ROASTED GARLIC IN THE MICROWAVE

Steps:

• Cut the top off the garlic so that the tops of the garlic are exposed in the cloves.
• Put it in a small shallow dish, cut side up.
• Add the water around the garlic.
• Generously drizzle olive oil over the top so that the garlic has been completely covered.
• Set the microwave to 40% power.
• Cook for 5 minutes.
• As soon as the garlic is done, remove it from the microwave.
• Using a potholder or towel, remove the garlic from the bowl and gently squeeze the garlic from the cloves into a clean bowl or plate.
• Use it immediately or store it in olive oil in a sealed container for up to a week.

MICROWAVE ROASTED GARLIC

Steps:

• Cut tips off whole garlic heads, keeping heads intact.
• Place all ingredients in a 4 cup glass measure.
• Cover tightly with microwave plastic wrap.
• Cook at 100% for 6 to 8 minutes, longer if bulbs are large.
• Remove from oven.
• Let stand, covered, for 10 minutes.
• Peel when cooled.
• Refrigerate any leftovers.

MICROWAVE FRIED GARLIC

Steps:

• Place the garlic in a microwave-safe bowl and add enough oil to cover (at least 3 tablespoons). Microwave for 1 minute, then stir. Repeat, stirring and microwaving in 30-second increments until the garlic begins to brown. Then repeat, stirring and microwaving in 15-second increments, until the garlic is a deep gold. (This could take between 2 and 4 minutes total, depending on your microwave.) In a sieve set over a bowl, drain the garlic, reserving the oil. Transfer the garlic to a plate lined with paper towels and season with a pinch each of salt and sugar. Set aside to cool.
