Rach's Easy Cheesy Chipotle Chicken + Black Bean Burritos With BACON image

Go southwestern with layers of spicy green rice, smoky beans and rotisserie chicken in a cheesy chipotle sauce.

1 cup white rice
1 ¾ cups chicken stock
Salt
1 bunch medium spinach
stemmed
1 lime
4 scallions
chopped
1 large clove garlic
chopped
1 small jalapeño
seeded and chopped
½ tablespoon olive or vegetable oil
3 slices bacon
finely chopped
1 small onion
finely chopped
1 jalapeño pepper
seeded and finely chopped
2 large cloves garlic
finely chopped
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon hot sauce (Rach's go-to is Frank's)
½ teaspoon black pepper
1 can black beans
lightly drained
1 lime
3 tablespoons butter
1 small onion
finely chopped
2 large cloves garlic
finely chopped
Salt and pepper
3 tablespoons finely chopped or purée of canned chipotles in adobo
1 teaspoon honey or agave
1 cup chicken stock
½ cup crema or sour cream
1 cup shredded Monterey Jack or pepper jack cheese
1 rotisserie chicken
remove skin and bones and pull meat
4-6 large flour tortillas
½ bunch cilantro

Steps:

  • For the rice, combine the rice and stock in a pot, bring to a boil and reduce the heat to simmer, add a pinch of salt
  • Add the spinach, juice of 1 lime, scallions, garlic and jalapeño to food processor and pulse to finely chop
  • Cook rice 15 minutes, stir in the spinach, cook 3 minutes more, remove from heat, let stand 5 minutes and fluff with fork
  • For the beans, in a medium skillet, heat oil, ½ turn of pan, over medium-high heat, add bacon and render the fat, add onions, jalapeño pepper and garlic, stir, add spices and stir again, add ½ cup water, let it absorb, add black beans and juice of 1 lime, and reduce heat to low
  • For the chicken, heat a large skillet over medium to medium-high heat, melt butter and add the onion and garlic, season with salt and pepper, and stir to soften, add chipotle in adobo, add honey and stock, stir in crema and cheese, add chicken and heat through
  • Char the tortillas in stainless skillet or over open flame on gas burner
  • Build burritos: rice, beans, chicken in cheesy chipotle sauce, tuck in sides, wrap and roll tightly
  • Halve the burritos

2 tablespoons olive oil (or rice bran oil (see note 1))
2 medium yellow onions (chopped)
6 cloves garlic (minced)
1 pound dried black beans (rinsed, sorted, and soaked overnight (see note 2))
2 chipotle chilies (plus 2 teaspoons adobo sauce)
1 teaspoon ground cumin
1 teaspoon dried oregano ((see note 3))
2 bay leaves
6 cups water ((enough to cover beans))
fresh lemon juice (to taste)
fresh lime juice (to taste)
Salt and freshly ground black pepper

Steps:

  • In a Dutch oven or large pot over medium high heat, heat oil until shimmering. Add onion and cook until softened, about 5 minutes. Stir in garlic until fragrant, about 30 seconds.
  • Add beans, chipotle peppers and adobo sauce, cumin, oregano, and bay leaf. Add enough water to cover and stir to combine. Bring to a boil over medium high heat. Reduce heat and simmer until beans are tender, about 1 1/2 to 2 hours.
  • Remove from heat. Remove chipotle chilies if desired and bay leaf. Stir in lemon and lime juices, and season to taste with salt and pepper.

6 skinless, boneless chicken breasts, or more to taste
2 (15 ounce) cans black beans, drained and rinsed

Steps:

  • Blend honey, garlic, and chipotle peppers in adobo sauce together in a food processor until smooth.
  • Place chicken breasts in the bottom of a slow cooker and mix in honey-chipotle sauce.
  • Cook in the slow cooker on Low for 5 hours.
  • Transfer chicken to a bowl and shred using 2 forks. Return chicken to the slow cooker and stir in black beans.
  • Continue to cook on Low until cooked through, about 30 minutes more.

6 oz chipotle pepper in adobo sauce, finely chopped
1 tablespoon vegetable oil

Steps:

  • On a cutting board, season the chicken all over with salt and pepper.
  • Transfer the chicken to a large zip-top bag with the chopped chipotles and mix until the chicken is fully coated.
  • Refrigerate for at least 2 hours, up to overnight.
  • Heat the oil in a large skillet over medium-high heat.
  • Add the chicken and cook until golden brown, 4 minutes per side.
  • Remove the chicken with tongs and place on a cutting board. Let cool for 5 minutes. Cut the chicken into bite-sized pieces.
  • Transfer the chicken back to the pan over medium-high heat and cook, stirring frequently, for 2-3 minutes, until all pieces are browned.

1/2 cup reduced-sodium chicken broth
1/2 cup uncooked long grain rice
6 boneless skinless chicken breast halves (4 ounces each)
1/4 teaspoon salt
3 bacon strips, diced
1 cup chopped onion
3 garlic cloves, minced
1 cup chopped plum tomatoes
1/2 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1/2 cup whole-berry cranberry sauce
4-1/2 teaspoons minced chipotle peppers in adobo sauce
1-1/2 teaspoons lime juice
1 can (15 ounces) black beans, rinsed and drained
1 can (15 ounces) cannellini beans, rinsed and drained

Steps:

  • In a small saucepan, bring 1/2 cup water and broth to a boil. Stir in rice. Reduce heat; cover and simmer for 15-18 minutes or until rice is tender., Meanwhile, cut each chicken breast half widthwise into six strips. Sprinkle with salt. In a large nonstick skillet coated with cooking spray, cook chicken for 5 minutes on each side or until lightly browned. Remove and keep warm. , In the same skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving 1/2 teaspoon drippings. In the drippings, saute onion until tender. Add garlic; cook 1 minute longer. Add the tomatoes, cumin and cinnamon; cook for 2 minutes. Stir in the cranberry sauce, chipotle peppers, lime juice and remaining water. Bring to a boil. , Return chicken to the pan. Reduce heat; cover and simmer for 6-10 minutes or until chicken is no longer pink. Remove and keep warm. Add rice and beans to the skillet; heat through. Canned white or yellow hominy adds wonderful corn flavor and color. This is even better is it's allowed to sit for a day and get rewarmed. *Serve this chili as "Chili Burritos" by wrapping in tortillas with green onions, shredded sharp cheddar cheese, cilantro, sour cream and salsa for a great 2nd meal!

1 lb dried black beans
4 tablespoons olive oil
6 large garlic cloves, minced
2 large yellow onions, coarsely chopped
1/4 cup chili powder
1 teaspoon red pepper flakes
1 1/2 tablespoons sugar
3/4 teaspoon dried thyme
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon ground coriander
1 (28 ounce) can crushed tomatoes in puree (diced ok too)
2 (14 1/2 ounce) cans vegetable broth
1 (14 1/2 ounce) can water
1 (14 1/2 ounce) can hominy, drained (white or yellow)
1 teaspoon ground pepper
1 teaspoon salt (optional)
1 -2 tablespoon cornmeal (for thickening optional)

Steps:

  • Pick over the beans for any debris. Rinse the beans and set aside.
  • In a 4 qt or larger heavy saucepan over medium heat, heat the oil and saute the garlic and onion until they are softened but not brown, 5 - 10 minutes.
  • Add the chili powder, pepper flakes, sugar, thyme, cumin, oregano, and coriander. Stir and cook for 5 minutes.
  • Add the beans, tomatoes (including the juice or puree), vegetable broth, water and salt. Bring to a boil, reduce heat to a simmer, cover and cook for 1 1/2 hours or until the beans are tender. Add the hominy and pepper.
  • Taste for salt and add if necessary. Thicken, if desired by adding 1 Tbs cornmeal at a time and simmering for 5 minutes after each addition.
  • Can keep covered in the refrigerator for up to 7 days.

5 tablespoons olive oil
3 pounds beef chuck, cut in 1/2-inch cubes
2 large onions, diced
6 cloves garlic, minced
2 large jalapenos, seeded and diced
Salt to taste
3 cups beef broth
2 12-ounce bottles dark beer
2 tablespoons pure ground chili, preferably New Mexican
2 tablespoons ground cumin
2 teaspoons oregano, preferably Mexican
1 large buttercup, kabocha or butternut squash, or 1 large chunk of calabaza (about 4 pounds)
2 to 4 canned chipotle chilies in adobo sauce
2 15-ounce cans black beans, drained and rinsed
2 15-ounce cans hominy, drained and rinsed
Sour cream and chopped scallions for garnish

Steps:

  • Heat 2 tablespoons oil in Dutch oven or heavy kettle over high heat. Brown the beef, one quarter at a time, adding oil as needed. Transfer to a bowl with a slotted spoon.
  • Lower heat to medium-high, add remaining oil to pan and stir in onion, garlic and jalapenos. Season well with salt, and saute until softened, 5 to 10 minutes. Return beef to pan, and add broth, beer, chili powder and half the cumin and oregano. Bring to a boil, then reduce heat, and simmer, uncovered, until meat is very tender, 1 1/2 to 2 hours.
  • Meanwhile, heat oven to 350 degrees. Halve and seed squash, and lay cut side down on baking sheet. Bake until very soft, about 1 hour. Cool, then scrape out flesh and mash coarsely.
  • Add squash puree and remaining cumin and oregano to pot, and simmer 15 minutes. Add water if necessary to keep mixture moist. Chop 2 chipotles, and stir into pot with their sauce. Add black beans and hominy, and simmer 10 to 15 minutes longer. Chili should be stewlike rather than soupy. Taste, and add more chipotles and salt if desired. Serve in bowls garnished with sour cream and scallions.

1 green bell pepper, coarsely chopped
1 medium onion, coarsely chopped

  • In a large saucepan, heat the olive oil until shimmering. Add the bell pepper, onion and garlic and cook over moderately high heat until the vegetables are just beginning to brown, about 4 minutes. Add the ham, cumin, coriander and chipotle and cook until the ham is lightly browned, about 3 minutes longer. Add the black beans, hominy and stock and bring to a boil. Simmer the stew over moderate heat until slightly thickened, about 10 minutes.

Spices permeate the entire dish - cumin, oregano, and cayenne pepper - and hominy adds an authentic Southwestern accent to this chicken chili. Save a big chunk of time simply by using rotisserie chickens from the supermarket and canned chicken broth as the chili base.

2 store-bought roast chickens, meat picked from bones and
2 quarts chicken broth
6 tablespoons vegetable oil
¼ cup ground cumin
4 teaspoons dried oregano
½ teaspoon cayenne pepper
2 large onions, cut into medium dice
2 (4 ounce) jars diced mild green chiles
2 (20 ounce) cans hominy, or equal quantity of canned white beans, such as cannellini or great Northern
6 medium garlic cloves, minced
2 cups frozen corn, preferably shoepeg
sour cream
cilantro or scallions
lime wedges
green hot sauce

Steps:

  • Bring skin and bones, chicken broth and 1 quart of water to boil over medium-high heat. Reduce heat to low and simmer about 30 minutes. Strain and discard skin and bones.
  • Heat oil over medium-low heat in a soup kettle. Add cumin, oregano and cayenne and cook until spices are fragrant, about 1 minute. Add onion; increase heat to medium; saute until soft, 4 to 5 minutes. Stir in chicken and chiles. Add 4 cups hominy and all but 1 cup of the broth and bring to a simmer. Reduce heat to low and simmer, uncovered, stirring occasionally, 25 to 30 minutes.
  • Process remaining 2 cups hominy and 1 cup broth until silky smooth; add to soup. Stir garlic and corn into soup. Simmer for a minute or so longer, then cover and let stand for 5 minutes.
  • Ladle into bowls and top with sour cream, cilantro or scallions. Pass separately the lime wedges and green hot pepper sauce.
