Steps:
- Mix sugars, cornstarch, salt, and cocoa in a medium sauce pan.
- Whisk in the water.
- Heat over medium until it gets thick and starts to boil. Boil for 1-2 minutes.
- (Make sure you don't boil too long, or it will set like taffy.)
- Remove from heat and stir in oil and vanilla. Cool and spread on cooled cake.

- Heat oven to 180 degrees C, 350 degrees F, gas Mark 4. Grease 2x20.5cm (8inch) tins, not loose-bottomed as the mixture would run out
- Mix flour,sugar,salt and cocoa powder together.
- Rub in margarine to all the dry ingredients. Beat eggs with milk
- Stir in egg mixture,essence and liquids into the dry ingredients and beat well
- Place mixture in prepared tins and bake for about 30-35 minutes
- Leave to stand for 1 hour when cool sandwich together and top of with a milk chocolate icing
- Topping: melt margarine, blending in cocoa then stir in icing sugar, milk and essence
- Beat until smooth and thick. Then apply to the top of the cake or put it in the middle to stick them together

- In a microwave-safe measuring cup, or in a small pot on the stove, heat the coconut milk until hot, but not boiling (about 2 minutes in the microwave).
- Place the dairy-free chocolate in a large bowl and pour the hot coconut milk over it, allowing the milk to melt the chocolate. Mix well to combine.
- Once the chocolate is melted, add the coconut oil and powdered sugar. Beat with a hand mixer or whisk until smooth.
- Cover and refrigerate overnight.
- Preheat the oven to 350°F (180°C). Grease 3 separate 8-inch (20-cm) round cake pans and set aside.
- In a large bowl, add the whole wheat flour, dark cocoa powder, sugar, baking soda, baking powder, and salt. Whisk to combine and set aside.
- In a separate large bowl, add the almond milk, coconut oil, applesauce, maple syrup, apple cider vinegar, and vanilla extract. Whisk to combine.
- In two batches, add the dry mixture to the wet mixture, folding with a spatula until combined. Some clumps are okay.
- Divide the batter evenly between the 3 pre-greased cake pans and bake for 35-45 minutes, or until a toothpick comes out almost entirely clean. Cool completely.
- Remove the frosting from the fridge and mix it up well.
- Choose which cake will be your bottom layer and cover evenly with about 1 cup (115 G) of frosting. Top with the second layer, frosting evenly again. Add the final layer and frost the top and the sides of the cake generously, topping with berries of choice for garnish.

- PREPARE cake batter according to pkg directions.
- Pour into 3 greased& floured 8" round cakepans.
- BAKE at 325 for 20-25 minutes or until wooden pick inserted in center comes out clean.
- Cool in pans on wire racks 10 minutes.
- Remove from pans, and cool completely on wire racks.
- BEAT cream cheese, powdered sugar, and granulated sugar at medium speed with an electric mixer until mixture is creamy.
- CHOP 9 ounces (28 nuggets) of the candy bars finely.
- Fold cream cheese mixture and chopped candy into whipped topping.
- SPREAD icing between layers and on top and sides of cake.
- Chop remaining 3 ounces (8 nuggets).
- Sprinkle half of chopped candy nuggets over cake.
- Press remaining chopped candy along sides and bottom of cake.
MILK CHOCOLATE FROSTED LAYER CAKE
This light and delicate square layer chocolate cake is loaded with an ultra creamy milk chocolate icing. Be sure to use cake flour, not all-purpose, to give your cake its delicate texture. Instead of slicing into squares, I prefer to slice vertically down the center, then cut slices horizontally about 1 inch apiece. I found this recipe in Food an Wine magazine. - Preheat the oven to 325°.
- Butter and flour two 9" -square cake pans; set aside.
- In a medium bowl, whisk the cake flour, cocoa and baking powder; set aside.
- In a medium saucepan, melt the butter in the milk over low heat.
- Transfer to a large bowl and allow to cool slightly.
- Whisk in the egg yolks and 1/2 cup of the sugar.
- Add the dry ingredients and whisk until smooth; set aside.
- In a clean bowl, beat the egg whites with the salt until soft peaks form. Gradually add the remaining 1/2 cup sugar and beat at medium-high speed until the whites are stiff and glossy.
- Fold beaten egg whites into the batter until no streaks remain.
- Divide the batter between the two cake pans and bake for 25 minutes, or until the cakes are springy and a toothpick inserted in the centers comes out clean.
- Transfer the cakes to a rack and allow to cool completely.
- While the cakes are cooling, in a medium saucepan, bring the heavy cream to a simmer.
- Put the chocolate in a heatproof bowl and pour the hot cream on top.
- Allow to stand for 3 minutes, then whisk melted chocolate until smooth.
- Let the frosting stand at room temperature, stirring occasionally, until thick enough to spread, about 1 hour.
- Turn the cakes out of the pans and put one layer on a plate.
- Top with 1 cup of the frosting, spreading it to the edge.
- Top with the second layer and spread the remaining frosting over the top and sides.
- Let the cake stand at room temperature for about 30 minutes before cutting into squares.
- Serve and enjoy.

- Preheat the oven to 350°F. Butter and flour two 8- or 9-inch round cake pans, or place liners in 2 muffin pans for 24 cupcakes. Set aside.
- In a large bowl, sift the dry ingredients together. Set aside.
- In a medium bowl, mix the vanilla extract, oil, vinegar, and cold water.
- Slowly whisk the wet ingredients into the dry ingredients, being careful not to overmix. The mixture will be quite wet, but this is okay.
- Pour the batter into the prepared pans and bake until a tester inserted in the center comes out clean, about 30 minutes. For cupcakes, the baking time is 24 to 26 minutes.

NON-DAIRY CHOCOLATE CAKE
This is a very moist chocolate cake. I've also known it to be called Wacky Cake or Crazy Cake. My family likes it with Canned Milk Frosting. (kinda defeats the purpose of non-dairy :) This is very easy one dish and easy clean up. Enjoy!
