So it's time to sweeten the deal: this chocolate chip banana bread recipe combines two of your favorite things into one - now, you can have your chocolate and eat it too!

3 ripe bananas
⅓ cup butter, melted
½ cup sugar
1 egg, beaten
1 teaspoon vanilla extract
1 teaspoon baking soda

Steps:

  • Preheat oven to 350˚F (180˚C).
  • In a bowl, add the bananas and mash until smooth. Add in the melted butter and stir until well combined.
  • Add the sugar, egg, vanilla, baking soda, salt, and flour, and stir until the batter is smooth.
  • Add in the chocolate chips and pour the batter into a greased loaf pan. Top with additional chocolate chips.
  • Bake for 50 minutes to an hour, or until a toothpick comes out clean.
  • Cool completely before serving.

4 eggs
1 cup heavy whipping cream
1/4 cup melted butter (plus more for greasing)
2 cup whole milk
1 tsp cinnamon
1/8 tsp ground cloves
1/4 tsp ground nutmeg
1 tbsp vanilla extract
1/2 tsp salt
1 cup light brown sugar
4 medium bananas ( mashed (about 1 1/2 cups mashed))
1 cup chopped walnuts
caramel sauce for topping ( optional)

Steps:

  • Preheat oven to 350°F. Butter a 9 x 13" glass baking dish and set aside.
  • In a large mixing bowl, whisk eggs until frothy.
  • Add heavy cream, melted butter, milk, cinnamon, cloves, nutmeg, salt, vanilla extract, and brown sugar. Whisk until combined.
  • Mash bananas with a fork. Then add the mashed bananas and chopped walnuts to the egg mixture. Stir until combined.
  • Slice bread into bite sized pieces. Spread evenly in the prepared baking dish.

1/4 cup water
1 1/2 cups fresh or frozen (partially thawed) unsweetened whole strawberries, sliced

1 1/3 cups soymilk
2/3 cup fat-free egg product
1 teaspoon vanilla

Steps:

  • In 1-quart saucepan, stir together granulated sugar, cornstarch and water. Stir in 1/2 cup of the strawberries. Heat to boiling, stirring frequently. Reduce heat to low. Cook 3 to 5 minutes, stirring frequently, until slightly thickened. Cool 10 minutes. Stir in remaining 1 cup strawberries. Cover and refrigerate until ready to serve.

1/4 cup unsalted butter, melted
3 eggs
1/2 cup sugar
1/4 teaspoon fresh nutmeg, grated
3 cups milk
1/2 teaspoon vanilla extract
2 ripe bananas
6 to 8 (1-inch chunks) semisweet chocolate
Dark Rum Creme Anglaise, recipe follows
2 cups milk
1 vanilla bean, split
5 egg yolks
1/3 cup sugar
1/4 cup dark rum

Steps:

  • Place bread into a bowl and drizzle with melted butter, mix well to coat.
  • In another bowl, whisk eggs, sugar, milk, nutmeg and vanilla together. In another bowl mash up 1 banana and add to custard, pour over the bread and allow to soak for 15 minutes. Dice up the other banana and fold into bread pudding mixture. Grease 6 (2 1/2-inch by 2?inch) tall ring mold and wrap the bottom with foil. Spoon bread pudding mixture into mold 1/2 way then press 1 chunk of chocolate into the center then continue to fill to the top. Bake in a 325 degree oven until it is set and brown, about 35 to 40 minutes. Serve with Dark Rum Creme Anglaise.
  • To a saucepan add milk, scrape vanilla bean seeds into milk and add the pod. Bring almost to a boil. Remove from heat and allow bean to infuse for 10 minutes, then remove the bean. In a bowl whisk egg yolks and sugar until thick and light in color, then temper with hot milk. Pour mixture back into the pot and gently stirring constantly with a wooden spoon until custard thickens slightly. Remove from heat and strain through a fine sieve into a bowl over ice. Stir in rum and cover tightly so skin does not form while it is cooling.

1/8 cup sugar
1 tablespoon butter (melted)
1 banana (over-ripe)
1/4 cup chocolate chips or 1/4 cup chopped nuts (whatever you prefer!)
2 slices bread (slightly stale)

Steps:

  • In a small bowl, beat egg.
  • Add sugar and butter, and mix until smooth.
  • Add banana, and mash with a fork or potato masher.
  • Batter will be lumpy.
  • Add chips, nuts, etc.
  • Tear bread into small pieces and add to mixture.
  • Stir until bread is coated with the batter.
  • Pour into smallest baking pan you have.

  • Place the eggs in a medium bowl, whisk the eggs together. Add the milk, sugar, vanilla, cinnamon, nutmeg and salt to the bowl. Whisk until the ingredients are well combined and the sugar is dissolved. Add the bananas to the bowl and stir them into the mixture.Pour the mixture over the bread cubes in the casserole dish. Stir with a spoon to coat the bread cubes with the mixture. Sprinkle the white chocolate chips evenly over the the top of the bread cubes. Bake for 40 minutes in a preheated 375 degree oven or until a knife inserted in the center comes out clean.
