2 chicken breast halves
1 teaspoon Pickapeppa Sauce
1/2 teaspoon dried coriander
1/2 teaspoon ground chipotle chile pepper
2 slices chipotle cheddar cheese (I use Cabot)
4 slices rosemary bread (sliced thick)
lettuce
tomatoes
red onion, slices
Dijon mustard
fat-free mayonnaise

Steps:

  • Sprinkle chicken breasts with pickapeppa sauce and make sure both sides are covered.
  • Sprinkle remaining seasonings on one side of each breast. Set aside for ten minutes.
  • Grill chicken. When almost done put cheese on top of each breast.
  • Serve on toasted bread with lettuce, tomato, onion, mustard and mayo.

Since you're taking this for lunch you're going to want things in separate baggies or containers. One for each: chipotle lime mayo grilled chicken with melted cheese, lettuce and onion bun

1 thick chicken breast (or 2 small breasts)
1 teaspoon olive oil
1 -2 slice monterey jack pepper cheese
3 thin slices off a small red onions
3 pieces of crisp lettuce
1 kaiser roll
butter
1/4 cup mayonnaise
1 tablespoon fresh lime juice
1 teaspoon adobo sauce (from the chipotles in adobo sauce you will find in the Hispanic foods aisle at the grocery store)
salt or pepper

Steps:

  • Halve your deli roll and shmear each side with a healthy portion of butter.
  • Slice your onion, tear off some lettuce and grab your cheese.
  • Combine mayo, lime juice, adobo sauce and salt/pepper in a bowl. Mix thoroughly & taste. Add more adobo, salt or pepper to taste.
  • Rub down your chicken breast with the olive oil, salt and pepper.
  • Get the grill nice and hot, say, 400°F Place chicken on the grill and close the top. After 7-10 minutes, turn the breast. While you have the grill still open, throw the bun, butter side down, on the upper portion of the grill so it's not directly on the flame.
  • Check on your chicken after another 7-10 minutes...lookin' all pretty with those grill marks?! Time to take your bun off the grill. now, using your tongs and a sharp knife, cut the breast in half lengthwise. This is your chance to make sure it's cooked all the way through...no pink! Place your pepper jack cheese on top of each half of the chicken and close the grill again.

3 tablespoons olive oil
1 tablespoon lime juice
1/2 teaspoon dried chipotle powder (adjust to taste and a little goes a long way)
1 lb chicken breast, boneless skinless
4 small slice monterey jack cheese
4 sets hamburger buns
1 avocado, peeled, seeded and sliced
lettuce
mayonnaise

Steps:

  • In a shallow bowl, stir together the olive oil, lime juice and chipotle chile powder.
  • Place the chicken breasts between two sheets of wax paper. Use a meat pounder to flatten the breasts to an even thickness of about 1/2 inch. Trim off excess fat. If you are starting with 2 half-pound chicken breast halves, cut each one in half so that you have 4 pieces to better fit the buns. Place the chicken breasts in the marinade, turning to coat. Cover with plastic wrap. Let marinate for at least 15 minutes, preferably an hour. Remove from marinade and lightly season with salt.
  • Heat grill on high heat if you are using a gas grill or prepare coals for direct heat if you are using charcoal. You can also use a cast-iron grill pan on your stove if you do not have a grill. Grill the chicken pieces a couple minutes on each side, until cooked through. Once you have cooked the chicken pieces on one side and flipped them, add a slice of cheese to the chicken. Cover the grill for half a minute to melt the cheese. Toast the buns on the grill as well.
  • Assemble the sandwiches - bun bottom, chicken with melted cheese, avocado and lettuce, mayonnaise on the top bun.

  • In a large bowl combine softened cream cheese with lime juice, chipotle paste, smoked paprika, onion powder, garlic powder and a pinch of salt & pepper. Add chicken and cheese and gently stir to combine. Don't be too rough and mash the chicken or it'll dry up and go mushy/tough.
  • In a large frying pan with the heat OFF add 2-4 slices of bread (depending on size of pan). Spread with butter then flip over so they're butter-side-down. Top with chipotle chicken then add a second slice of bread on top. Spread with butter then turn heat to low-medium.
  • Fry both sides until golden brown with the chicken completely warmed through. Repeat second batch if needed then slice in half and enjoy!
