2 cup chopped pecans

Steps:

  • In a large bowl, combine the flour, sugar, baking soda, salt and cinnamon. In a small bowl, whisk the eggs, bananas and oil. Stir into dry ingredients just until moistened. Fold in carrots and pecans. Transfer to a greased 9x5-in. loaf pan. , Bake at 350° for 55-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

3 large eggs, room temperature
1 cup sugar
2 cups sour cream
3 cups self-rising flour
2 cups semisweet chocolate chips

Steps:

  • Preheat oven to 350°. Beat eggs, sugar and sour cream until well blended. Gradually stir in flour. Fold in chocolate chips. Transfer to a greased 9x5-in. loaf pan., Bake until a toothpick comes out clean, 65-75 minutes. Cool in pan 5 minutes before removing to a wire rack to cool.

1 cup packed brown sugar
1/3 cup canola oil
2 large eggs
1/3 cup fat-free milk
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/4 teaspoon ground nutmeg
1 cup semisweet chocolate chips
1 cup quick-cooking oats
1 cup grated carrots
1 cup raisins

Steps:

  • In a large bowl, beat brown sugar and oil until blended. Beat in eggs, then milk. Combine the flour, baking powder, salt, cinnamon, baking soda and nutmeg; gradually add to egg mixture and mix well. Stir in the chips, oats, carrots and raisins. , Drop by heaping teaspoonfuls onto baking sheets coated with cooking spray; flatten slightly. Bake at 350° for 10-13 minutes or until golden brown. Remove to wire racks to cool.

A yummy, moist bread. If you substitute applesauce for oil in baking, don't do it on this one. I tried it, and it wasn't nearly as good.

2 eggs
1 cup sugar
2/3 cup oil
1 1/2 cups flour
3/4 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon salt
1 1/2 cups finely grated carrots
1/2 cup chopped walnuts
3/4 cup raisins

Steps:

  • Beat eggs.
  • Add sugar and oil and beat thoroughly.
  • Combine dry ingredients and add to egg mixture; beat well.
  • Stir in carrots, nuts and raisins.
  • Pour batter into a 9x5-inch loaf pan that has been sprayed with nonstick spray, or into 2 1-lb.pans.
  • Bake at 350° for about 1 hour (about 40 minutes for the smaller pans).
  • Cool in pan for 5-10 minutes, then remove from pan and cool completely on rack.
