Grandma's Eggless, Butterless, Milkless Cake image

You can get a moist chocolate cake without eggs, butter, or milk thanks to this recipe, tested by Grandma and approved by all who try it.

3 cups all-purpose flour
2 cups white sugar
6 tablespoons unsweetened cocoa powder
2 teaspoons baking soda
2 teaspoons baking powder
⅔ cup vegetable oil
2 cups water
2 tablespoons distilled white vinegar
2 teaspoons vanilla extract

Steps:

  • In a large bowl, combine all the dry ingredients together.
  • Combine all the wet ingredients together in another bowl.
  • Pour the liquid ingredients all at once into the dry ingredients, and beat until smooth.
  • Pour batter into a greased 9 x 13 inch pan.
  • Bake in a preheated 350 degrees F (175 degrees C) oven for 20-25 minutes. Let cool in pan. When cool sprinkle with confectioners' sugar.

This healthier chocolate cake doesn't need eggs, butter or oil. It's an easy one bowl recipe and only 5 ingredients.

1 1/2 cups all purpose flour (or whole wheat flour (see notes))
1/2 cup unsweetened cocoa powder (dutch process or natural)
1 tbsp baking powder
1 cup granulated white sugar (or brown sugar or coconut sugar (see notes))
1 1/3 cups whole milk
6 tbsp coconut oil (melted)
3/4 cup unsweetened cocoa powder (or cacao powder)
6 tbsp maple syrup
4 oz heavy cream
4 oz semisweet chocolate (chopped)

Steps:

  • Preheat oven to 350°F. Line an 8 inch x 8 inch baking pan with parchment paper.
  • Add flour, cocoa powder, baking powder and sugar into a large mixing bowl. Whisk together until evenly combined.
  • Add in milk. Whisk until batter is smooth.
  • Pour batter into prepared baking pan. Bake for about 30 minutes or until toothpick inserted comes out clean and top of cake bounces back when you apply light pressure. Let cake cool completely before frosting and cutting.
  • To make chocolate frosting: combine oil and cocoa powder in a medium bowl. Mix until smooth and completely combined. Your mixture should look like melted chocolate. Add in maple syrup last. Stir it in until it is evenly blended and the frosting thickens.
  • To make chocolate ganache: Add chopped chocolate to a medium bowl. Bring heavy cream to a simmer on the stove. Pour heated heavy cream over chopped chocolate and immediately start to mix until the chocolate is completely melted and smooth. Let chocolate ganache cool at room temperature until it becomes firm enough for frosting the cake.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C), grease and flour a 9x13 inch pan.
  • In a large bowl, sift together flour, cocoa powder, soda and salt. Add sugar and mix together.
  • Add oil, water and vanilla and mix thoroughly.
  • Pour into a 9x13 inch pan. Bake at 350 degrees F (175 degrees C) for 1 hour or until toothpick inserted in center comes out clean.

This cake can be mixed in the container it is going to be baked in for example a roasting pan or a round deep cake tin. There is no need to grease it. This makes a lovely moist chocolate cake and a good size too perfect as a birthday cake.

2 teaspoons baking soda
2/3 cup cocoa (can use less)
1 teaspoon vanilla essence
2 tablespoons vinegar
2/3 cup cooking oil
2 cups water

Steps:

  • Mix dry ingredients throughly.
  • Add liquids and mix well with a fork.
  • Bake at 180 Celcius for 1 1/4 hours. or until cooked when tested with a knife.
  • The cake can be iced or left plain.
  • It makes a nice dessert with cream or custard.
