Steps:

  • Remove and discard the stem end and string from each sugar snap pod.
  • Heat the olive oil in a large saute pan over medium-high heat. Add the sugar snap peas, salt and pepper and saute, tossing occasionally for 3 to 5 minutes, until the sugar snap peas are crisp tender.
  • Place the sugar snap peas in a serving bowl, sprinkle with sea salt and serve.

1 small piece fresh horseradish (no more than 1 inch needed)
2 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
Juice from 1/2 lemon

Steps:

  • With a paring knife, remove the stems and peel the pod strings of the sugar snaps. Set aside.
  • Using a peeler, remove the rough, outer skin of the horseradish. (Only remove the desired amount to be used, leaving the rest of the root intact.)
  • In a large saute pan over medium-high heat, add the butter. Gently swirl the butter and lightly agitate with a small whisk. Season with some black pepper. Once the milk solids begin to turn golden brown, after about 2 minutes, add the cleaned snap peas. Toss them twice in the pan, then add the lemon juice and season with salt.
  • Transfer to a serving vessel. Using a hand-held grater, grate the peeled horseradish over the top.

Steps:

  • Bring a large pot of salted water to a boil.
  • Melt the butter with the oil in a large skillet over medium heat. Add the shallot, garlic and red pepper flakes and cook, stirring occasionally, until the garlic is soft and aromatic, but not quite golden, about 2 minutes. Add the heavy cream and take off the heat.
  • Add the spaghetti to the boiling water and cook according to package directions. One minute before the pasta is done, remove 1/2 cup of the pasta water with a measuring cup and reserve. Add the sugar snap peas to the boiling water with the spaghetti for that last 45 seconds. Drain the pasta and snap peas, then add them to the skillet with the sauce. 1 garlic clove, bruised, then cut in half lengthwise
2 teaspoons fresh lemon juice (to taste)
1 pinch kosher salt
1 pinch sugar
1/4 cup fruity extra virgin olive oil
1 slice lemon zest, 2-inch, cut into thin slivers
fresh ground black pepper
2 -3 ounces parmigiano, in 1 piece

Steps:

  • Slice the vegetables: With a chef's knife, cut the sugar snap peas on an extreme diagonal into thirds or halves, discarding any tough stem ends. Place in a plastic bag and refrigerate until ready to serve.
  • Make the dressing: Rub the cut side of one of the garlic halves over the inside of a small bowl. Add the lemon juice, salt, and sugar. Spear both garlic halves with a dinner fork. Using this as a whisk, drizzle in the olive oil until the sauce has formed a thin emulsion with a subtle garlic flavor; discard the garlic.
  • Dress the vegetables: Up to 1/2 hour before serving, add the sugar snap peas and lemon zest and toss to coat; season with pepper to taste.

2 tablespoons olive oil
1 lemon, zest of, sliced very fine

6 -8 fresh basil leaves, chopped fine
1/2 teaspoon table salt
ground black pepper

Steps:

  • Bring 6 cups water to brisk boil in 3- or 4-quart saucepan. Add salt and peas and cook until crisp-tender, 1 1/2 to 2 minutes depending on size of peas.
  • Drain peas, shock in ice water, drain again, and pat dry. (Peas can be set aside for up to 1 hour.).
