Vegetable oil
3 cups whole roasted unsalted cashews (14 ounces)
2 cups whole walnut halves (7 ounces)
2 cups whole pecan halves (7 ounces)
1/2 cup whole almonds (3 ounces)
1/3 cup pure maple syrup
1/4 cup light brown sugar, lightly packed
3 tablespoons freshly squeezed orange juice
2 teaspoons ground chipotle powder
4 tablespoons minced fresh rosemary leaves, divided
Kosher salt

Steps:

  • Preheat the oven to 350 degrees. Brush a sheet pan generously with vegetable oil. Combine the cashews, walnuts, pecans, almonds, 2 tablespoons of vegetable oil, the maple syrup, brown sugar, orange juice, and chipotle powder on the sheet pan. Toss to coat the nuts evenly. Add 2 tablespoons of the rosemary and 2 teaspoons of salt and toss again.
  • Spread the nuts in one layer. Roast the nuts for 25 minutes, stirring twice with a large metal spatula, until the nuts are glazed and golden brown. Remove from the oven and sprinkle with 2 more teaspoons of salt and the remaining 2 tablespoons of rosemary. Toss well and set aside at room temperature, stirring occasionally to prevent sticking as they cool. Taste for seasoning. Serve warm or cool completely and store in airtight containers at room temperature.

⅓ cup white sugar
1 ½ teaspoons chipotle chile powder
¼ teaspoon chili powder
¼ teaspoon garlic powder
2 tablespoons butter
2 tablespoons honey
1 teaspoon kosher salt
1 pound skinless peanuts

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Stir together the sugar, chipotle powder, chili powder, and garlic powder in a small bowl; set aside.
  • Stir together the butter, honey, and kosher salt in a large saucepan over medium heat until the butter has melted, and the mixture is bubbly. Stir in the peanuts until well coated, then pour out into a 9x13 inch baking dish.
  • Bake in preheated oven until the nuts are golden brown, about 30 minutes. Stir the mixture 2 or 3 times to ensure even cooking. Once done, scrape the peanuts into a large metal bowl, and sprinkle with the spice mixture. Toss the peanuts to evenly coat with the spice mixture. Allow the peanuts to cool to room temperature, tossing every few minutes so the nuts do not stick together.

Finely grated zest of 1 lime
2 teaspoons sugar
1 teaspoon chipotle powder
1/4 rounded teaspoon ground coriander
1/4 rounded teaspoon garlic powder
Kosher salt
1 1/2 cups lightly salted dry-roasted peanuts
2 tablespoons chopped fresh cilantro

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with foil; rub lightly with oil.
  • Put the egg white, lime zest, sugar, chipotle powder, coriander, garlic powder, 1/2 teaspoon salt and 1 tablespoon oil in a medium bowl. Beat with a fork to combine. Add the peanuts and toss to coat.
  • Spread the spiced peanuts on the prepared baking pan in a single layer. Bake until dry and a shade darker, about 15 minutes. Cool completely before adding the cilantro.

1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon mustard powder
1/2 cup sugar
Kosher salt
1 large egg white
4 cups mixed roasted salted nuts

Steps:

  • Preheat the oven to 250 degrees F. Line a baking sheet with parchment paper.
  • Mix the cayenne, cinnamon, ginger, mustard powder, sugar and 1/2 teaspoon salt in a small bowl. Whisk the egg white in a large bowl until frothy. Toss in the nuts, then add the spice mixture and toss until well coated.
  • Spread the nuts on the prepared baking sheet; bake until dry, about 45 minutes. Let cool completely on the baking sheet.
  • Hot: These nuts are a not-too-spicy crowd pleaser. Cayenne, ginger and mustard powder give them mild heat.
  • Hotter: Add 2 teaspoons chipotle chile powder to the spice mixture, then continue as directed.
  • Hottest: Add 2 teaspoons chipotle chile powder to the spice mixture, then continue as directed. While the nuts are baking, fry 4 thinly sliced serrano chile peppers in 350 degrees F canola oil until crisp, about 30 seconds. Drain on paper towels, season with salt and toss with the nuts.

1 teaspoon ground coriander
1 teaspoon ground cumin

Vegetable or canola oil, for the baking sheet
1 large egg white
1 cup unsalted raw almonds
1 cup unsalted raw cashews
1 cup unsalted raw peanuts
1 cup unsalted raw pecans
1 cup potato chips

Steps:

  • Mix together the sugar, chipotle powder, coriander, cumin, lime zest, granulated garlic and 1 1/2 teaspoons salt in a small bowl and set aside.
  • Preheat the oven to 350 degrees F. Lightly oil a rimmed baking sheet with the oil.
  • Put the egg white in a large bowl and whisk until frothy. Add the nuts and potato chips and toss to coat in the egg white. Add the spice blend and toss to coat.

2 teaspoons water
2 (12 ounce) cans salted peanuts
1 cup whole blanched almond
1 cup walnut halves
1 3/4 cups sugar
3 tablespoons pumpkin pie spice
3/4-1 teaspoon salt
1 cup raisins

Steps:

  • In a bowl, beat egg whites and water until frothy.
  • Add nuts to bowl and stir to coat.
  • Mix together sugar, pumpkin pie spice, and salt.
  • Add to nut mixture and stir to coat.
  • Stir in raisins.
  • Evenly spread nut mixture into two 15x10 inch baking dishes.
  • Bake at 300 degrees for 20-25 minutes or until lightly browned; stir every 10 minutes.
  • Cool.

My Husband found this recipe one day while at work. He brought it home to me and said "Let's try this for Christmas" and so we did. Not over spicy and not hot but you can heat it up if you want to! A very simple recipe to make. Add more or less of your favorite seasonings!

2 tablespoons butter
1 cup pecan halves
1 cup whole almond
1 cup dry roasted peanuts, unsalted
1 tablespoon Worcestershire sauce
1 teaspoon chili powder
1/2 teaspoon garlic salt
1/4 teaspoon cayenne powder

Steps:

  • Heat oven to 300 degrees.
  • Put butter in a 13 X 9 baking dish.
  • Heat the butter in the oven (in the baking dish) till melted.
  • Remove from oven and add the Worcestershire sauce and mix it around.
  • Add all the nuts and mix well to coat.
  • Smooth even in dish and return to oven.
  • Bake at 300 for 15 minutes.
  • Remove, stir, even out and return to oven.
  • Bake another 15 minutes.
  • Remove and stir.
  • Mix seasonings together and sprinkle over nuts.
  • Mix well to coat.
  • Serve immediately or store in an air tight container.

A nice change from sugar laden nuts. You can use chipotle powder instead of roasting them. Nuts are raw, unseasoned and unsalted.

3 cups pecans
1 cup peanuts
1 2/3 cups macadamia nuts
1 2/3 cups cashew nuts (A note on the nuts ( these four nuts were the ones that I opted to include, but you can really use a)
1/4 cup olive oil
1 teaspoon black pepper, freshly ground
1 teaspoon cumin, ground
3/4 teaspoon salt
1/2 teaspoon mustard seeds, ground
1 chipotle chile (Please note that I opted to toast and grind my own chipotle chile, but you can easily just skip ahea)

Steps:

  • Preheat oven to 350°.
  • In a dry skillet or comal over medium heat, toast the chipotle chile pod for 3-4 minutes on each side. A toasted chile will turn a slightly darker shade of brown and be crazy (good) fragrant. Remove and allow to cool. Once the chile is cool enough to handle, cut off and discard the top and slice town the body of the chile. Tear out the seed column and remove all loose seeds. Tear the remaining chile skin into smaller pieces and grind to a fine powder in a spice mill.
  • Meanwhile, place the nuts in a large bowl and top with the olive oil, salt, pepper, cumin, ground mustard and chipotle powder. Toss well (I used clean hands) until the nuts are evenly coated, and pour onto a large, rimmed baking sheet. I opted to line my baking sheet with parchment paper just to make clean up a little easier, but parchment is not required.
  • Bake nuts for 10-15 minutes. Finished nuts will be golden and crazy (good) fragrant. Remove, cool and serve or package.
