Loubieh Bizeit + Kizbarh - Lebanese String Beans + Cilantro image

Here is a lovely recipe for Italian string beans (or French beans) cooked in a garlic & coriander / cilantro sauce. This makes a delcious side dish for fish or chicken or you can eat it as part of a mezze. Traditionaly this is served at room temperature but you could eat it hot if you like.

1 lb fresh string bean (top & tailed & de-strung)
1 cup white onion, finely chopped (or grated)
1/2 cup cilantro, finely chopped
1 -2 tablespoon minced garlic
1/3 teaspoon salt (to taste)
2 tablespoons olive oil

Steps:

  • Saute the onions until they are a very pale golden colour.
  • Add the beans, cilantro, garlic & the salt. Stir, then cook on a medium heat for 5 minutes.
  • Reduce the heat & cook on a low simmer for 15 minutes.
  • Serve at room temperature.

This is an Arabic dish, similar to the Lebanese loubieh. Great served over rice with some warm flatbread. You can also add meat (lamb -- especially lamb! -- or beef works well) to this dish, but if you do, cook the meat until almost done before following the directions here.

1/3 cup olive oil
1 medium onion, sliced (yellow or red)
1 garlic clove, minced
1 medium tomatoes, chopped
1 lb fresh green beans, trimmed and halved
1/2 cup tomato sauce
1 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon allspice
1/4 teaspoon black pepper
1 1/2 cups water

Steps:

  • Saute the onion and garlic in olive oil in a pan until softened. Add the diced tomato and simmer for about 5 minutes, then add the remaining ingredients. When it starts to boil, reduce the heat and simmer for about 20 minutes, until the green beans are cooked.
  • Serve over rice (and some warm flatbread would be nice, too).
