These homemade chocolate cherry brownies are much better than packaged brownies but just as easy to make! The slightly sweet, dense chocolate brownie is dotted with maraschino cherries for that classic chocolate covered cherry flavor we all know and love. Unlike most brownie recipes, this one will not leave you with a toothache. It's perfectly balanced. A fudgy chocolate brownie with a sweet maraschino cherry in each bite, this is sure to become a household favorite!

4 ounces semisweet chocolate, coarsely chopped
4 ounces unsweetened chocolate, coarsely chopped
1/2 cup unsalted butter, cut into pieces
3 tablespoons unsweetened cocoa powder
3 large eggs
1 and 3/4 cup packed light brown sugar
1 tablespoon vanilla extract
1/2 teaspoon salt
1 cup all-purpose flour
10 ounce jar maraschino cherries, drained

Steps:

  • Preheat the oven to 350ºF. Line an 8x8-inch pan with aluminum foil, leaving a 1-inch overhang on all sides. Spray the foil lightly with nonstick spray.
  • Add the chocolate and butter to a medium heatproof bowl set over a pot of simmering water. Stir occasionally until fully melted and smooth. Whisk in the cocoa powder until smooth. Set aside to cool slightly.
  • In a separate medium bowl, whisk together the eggs, sugar, vanilla, and salt until combined. Whisk in the melted chocolate until well combined. Fold in the flour with a rubber spatula just until combined. Fold in the cherries.
  • Spread the batter evenly into the bottom of the prepared pan. Bake for 20 to 25 minutes, or until the top of the brownies look dry and the edges begin to pull away from the sides of the pan. Cool the brownies in the pan on a wire rack.

1/3 cup (42g) dark cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon salt
4 large eggs, (room temperature)
2 cups (400g) granulated sugar
3/4 cup (1 1/2 sticks or 170g) butter, (softened or room temperature)
2 teaspoons vanilla
1/2 cup seedless cherry preserves
6 ounces semisweet chocolate, (chopped)
1/2 cup heavy whipping cream

Steps:

  • Heat oven to 350°F. Prepare a 9x13 baking dish with non-stick spray or GOOP.
  • In a large bowl add flour, cocoa, baking powder, salt. Whisk together ingredients until they are fully incorporated.
  • In the bowl of a stand mixer or in a large bowl using a hand-held mixer, beat the eggs, sugar, butter, and vanilla until light and fluffy.
  • With the mixer off, add in the flour mixture. Turn mixer on low and mix until ingredients are well combined.
  • Pour brownies into a prepared baking dish and bake for 30-35 minutes at 350°F. Brownies are done when an inserted toothpick is removed with crumbs but not wet batter.
  • When brownies are slightly cooled (but still warm!), spread the cherry preserves over the top using an off-set spatula.
  • To make the chocolate ganache, bring the whipping cream to a boil and remove from heat.
  • With chocolate chips in a heat-safe bowl, pour cream over chips and slowly stir until all chips are melted.
  • Pour the chocolate ganache over the cherry preserves layer, covering as much of the preserves as possible.
  • Refrigerate for about an hour or until the chocolate is set.

150 g dark chocolate (70% cocoa solids)
55 g cherries
55 g roasted pecans
225 g caster sugar
55 g cocoa powder
75 g plain flour
¾ teaspoon baking powder
3 large free-range eggs
50 g milk or dark chocolate, optional

Steps:

  • Preheat the oven to 180ºC/gas 4. Line a 20cm square baking tin (or the equivalent) with greaseproof paper.
  • Melt the butter and dark chocolate in a bowl over a saucepan of simmering water (don't let the bowl touch the water).
  • Destone the cherries and roughly chop them along with the pecans. Stir into the melted chocolate, then take off the heat.
  • In another bowl, add the sugar, then sift in the cocoa powder, flour and baking powder. Add to the melted chocolate mixture and stir till well combined.
  • Beat the eggs and mix in. Roughly chop and stir through the milk or dark chocolate (if using).
  • Transfer the mixture to the tin, then bake in the oven for 15 to 20 minutes. You want them a little gooey in the middle.
  • Remove from the oven and cool in the tray, before cutting into squares.

2 (10 ounce) jars maraschino cherries, reserve syrup for glaze
4 unsweetened chocolate squares
3/4 cup butter
2 cups granulated sugar
4 eggs
1 teaspoon vanilla
1 cup flour
3 ounces cream cheese, softened
1 teaspoon vanilla
1/4 cup corn syrup
3 unsweetened chocolate squares, melted and cooled
1 cup confectioners' sugar
1/2 cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees.
  • Microwave chocolate and butter on high for 2 minutes or until butter is melted.
  • Stir until completely smooth.
  • Stir granulated sugar into melted chocolate.

  • Gently press a cherry into filling.
  • Drizzle fancily with glaze.
  • Glaze: Combine cofectioner's sugar with enough cherry syrup to make a thin glaze.

These Chocolate Covered Cherry Brownie Bombs are delicious bites of brownie surrounding cherries and then dipped in chocolate!

1 box of brownie mix and the ingredients it takes to make them
3/4 cup chocolate frosting
15 oz almond bark (melted according to package instructions)
1 can of cherry pie filling or maraschino cherries (see note)

Steps:

  • Bake the brownies as directed and let cool completely. Do not overcook the brownies, crunchy brownie bits don't make for good bombs.
  • Crumble the made brownies and mix in about 3/4 a cup of chocolate frosting. If you've made cake pops before, you want a similar consistency. You may need to add a little more, but you want to start out on the low side and add more if you need it.
  • Once you have it the consistency needed (stays together easily but isn't too sticky to roll into balls), start with about 1 1/2 TBSP of brownie frosting mixture. (A cookie scoop makes it a lot easier.) Form it into a ball, but then make a hole in the middle that you can drop one cherry from the pie filling into.
  • Fold the brownie ball in over the cherry or top with a little more of the brownie/frosting mixture and do your best to seal the cherry in.
  • Once you have all your bombs made, pop them in the freezer for about 20 minutes.
  • While they are hardening up in the freezer, melt your almond bark. You may need a little more or a little less depending on how heavily you coat the bombs.
  • After the 20 minutes, take them out of the freezer and keep them in the refrigerator. Working one bomb at a time, drop it into the melted almond bark, pull it back out, and tap off the excess chocolate.
  • Place it on wax paper and wait for it to dry completely.

  • Mix brownie mix according to package directions with the required oil, eggs and water. Using a cookie scoop, scoop the batter into a well-greased mini muffin pan. (I usually can make about 30 so you may need to fill a little bit of a second pan.)
  • Bake brownie bites at 350° for about 13-15 minutes or until a toothpick inserted in the middle comes out clean.
  • Immediately after removing the brownie bites from the oven, press an indention into each one, using the back of a 1/2 tsp measuring spoon. While the brownies are still warm, place 3 semi-sweet chocolate chips into each center. Let the chocolate chips sit for a few minutes until softened, then gently press a maraschino cherry on top of the melted chocolate in the center.
  • Let brownies cool completely and then make the frosting. To make the frosting, use an electric mixer to beat the butter, cream cheese and powdered sugar. Once the mixture is well combined, add the reserved cherry juice and beat until smooth. Frost the brownie bites and enjoy! (I used this Wilton Dessert Decorator for the frosting, but you can just frost them with knife or place the frosting in a Ziplock bag and cut a small opening in one of the bottom corners to squeeze the frosting out of.)
