SPICY CHIPOTLE-LIME HUMMUS



Spicy Chipotle-Lime Hummus image

Such a tasty fun way to make hummus! It's easy and incredibly flavorful. You'll love this tex-mex spin!

1 (15 oz) can chick peas, (drained and liquid reserved)
2 Tbsp fresh lime juice
2 Tbsp olive oil
1 Tbsp tahini
1 Tbsp adobo sauce from a can of chipotle chilies in adobo
1 - 2 garlic cloves, (quartered)
1 Tbsp minced chipotle chilies in adobo
1/2 tsp ground cumin
1/4 tsp ground coriander
1/4 tsp paprika
1/4 tsp salt, (or to taste)
1 Tbsp chopped cilantro, (for garnish)

Steps:

  • To a Blendtec Twister Jar (or food processor) add 3 Tbsp reserved liquid from chick pea can, lime juice, olive oil, tahini, adobo sauce (I added this later but I think it would be best added with the other liquids), and garlic.
  • Then add chick peas, chipotle chilies, cumin, coriander, paprika and salt. Cover with Twister lid (lid with paddles), then process (using Dips Cycle or on medium speed), while rotating lid counter clockwise, and adding an additional 1 Tbsp liquid as needed, until hummus is smooth.
  • Plate and top with more olive oil, adobo sauce and chipotle chilies if desired, then sprinkle with cilantro. Serve with pita chips, tortilla chips or veggies. Store in refrigerator in an airtight container.

1 (19-ounce) can chickpeas (rinsed and drained)
4 chipotle peppers in adobo sauce
3 tablespoons lime juice
3 tablespoons tahini
2 tablespoons olive oil (plus more to drizzle over upon serving (drizzle optional))
1 tablespoon adobo sauce
1 clove garlic (minced)
3/4 teaspoon salt
2 to 3 tablespoons cold water (approximately)
Chopped cilantro (garnish to taste (optional))
Sliced green onion (garnish to taste (optional))

Steps:

  • Peel outer skin of chickpeas and discard those skins (this is optional, but makes for a creamier hummus). To peel the chickpeas, pinch each chickpea between your thumb and pointer finger and they come right out.
  • Place chickpeas in a food processor and process for about 1 to 2 minutes until they're broken down. Stop to scrape sides of processor, as necessary.
  • Add chipotle peppers in adobo sauce, lime juice, tahini, olive oil, adobo sauce, garlic and salt. Process until smooth, about 2 minutes. Scrape sides of processor once stopped.
  • With the processor going again, drizzle in water until you've reached the consistency you like best.
  • Transfer the hummus to a serving dish and, if desired, garnish with cilantro, green onion, a drizzle of olive oil and some more adobo sauce. Serve and enjoy!Note: Enjoy immediately or properly store in an airtight container in your refrigerator and enjoy within 3 to 4 days.

1 (7 ounce) jar roasted red bell peppers, drained
6 oil-packed sun-dried tomatoes, drained
½ cup chopped cilantro
½ teaspoon salt
ground black pepper to taste

Steps:

  • Place the garbanzo beans, water, tahini, lemon juice, olive oil, chipotle pepper, garlic, and cumin in the bowl of a food processor; blend until smooth. Add the red peppers, sun-dried tomatoes, cilantro, salt, and pepper. Pulse the mixture until the ingredients are coarsely chopped into the hummus base. Transfer to a serving bowl, cover, and chill until ready to serve.

2 limes

Steps:

  • In a food processor, combine the beans, chipotle, tahini, juice of 2 limes, garlic, olive oil, cilantro, and salt. Blend until you reach your desired consistency. Add a little water at a time to thin it out if needed.

1/4 cup tahini (sesame seed paste)
4 tablespoons fresh lemon juice

1 whole chipotle pepper, from canned chipotle peppers in Adobo sauce
2 large garlic cloves
1 1/2 teaspoons ground cumin
1 (7 ounce) jar roasted red peppers, drained
6 sun-dried tomatoes packed in oil
1/2 cup fresh cilantro, roughly chopped
1/2 teaspoon salt
fresh ground black pepper
warm pita bread (store bought or home made) or pita chips (store bought or home made)

Steps:

  • In a food processor, blend garbanzo beans and next 7 ingredients in processor until smooth.
  • Add red peppers, sun-dried tomatoes, cilantro, salt and pepper. Pulse process, using on/off turns, until coarsely chopped.
  • Transfer hummus to medium bowl. Cover and chill until ready to serve. Bring to room temperature before serving. Accompany with warm pita or pita chips. Can be made 2 days ahead.allows flavors to develop!
