Our daughter simply adores these cookies. They are only ever made for Christmas, so that in itself makes them special. These freeze very well, so you can bake ahead and hide. Too bad I can't hide them from myself. :) I think this may have been a Robin Hood recipe from many years ago, but I'm not completely certain.

Ingredients

1/2 cup butter, soft
3/4 cup sugar
1 egg, slightly beaten
1/2 teaspoon almond extract
1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup semi-sweet chocolate chips
3/4 cup unsweetened coconut
3/4 cup maraschino cherry, chopped

Steps:

Preheat oven to 350*.
Cream butter and sugar. Mix in the egg and extract.
In a separate bowl, mix together flour, baking powder and salt. Stir into the creamed mixture.
Stir in the chocolate chips, coconut and cherries.
Drop by teaspoons on a parchment lined cookie sheet.
Bake for 15 minutes or until edges are slightly golden in colour. Cool slightly before removing to a wire cooling rack.

1 cup shortening (Crisco)
11/2 cups sugar
2 eggs
1 teaspoon almond extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
2 cups semi-sweet chocolate chips
11/2 cups coconut
1 cup chopped red maraschino cherries, well drained
1/2 cup chopped green maraschino cherries, well drained

Steps:

Cream shortening with sugar. Beat in eggs and almond extract. Combine flour, baking powder and salt. Stir into creamed mixture. Mix in chocolate chips, coconut and cherries. Drop by teaspoon onto greased cookie sheets. Bake at 350˚F for 12 to 15 minutes.

This is an old family recipe that my mom got out of a magazine when I was a kid. We make it every year at Christmas time.

Ingredients

3/4 cup honey
1 cup peanut butter (don't use light)
1 teaspoon vanilla
3 cups crisp rice cereal
1 cup semi-sweet chocolate chips (6 oz pkg)
1 cup salted peanuts

Steps:

Combine honey and peanut butter in large sauce pan.
Cook over medium heat, stirring constantly until smoothly combined and mixture just comes to the boil.
Remove from heat and stir in vanilla and chocolate chips.
Add cereal and peanuts; stir until well combined.
Press lightly into greased 8 or 9 inch square cake pan.
Chill about 1 hour. Cut into bars or squares.
