Chipotle chilies give this simple to prepare chicken dish a wonderful rich smoky flavour. It may be necessary to increase the number of Chipotles to intensify the flavour of the dish.

6 chipotle chiles, seeds removed and soaked in water for 30 minutes
7/8 cup chicken stock
2 tablespoons oil
3 onions, sliced
6 boneless skinless chicken breasts
sour cream, to serve

Steps:

  • Preheat the oven to 350°F
  • Place the soaked chilies in a blender. Measure the soaking liquid in a jug and make up to 1 2/3 cups with the stock.
  • Pour the liquid into the blender and process on high until smooth.
  • Heat the oil in a frying pan, add the onions and cook for 5 minutes until soft.
  • Place the onions in an ovenproof dish. Add the chicken breasts and season with salt and freshly ground black pepper.
  • Pour the chipotle puree over the chicken covering each piece and cook in the oven for 1 hour until the chicken is thoroughly cooked.
  • Serve the chicken with soured cream, Mexican rice and frijoles de olla.

7 ounces chipotle chiles in adobo
4 large garlic cloves
2 tablespoons vegetable oil
1 teaspoon kosher salt
3 small whole chickens, cut into halves or 3 small whole chickens, cut into quarters
3 ripe Hass avocadoes, pitted, peeled, and cut into 1/2 inch pieces
kosher salt
1 lime, juice of
1/3 cup finely diced white onion
3 fresh cilantro stems, stemmed and chipped

Steps:

  • In a food processor, puree the chipotles, garlic, oil, and salt. Wipe the chickens with paper towels. Thoroughly coat the pieces on all sides with a layer of the chipotle paste.
  • Place in a nonreative baking dish or in resealable bags and refrigerate for 2 hours, or as long as overnight.
  • Heat the grill to medium. With the lid open, grill the chicken on both sides until well marked but not burned- about 7 minutes per side. Turn the heat to low, close the lid, and cook the chicken, skin side up, until an instant-read thermometer inserted in the thickest part of the thigh reads 165 degrees. (Alternatively, bake at 350 degrees for approximately 30 to 40 minutes.).
  • Serve with tortillas and salsa.
  • Avocado Salsa: Place the avocados in a bowl. Sprinkle with the salt an dlime juice; mix gently with the onion and cilantro (don't mash; it should look diced).
  • Note: this salsa should be served within 3 hours. To help it keep its color, press a piece of plastic wrap on the surface of the avocado and refrigerate until needed.

This simple spicy supper makes an ideal weeknight meal if you can get ahead and marinate the chicken the night before. The chipotle chilli paste gives the chicken a smoky flavour as well as some heat, which perfectly complements the fresh and zesty salsa. Serve without the tortillas for a gluten-free option. Each serving (including an optional wrap) provides 568 kcal, 47g protein, 47g carbohydrate (of which 10g sugars), 10g fat (of which 5g saturates), 5.5g fibre and 1.6g salt.

4 skinless chicken breasts
4 warmed corn or wheat tortillas (optional)
1 tbsp olive oil
2 tbsp chipotle chilli paste
1 tsp onion granules
2 garlic cloves, crushed or finely grated
½ tsp ground cumin
1 large lime, juice only
salt and freshly ground black pepper
325g can sweetcorn, drained
½ red onion, finely chopped
240g can red kidney beans in water, drained
2 avocados, peeled, stones removed, roughly chopped
2 plum tomatoes, roughly chopped
2 tbsp finely chopped fresh coriander (leaves and stalks)
2 limes, juice only

Steps:

  • For the chicken, make 3-4 diagonal slashes on the top of each chicken breast and place in a non-reactive (glass) bowl.
  • For the marinade, mix all the marinade ingredients together and season well with salt and pepper. Spread the marinade all over the chicken. Cover the chicken and leave to marinate for 3-4 hours, or overnight if time permits.
  • For the corn and avocado salsa, mix all the salsa ingredients together, season with salt and pepper and set aside for 30 minutes at room temperature.
  • Preheat the grill to medium-high. Put the chicken on a grill-rack in a single layer. Grill for 4-5 minutes on each side or until cooked through.
  • Serve the chicken with the salsa and the warmed tortillas (if using).

500g skinless boneless chicken thighs
1 tbsp vegetable oil
1 medium onion , chopped
2 tsp sweet smoked paprika
2 tsp ground cumin
2 tbsp cider vinegar
1 tbsp chipotle paste
200ml passata
2 tbsp soft brown sugar
½ small pineapple , cored, peeled and chopped
½ small pack coriander , chopped
corn or flour tortillas
hot sauce (I like Tabasco Chipotle), to serve

Steps:

  • In a food processor, roughly blitz the chicken thighs into chunky mince. Alternatively, chop into bite-sized pieces.
  • Heat the oil in a large saucepan. Add half the onion and the chicken mince. Season well and cook for about 5 mins on a high heat to brown, breaking up the meat with a spoon. Add the spices, vinegar, chipotle paste, passata and sugar. Cook for another 5 mins, then remove from the heat.
  • In a small bowl, mix the remaining onion, the pineapple and coriander. Serve the chicken and the pineapple salsa with warm tortillas and hot sauce.

1 onion , chopped
1 garlic clove , sliced
2 tbsp sunflower oil
1-2 tbsp chipotle paste (see tip, below)
400g can chopped tomatoes
1 tbsp cider vinegar
8 skinless chicken thigh fillets
small bunch coriander , chopped
soured cream and rice, to serve

Steps:

  • Fry the onion and garlic in the oil in a deep, wide frying pan until soft. Add the chipotle paste (use 1 tbsp for a mild flavour and 2 tbsp for a hotter, stronger one). Stir and cook for 1 min, then add the tomatoes and cider vinegar. Bring to a simmer and cook for 10 mins with the lid half on. Stir to make sure it doesn't get too dry.
  • Add the chicken and cook for 10 mins or until cooked through, turning once. Scatter with coriander and serve with rice and soured cream.
