Smoky shredded roast beef, cooked in spices and chipotles in adobo, then served with a tangy cabbage and red onion slaw.

5 cups prepared cole slaw mix (from a bag)
1/4 cup chopped fresh cilantro
1/2 cup thinly sliced red onion
2 tablespoons lime juice
Salt and pepper, to taste
1 (3 lb.) beef chuck roast, cut into 2-3 large chunks
1 medium onion, thinly sliced
3-4 cloves garlic, minced
2-3 tablespoons chopped chipotles in adobo (from a can)
1 teaspoon dried oregano
1/2 teaspoon ground cumin
2-3 bay leaves
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Place roast in a lightly greased slow cooker. Add the onion, garlic, chipotles, oregano, cumin, bay leaves and salt and pepper. Cover and cook on low for 7-8 hours, or until beef is very tender.
  • Transfer the beef to a medium bowl and shred with 2 forks. Strain the cooking liquid through a fine mesh strainer into the bowl. Toss liquid with beef to combine.
  • Prepare the slaw about 30 minutes before serving by combining all of the ingredients in a medium bowl and mixing well.
  • Serve shredded beef in warm tortillas with cilantro lime slaw.

1 small onion, chopped
1 can (28 ounces) diced tomatoes, undrained
1/4 cup cider vinegar

2 bay leaves

Steps:

  • In a large skillet coated with cooking spray, heat oil over medium-high heat. Add onion; cook and stir 2-3 minutes or until tender. Stir in tomatoes, vinegar, peppers with sauce, garlic, brown sugar, bay leaves and spices. Bring to a boil. Reduce heat; simmer, uncovered, 4-6 minutes or until thickened., Place roast in a 5-qt. slow cooker; add tomato mixture. Cook, covered, on low 8-10 hours or until meat is tender., Discard bay leaves. 3 tablespoon tomato paste
2 tablespoon balsamic vinegar
3 garlic, minced
8 ounce Brussels sprouts, trimmed and halved lengthwise, or 1 medium red sweet pepper, seeded and cut into chunks
0.75 cup 50% less sodium beef broth
1 recipe Creamy Polenta (optional)
2 cup nonfat evaporated milk
1 ounce reduced-sodium chicken broth
1 cup yellow course-grain polenta (cornmeal)
3 tablespoon grated Parmesan cheese
1 tablespoon unsalted butter

Steps:

  • Trim fat from meat. In a small bowl combine coffee powder, ground chipotle pepper, and salt. Sprinkle chipotle mixture evenly over meat; rub in with your fingers. Working in a well-ventilated area, in a large nonstick skillet cook meat in hot oil over medium-high heat until brown on all sides. Drain off fat.
  • In a 3 1/2- or 4-quart slow cooker combine parsnips, red onion, tomato paste, vinegar, and garlic. Add meat and Brussels sprouts. Pour broth over mixture in cooker.
  • Cover and cook on low-heat setting for 8 to 9 hours or on high-heat setting for 4 to 4 1/2 hours. Using a slotted spoon, transfer meat and vegetables to a serving platter. Cover with foil and keep warm.
  • Transfer cooking liquid to a medium saucepan. Bring to boiling; reduce heat. Simmer, uncovered, for 5 to 8 minutes or until reduced to about 1 cup. Slice meat. If desired, serve meat and vegetables over Creamy Polenta. Drizzle with the reduced cooking liquid. Creamy Polenta

Steps:

  • Roasted potatoes get a spicy, smoky flavor when tossed with ground chipotle peppers. If you like potato skins, just scrub the potatoes and leave the skins on-they add fiber and great texture.

3 cups tomato juice
1/4 cup lightly packed oregano leaves
1/4 cup chopped green onion
2 chipotle chiles in adobo, seeded
2 garlic cloves
1 tablespoon brown sugar
2 teaspoons ground cumin
4 lbs boneless pot roast, trimmed
1 tablespoon vegetable oil
2 lbs sweet potatoes, peeled and cut into chunks
1 lb parsnips or 1 lb plantain, peeled and cut into chunks
1 red pepper, cut into chunks

Steps:

  • Pulse the tomato juice, oregano, green onion, chipotle peppers, garlic, brown sugar and cumin in a blender until smooth. Pour over the beef roast and marinate in the refrigerator for at least 4 hours or overnight. Remove the beef from the marinade and pat dry using paper towels. Reserve the marinade remaining in the bowl.
  • Preheat oven to 325˚F. Heat the oil in a large, ovenproof Dutch oven set over medium-high heat. Brown the beef all over. Pour the reserved marinade over the beef. Cover and transfer to the oven. Roast, turning once, for 1 hour. Add the sweet potato and parsnips or plantains. Roast, covered, for 2 hours or until beef and vegetables are fork tender. Add the red pepper and roast, uncovered for an additional 15 minutes.
  • Transfer beef to a cutting board and tent with foil. Rest for 10 minutes before slicing. Use a slotted spoon to transfer the vegetables to a serving bowl. Ladle the pan juices into a gravy boat or heat proof pitcher. Serve meat and vegetables with the pan juices on the side.
  • For a thicker gravy, strain the juices into a pot set over medium heat. Stir together 2 tbsp each cornstarch and water until dissolved. Whisk into simmering juices and bring to a boil; cook, stirring, until thickened.

3 lbs beef boneless sirlion roast, cut into 2 - 3 inch pieces
1 1/2 teaspoons salt, divided
1/2 teaspoon black pepper
3 tablespoons vegetable oil
3/4 cup all-purpose flour
2 teaspoons chili powder
2 teaspoons oregano leaves
2 teaspoons cumin
1/2 teaspoon chipotle chili pepper
1 cup water
2 garlic cloves, minced
2 jalapeno peppers, minced
2 cups beef broth
1 garlic, bulb
2 tablespoons olive oil
3 ears fresh corn
2 lbs red potatoes, cut into 1 1/2 - 2 inch cubes
3/4 cup sour cream
1/2 cup butter
1/2 cup milk or 1/2 cup half-and-half
1 1/2 teaspoons salt
1 chipotle chile in adobo, finely chopped
1 teaspoon adobo sauce, from can
1 teaspoon pepper
1/2 cup chopped cilantro

Steps:

  • ROAST:.
  • Sprinkle roast evenly with 1/2 teaspoon salt, 1/2 teaspoon blackpepper. Brown roast on all sides in hot oil in Dutch oven over high heat.
  • Stir together flour, next 4 ingredients and remaining 1 teaspoon salt in a large bowl. Whisk in 1 cup warm water until smooth. Add minced garlic and chopped jalapeno.
  • Add 2 cups beef broth to Dutch oven. Stir in flour mixture. Bring to a boil over high heat; cover tightly, reduce heat to low and simmer 2 to 2 1/2 hours or until meat is tender, stirring every 20 minutes to prevent sticking.
  • CORN-GARLIC-CHIPOTLE-CILANTRO MASHED POTATOES:.
  • Preheat oven 400 degrees.
  • Cut off pointed end of garlic; place garlic on a piece of aluminum foil and drizzle with 1 tablespoon olive oil. Fold foil to seal. Brush corn with 1 tablespoon oil and place on a baking sheet.
  • Bake garlic for 1 hour. After 15 minutes, place corn in oven and bake with garlic, 45 more minutes or until corn is golden brown. Squeeze pulp from garlic from garlic cloves and set aside. Let corn cool completely.
  • Hold upright on a cutting board and carefully cut downward, cutting kernels from cob. Repeat with each corn cob. Discard cob; set corn aside.
  • Cook potatoes in boiling water to cover in a large saucepan until fork-tender, about 15-20 minutes. Drain and return to pan.
  • Whisk together reserved roasted garlic pulp, 3/4 cup sour cream, 1/2 cup butter and next 5 ingredients in a medium saucepan over medium heat until butter melts and mixture is thoroughly heated.
  • Mash potatoes slightly, add warm garlic mixture to pan and continue to mash just until blended. Mixture should be coarsely mashed. Stir in chopped cilantro and reserved corn.
  • Serve by arranging potatoes on plate and topping with roast and gravy.

1 (16 ounce) package frozen mango chunks
2 medium red bell peppers, sliced into 1/2-inch strips
1 medium onion, sliced
1 (16 ounce) jar chipotle salsa (Pace makes a great one!)
1 (11 1/2 ounce) can mango nectar
hot cooked orzo pasta (optional) or egg noodles (optional)

Steps:

  • Sprinkle roast with steak seasoning.
  • In a 5-quart slow cooker, combine mango, bell peppers, and onion. Place roast on top of fruit and vegetables.
  • In a small bowl, combine salsa and mango nectar. Pour over roast.

1 teaspoon pepper
