BLACK EYED PEAS WITH SMOKED SAUSAGE
I made this yesterday in the crock pot. I needed something that could be thrown together with what I had in the house and sit while I worked a 14 hour day. This definitely hit the spot.

Steps:
- If using dried beans soak for 4 or more hours, drain and rinse.
- Slice sausage into rounds. Combine with black eyed peas, onion, garlic, and Cajun seasoning in the crock pot.
- Add water until beans and sausage are just covered. If using dried beans, add enough so that the beans and sausage are submerged by 1-2 inches of liquid. Season with salt and pepper to taste.
- Cook on low for 4-6 hours. I would suggest an additional 2 hours if using dried beans.

Steps:
- Pick (remove any bad peas) and wash peas.
- Combine in a sauce pan with sausage, water, seasonings, onions and pepper.
- Cover and simmer over low flame for 1 to 1 1/2 hours, or until tender. Add water if needed. You want to have enough water to make thick gravy.
- Add green onions (scallions) and serve over rice.
SMOKED SAUSAGE AND BLACK-EYED PEAS
Steps:
- In a large pot, over medium heat, render the sausage for 5 minutes. Stir in the onions, salt, cayenne, garlic, bay leaves, thyme and parsley. Saute for 5 minutes, or until the onions are wilted. Stir in the chicken stock, peas and garlic. Bring the liquid up to a simmer and cook for 1 1/2 hours, or until the peas are tender. Spoon the peas and sausage in the center of a shallow bowl. Garnish with green onions. Serve with cornbread muffins.

- In a small bowl, combine salt, pepper, paprika and cayenne pepper.
- Sprinkle seasoning mixture evenly over chicken pieces.
- In a Dutch oven, heat ¼ cup olive oil over medium heat and sauté sausage slices on both side; remove sausage and repeat with chicken, browning evenly on all sides; remove and set aside.
- In the same Dutch oven, on medium heat, add remaining olive oil. Slowly add flour, stirring constantly for 12-15 minutes or until the roux is golden brown in color.
- Reduce heat to low; add onions and stir occasionally for 3 minutes.
- Add green onions, celery, garlic and green pepper. Continue to cook and stir for 3 minutes.
- Add red bell pepper and cook 3 minutes longer. Gradually stir in broth.
- Add bay leaf, thyme, reserved sausage and chicken and bring to a boil.
- Cover, reduce heat to low and simmer for 25-30 minutes, stirring occasionally.
- Add black-eyed peas, greens and okra and simmer for 5 minutes.
- Remove from heat; add gumbo file', cover and let sit for 5 minutes before serving.
- Serve over hot rice.

- 1. Sort and wash peas.
- 2. Place in a large dutch oven, add water to depth of 2 in. above peas. Cover and let stand 8 hours or overnight.
- 3. Drain peas and return to dutch oven.
- 4. Add 8 cups water; bring to a boil.
- 5. Cover, reduce heat, and simmer 30 minutes, stirring occasionally.
- 6. Add bacon and next 12 ingredients; return to a boil.
- 7. Cover, reduce heat and simmer 30 minutes or until peas are tender.
- 8. Add sausage, ham, and tomatoes; return to a boil.
- 9. Cover, reduce heat, and simmer 30 minutes.
- 10. Remove bacon, if desired.
BLACK-EYED PEAS WITH SAUSAGE AND TOMATOES
This is based on a favorite recipe from a friend, but modified to be lower in fat: (1) uses Italian turkey sausage instead of regular Italian sausage; (2) halved the amount of sausage used in the original recipe; (3) cooked sausage in water instead of frying in oil as per the original recipe; (4) replaced cheddar with 2% milk sharp cheddar cheese. Even with these modifications, this dish packs plenty of flavor -- I don't miss a thing from the original recipe.

- Cook sausage in a little water in a large skillet over low-to-medium heat. Break up sausage with a spoon; continue cooking and stirring until sausage is no longer pink. Drain any remaining water (if needed).
