CHIPOTLE PORK CHOPS

2 chipotle chiles in adobo sauce, seeds removed, plus 2 tablespoons sauce from the can
4 cloves garlic
4 bay leaves
1 teaspoon ground cumin
3/4 teaspoon dried thyme
1/4 teaspoon ground cinnamon
Kosher salt
1 large onion, halved and sliced
1 cup canned fire-roasted diced tomatoes
1 cup chopped fresh cilantro
1/3 cup extra-virgin olive oil, plus more for brushing
6 bone-in pork blade chops (1/2 to 3/4 inch thick; about 3 1/2 pounds total)

Steps:

  • Combine the chiles and adobo sauce, garlic, bay leaves, cumin, thyme, cinnamon and 5 teaspoons salt in a food processor and pulse to make a paste. Transfer to a shallow dish and add the onion, tomatoes, cilantro and 1/3 cup olive oil; mix well. Add the pork chops, turning to coat; cover and refrigerate 4 hours or overnight.
  • Preheat a grill to medium. Meanwhile, remove the pork chops from the marinade, scraping off the excess, and transfer to a plate. Transfer the marinade to a skillet; add 1/4 cup water and cook over medium-high heat, stirring occasionally, until the liquid simmers and the onions start sizzling, about 10 minutes. Remove from the heat and set aside for basting. (You can also do this in a cast-iron skillet on the grill.)
  • Brush the chops with olive oil and transfer to the grill. Cook until marked, 7 to 8 minutes, rotating the pork 45 degrees halfway through to create a crosshatch pattern and brushing with the liquid from the marinade. Flip and repeat, brushing with more marinade, including some pieces of onion and tomato. Remove from the grill and let rest 5 minutes.

10 cloves garlic
2 scallions, sliced (white and green parts)
2 tablespoons coriander seeds
1 chipotle chile in adobo plus 2 tablespoons adobo sauce
2 teaspoons cumin seeds
Kosher salt and freshly ground pepper
1 (6 to 8-pound) Boston butt pork shoulder, bone-in
4 wide strips fresh lime zest
1 cup fresh lime juice
1 cup fresh orange juice
3/4 cup extra-virgin olive oil
2 cinnamon sticks, broken up

Steps:

  • 1. Pulse the garlic, scallions, coriander, chipotle chile, cumin, 2 tablespoons salt, and 1 teaspoon pepper in a food processor or mini-chopper to make a thick paste. If the butcher didn't trim the fat cap on the pork shoulder, trim off all but a thin layer of fat. Make deep incisions with a paring knife, at about 2-inch intervals, all over the meat. Rub the garlic and spice mixture into and all over the meat.
  • 2. Combine the lime zest and juice, orange juice, adobo sauce, olive oil, and cinnamon in a nonreactive stainless steel or glass bowl. Add the meat, cover tightly with plastic wrap, making sure the meat is submerged. Refrigerate for at least 8 hours or up 2 days. Bring to room temperature about 1 hour before roasting.
  • 3. Preheat the oven to 450 degrees F. Put the pork, fat-side up, in a large Dutch oven. Roast the meat, uncovered, for 30 minutes. Add the marinade to the pot and cover with the lid. Lower the temperature to 350 degrees F and roast for 2 hours more. Uncover and continue to cook, basting occasionally, until an instant read thermometer inserted into the meat registers 190 degrees F and the meat is a rich burnished brown, 1 1/2 to 2 hours more. Set aside on a cutting board to rest for 20 minutes before slicing.
  • 4. For the sauce: Strain the pan drippings through a fine mesh sieve into a gravy separator and discard all excess fat. In a small saucepan, mix the pan drippings with 1/2 cup water and bring to a vigorous boil. Slice the meat and serve with the pan drippings.

1 (1-pound) whole pork tenderloin
1 lime, zested
1/2 cup freshly squeezed lime juice
1/4 cup honey
1 1/2 teaspoons kosher salt
1/2 teaspoon garlic powder
1 chipotle chile pepper in adobo sauce, chopped
1 teaspoon vegetable oil
1 tablespoon chopped fresh cilantro

Steps:

  • Trim the pork tenderloin of any excess fat and silver skin.
  • Put the lime zest, lime juice, honey, salt, and garlic powder in a small, lidded jar and shake to combine. Pour half of this marinade into a 1-gallon zip-top bag, add the chipotle pepper, and slosh around to combine. Add the pork tenderloin to the bag and seal, removing as much air as possible, and place in a container to catch any leaks. Marinate in the refrigerator for 6 to 24 hours, flipping the bag halfway through. Cover the jar with the remaining marinade and refrigerate until ready to use.
  • Remove the tenderloin to a plate and discard the bag and marinade. Allow the tenderloin to sit at room temperature while preparing the grill. Remove the reserved marinade from the refrigerator.
  • Fill a large chimney starter with natural lump charcoal and light it. Once the charcoal is ashy and white, about 30 minutes, dump the hot charcoal onto the lowest grate of the grill and spread into an even layer using extra-long tongs. Place the cooking grate back on the grill and cover with the lid; heat the grate to medium heat for 2 to 3 minutes.
  • Brush the grill with vegetable oil. Place the tenderloin in the center of grate. Cover and cook until the tenderloin reaches an internal temperature of 140ºF, turning every 1 1/2 to 2 minutes, about 12 to 15 minutes total.
  • Remove the tenderloin from the grill and place on a large piece of heavy-duty aluminum foil folded at the edges to create a basket, and pour on the reserved marinade. Wrap tightly and rest for 10 minutes. Remove to a cutting board and slice. Garnish with cilantro and serve.

Found this in Yahoo. Easy to make, fabulous taste. I used pork loin chops and marinated it overnight (6 chops about 2 pounds). Plus I used fresh squeezed orange and lime juice, and added a bit more adobo sauce than the recipe recommended. When using pork loin chops you have to watch how long you grill so it won't be dry shoe leather (3-4 minutes per side depending on the thickness).

1 teaspoon adobo sauce
1 garlic clove, minced
1/2 cup orange juice
3 tablespoons lime juice
1 tablespoon red wine vinegar

  • Preheat grill to high or heat a large indoor grill pan over high heat. Remove the pork from the marinade (discard marinade). Grill the pork, turning occasionally, until an instant-read thermometer inserted diagonally into the center of the meat registers 145 degrees F, 12 to 15 minutes. Transfer the pork to a cutting board and let rest for 5 minutes before slicing.
  • NOTE: you can use the same marinade for a 1 pound tenderloin, however, the cooking time will be longer.

Steps:

  • Place pork roast in baking dish.
  • In a separate bowl, assemble the remaining ingredients, stir well.
  • Pour marinade over roast, cover and place in the refrigerator for at least 1 hour.
  • In a preheated oven, cook at 500 degrees for 10 minutes, then reduce heat to 300 degrees.
  • Cook until roast reaches an internal temperature of 170 degrees.
  • Allow to cool five minutes before serving.

2 tablespoons vegetable oil
3/4 cup onion, minced
2 large garlic cloves, minced
7 ounces chipotle chiles in adobo (or to taste)
1 cup black coffee
1/2 cup cider vinegar
1/2 cup apple cider or 1/2 cup apple juice
1/2 cup brown sugar, packed
3 tablespoons tomato paste
2 tablespoons Worcestershire sauce
2 -3 lbs boneless pork loin
salt

Steps:

  • Heat oil over medium heat in a large saucepan and add onion and garlic until onion is translucent.
  • Add chipotle peppers that have been removed from the sauce and finely chopped. BEWARE! Add only amount needed for your taste. Add to onions along with the adobe sauce.
  • Add coffee through Worcestershire Sauce and whisk to combine. Bring to a simmer and cook for 5 to 6 minutes. Remove from heat and refrigerate until chilled. (Can make the sauce ahead of time.).
  • Place pork loin in a deep bowl or large plastic Ziploc bag. Marinate for at least 12 hours up to 2 days. Turn the pork occasionally.
  • About 2 hours before grilling, remove pork from marinade. Bring the marinade to a boil (for a minimum of 5 minutes for food safety) until slightly thickened. Season with salt if desired or needed. Use 1/2 cup marinade to baste the pork and use remaining marinade to serve with the pork.
  • Heat grill to medium-hot and set pork, fat side down on grill. Turn and baste with the sauce until meat reaches an inernal temperature of 150 degrees F. (About 50 to 60 minutes depending on your grill) Careful not to overcook.
  • Let stand for juices to settle. Reheat sauce to serve with the meat.
