Yield 4

Number Of Ingredients 14

1 (1 1/4 pound) pork tenderloin, trimmed of silver skin
salt and ground black pepper
⅓ cup ketchup
⅓ cup seasoned rice vinegar
1 (8 ounce) can pineapple chunks, drained with juice reserved
2 tablespoons brown sugar
4 cloves garlic, minced
2 teaspoons hot chili sauce (such as Sriracha®)
1 teaspoon soy sauce
1 pinch red pepper flakes
1 tablespoon vegetable oil
1 teaspoon butter
¼ cup chopped green onion (white part only)
2 tablespoons chopped green onion tops

Steps:

  • Cut tenderloin into 4 pieces. Arrange in a single layer between two sheets of plastic wrap and pound with a meat mallet until each is about 1-inch thick. Generously season with salt and black pepper.
  • Whisk ketchup, rice vinegar, reserved pineapple juice, brown sugar, garlic, hot chili sauce, soy sauce, and red pepper flakes in a bowl. Set aside.
  • Heat vegetable oil in a skillet over high heat. Place pork in pan; reduce heat to medium. Cook until browned on both sides and cooked through, 5 to 6 minutes per side. Transfer to a plate.
  • Return skillet to medium heat. Stir butter into hot pan. When butter melts and starts to brown, stir in pineapple chunks. Cook, stirring, until pineapple is golden brown, 3 to 4 minutes.
  • Stir in ketchup mixture and 1/4 cup green onion (white parts). Reduce heat to low and simmer until garlic and onion have softened, 5 minutes.
  • Return pork to skillet; cook, stirring, until pork is heated through. Garnish with 2 tablespoons green onion tops.

Time 1h15m

Yield 4 servings

Number Of Ingredients 23

1 pound lean pork
1 tablespoon soy sauce
1 tablespoon sweet vermouth
1 teaspoon minced garlic
1 teaspoon minced ginger
4 tablespoons oil, divided, plus 4 cups oil, for deep frying
1/2 cup cornstarch
1/2 cup diced red and yellow bell peppers
2 tablespoons diced onion
Strips of green onion, for garnish
Toasted sesame seeds, for garnish
1/2 cup ketchup
1/2 cup vinegar
1/2 cup water
2 teaspoons soy sauce
1 cup sugar
1/4 cup orange marmalade
1 1/2 teaspoons minced ginger
1 teaspoon minced garlic
1/4 teaspoon hot pepper sauce
2 tablespoons pineapple juice
1/2 cup chopped canned pineapple
4 tablespoons cornstarch mixed with 3 tablespoons water, for thickening

Steps:

  • Cut pork into bite-size pieces and marinate for 30 minutes in mixture of soy, vermouth, garlic, ginger, and 2 tablespoons oil. Set aside.
  • Meanwhile, make the sweet and sour sauce:
  • In a medium saucepan, combine all ingredients except the cornstarch mixture, blend well and bring to a boil. Add cornstarch mixture. Reduce heat and simmer, stirring frequently until thickened. Be sure and bring your sauce to a boil before adding the cornstarch, otherwise the sauce may retain an unpleasant starchy taste.

  • Remove pork pieces from marinade and roll in cornstarch to coat well. Deep fry in hot oil until golden brown and crispy.
  • In a large saute pan, heat 2 tablespoons oil on medium-high heat. Stir-fry red and yellow pepper and diced onion for 2 minutes, then add sweet and sour sauce and fold in fried pork. Let simmer for 2 minutes, arrange on serving platter and garnish with long strips of green onion and toasted sesame seeds.

CHINESE TAKE-OUT SWEET AND SOUR PORK

Chinese Take-Out Sweet and Sour Pork image

Don't be fooled by the list of ingredients this is not at all hard to make, and may even be better than any take-out you may have had in the past! --- for authenticity of this popular dish the pork must be deep-fryed firstly and this may be done well in advance to save time, adjust the chili flakes to suit heat level my family likes spicy so I use 1 teaspoon or a little more --- serve with cooked white rice.

SWEET AND SOUR PORK

Sweet and Sour Pork image

Recipe video above. The best ever Sweet and Sour Pork recipe is loaded with tricks the Chinese have been using for centuries: double dredgeand double fry for extra crispy, cornflour instead of flour, economical pork used for juiciness, but tenderised with baking soda so you'd swear they're pricey chops, and a sauce that's not sickeningly sweet. Don't let the list of ingredients daunt you. There's a lot of repeat ingredients!OVEN option provided in notes. Because sometimes, you just have to....

Number Of Ingredients 26

400g/14oz pork scotch roast (aka pork neck, collar butt) or shoulder / butt, (cut into 2cm / 4/5" cubes (Note 1))
1/2 onion (, finely grated (Note 2a))
1 tsp garlic (, finely grated (Note 2a))
1 tsp ginger (, finely grated (Note 2a))
3/8 tsp baking soda (bi-carb) ((Note 2b))
2 tsp cornflour/cornstarch
2 tbsp light soy sauce (, or all purpose (Note 3))
5 tbsp cornflour/cornstarch ( - for mixing in)
1/2 cup cornflour/cornstarch ( - for Coating)
2 - 3 cups vegetable or canola oil
1/3 cup white sugar
1/3 cup apple cider vinegar ((or 1/4 cup normal white vinegar))
3 tbsp pineapple juice ((from a 227g/8oz can pineapple pieces in juice, preferably no added sugar, Note 4))
3 tbsp ketchup ((or Aussie tomato sauce))
1/2 tsp Worcestershire sauce
1 tbsp soy sauce (, light)
1 tsp Oyster Sauce ((Note 5))
4 tsp cornflour/corn starch
1/2 cup water
1 tbsp oil
1 garlic clove (, finely chopped)
2 tsp ginger (, finely chopped)
1 onion ((medium), cut into 2.5cm/ 1" cubes (brown, white, yellow))
1/2 red capsicum/bell pepper ((large), cut into 2.5cm / 1" cubes)
1/2 green capsicum/bell pepper ((large), cut into 2.5cm / 1" cubes)
1 cup pineapple pieces ((from the can of pineapple under Sauce))

Steps:

  • Mix Pork with Marinade. Marinade 18 to 24 hours. (See Note 1 for marinating time for other cuts)
  • Rack & warm oven: Preheat oven to 80°C/175°F and place rack on tray - to keep pork warm.
  • Sauce: Place all Sauce ingredients EXCEPT water in a large jug or small bowl. Mix until combined, then mix in water.
  • Be Stir Fry Ready: Have all ingredients lined up, ready to toss in. After Fry #2, things move quickly.
  • Coating #1: Mix 5 tablespoons cornflour into the pork and leave for 5 minutes. At first, it will be white from the cornflour, but after a while it will sweat and make the cornflour (mostly / partially) wet, and will be sticky (this is key for coating to stick).
  • Coating #2: Spread 1/2 cup cornflour in a shallow bowl. Coat pork, shaking off excess, and pile onto a plate.
  • Reserve cornflour in case you need to dust again just prior to frying. Pork should be at least half white when you put it into the oil (if not, just sprinkle with reserved cornflour).
  • Heat oil: Pour enough oil into a large saucepan or small pot so it's 2.5cm / 1" deep. Heat to 180°C/350°F (or until pork immediately starts sizzling when you dip it in).
  • Fry #1: Cook pork in batches, being sure not to crowd the pot, for 3 minutes until golden. Drain on rack. This step is just to cook the pork. It takes me 4 batches.
  • Fry #2: Turn the stove up slightly and heat oil to 200°C/390°F. Starting with the coolest pork, add half the pork (you can crowd the pot) and cook for 1 1/2 minutes, or until pork is deep golden brown and crispy. Transfer to rack, repeat with remaining pork - I do 2 batches.
  • Keep warm in oven.
  • Heat oil in a very large skillet over high heat.
  • Add garlic, ginger and onion, stir for 1 1/2 minutes. Add capsicum and stir for 2 minutes.
  • Add Sauce & pinapple, then let it come to a rapid simmer. Simmer for 2 minutes until it thickens - when you drag the spoon across the base, a path should briefly appear (see video at 1 min 53 s).
  • 10 second toss: Add pork, then QUICKLY toss to coat - aim for 10 seconds!
  • Serve asap! Pour onto serving plate, serve immediately! Will stay crispy for around 5 minutes then starts softening but still has a solid coating. This is just the reality of Sweet and Sour Pork, even at restaurants!

SWEET AND SOUR PORK (糖醋里脊)

Sweet and Sour Pork (糖醋里脊) image

Introducing the authentic Chinese sweet and sour pork made with lightly battered pork, pan-fried until crispy, juicy, and tender, then tossed in a fragrant sticky sauce with a perfectly balanced sweet and sour taste. It's super easy to make and tastes way better than takeout! {Gluten-free Adaptable}To make the dish gluten-free, use a gluten-free ketchup and use dry sherry instead of Shaoxing wine.

Provided by Maggie Zhu

Categories     Main

Number Of Ingredients 14

1 pound (450 grams) pork loin (or tenderloin) (, cut to 1-inch (2-cm) pieces )
1/2 cup cornstarch
1 tablespoon peanut oil ((or vegetable oil))
1 egg (, beaten)
1/2 teaspoon salt
2 tablespoons ketchup
4 tablespoons apple cider vinegar
2 tablespoons Shaoxing wine ((or dry sherry))
4 tablespoons brown sugar
2 teaspoons cornstarch
1/2 teaspoon salt
1/3 to 1/2 cup peanut oil ((or vegetable oil))
2 green onions (, sliced)
2 cloves garlic (, minced)

Steps:

  • Combine the pork pieces, vegetable oil, and salt in a big bowl. Mix well and let marinate for 15 minutes while you prepare the other ingredients.
  • Mix all the sauce ingredients in a small bowl and set aside.
  • When you're ready to cook, add the beaten egg into the bowl with the pork. Stir to mix well. Add the cornstarch. Stir to coat the pork until it forms an uneven coating with a little dry cornstarch left unattached.
  • Heat the oil in a heavy-duty skillet until hot, until it just starts to smoke. Add the pork all at once and spread it out into a single layer in the skillet. Separate the pork pieces with a pair of tongs or chopsticks.
  • Cook without touching the pork for 2 to 3 minutes, or until the bottom turns golden. Flip to brown the other side, 2 to 3 minutes. Transfer the pork to a big plate and remove the pan from the stove. Let cool for 2 to 3 minutes.
  • Place the pan back onto the stove and turn to medium heat. You should still have 1 to 2 tablespoons of oil in the pan. Add the green onion and garlic. Cook and stir a few times until it releases its fragrance, a few seconds.
  • Stir the sauce again to dissolve the cornstarch completely. Pour it into the pan. Stir and cook until it thickens, when you can draw a line on the bottom with a spatula without the sauce running back immediately.
  • Add back the cooked pork and stir to coat with sauce, about 30 seconds. Transfer everything to a plate immediately.
  • Serve hot as a main over steamed rice.

SWEET AND SOUR PORK

Sweet and Sour Pork image

No need for Chinese take-out, this tastes way too good! It's a recipe I created after visiting Phuket as I fell in love with the use of brightly coloured vegetables and fresh ingredients. This is a versatile recipe where you can replace the pork with chicken, prawns, tofu or just add extra vegies. It's a rough estimate on the quantity of vegetables used here, so feel free to play around with what you add...hope you enjoy! (note: snowpeas are also a good addition to this recipe but I usually don't have them on hand so it's not included in the recipe list!) (second note: I find it tastes better when the veggies are really chunky!)

Categories     Pork

Time 1h10m

Yield 4 serving(s)

Number Of Ingredients 22

500 g pork, cut into sort of 2x2x2 pieces (i.e fillet, loin, leg etc)
2 tablespoons soy sauce
1 tablespoon dry sherry
1 teaspoon sesame oil
1 tablespoon cornflour
3 tablespoons water
2 tablespoons soy sauce
3 tablespoons brown sugar
2 tablespoons rice vinegar
1 tablespoon tomato sauce or 1 tablespoon ketchup
1/2 teaspoon Worcestershire sauce
1/8-1/4 teaspoon ground chili powder
water, extra
1 teaspoon minced garlic
1 red onion, chopped
115 g baby corn, chopped
250 g red capsicums, diced largely (I find red capsicum is the nicest)
200 g zucchini, chopped
1/2-1 fresh pineapple, chopped (depending on size and how much pineapple you like in your sweet and sour)
1 1/2 teaspoons dried coriander (optional) or 1/2 bunch fresh coriander, chopped (optional)
pepper
steamed rice

Steps:

  • Combine the marinade ingredients and add the pork. Allow the flavours to penetrate for at least 20 minutes (although it doesn't really matter if it can't be marinated for that long).
  • Combine the cornflour with a little of the extra water to form a smooth paste/liquid, then set aside. Combine the remaining sweet and sour sauce ingredients in a small saucepan and place over a high heat. When hot, whisk in the cornflour mixture. Continue to whisk over a high heat until the sauce until it has thickened to your liking. Set aside.
  • Place the pork and the marinade into a hot frypan (or wok)and fry until it's almost completely cooked. Remove pork from the pan and set aside.
  • Heat the garlic in the pan. Add the onion and stir fry for about 30 seconds before throwing in the baby corn. Cook for another 2-3 minutes. Add the capsicum, stir frying for another minute or so, then add the zucchini. After stir frying for another 2-4 minutes add the sweet and sour sauce you prepared earlier. Return the pork to the pan and season with pepper and dried coriander (if using). If you feel you need more liquid you can probably add a little bit of chicken or vegetable stock.
  • If the vegetables aren't quite cooked to your liking allow them to simmer in the sauce for however long they need to suit your taste buds (on the contrary you can reduce the stir frying time if you prefer crisper veggies). Add the pineapple (if using fresh coriander, add it in here)and allow it to heat slightly before taking the pan off the heat. Serve on steamed rice (I prefer basmati rice, but any long grain rice will suffice).

CHINESE TAKE-OUT SWEET-AND-SOUR PORK

Chinese Take-Out Sweet-And-Sour Pork image

Though immensely popular, sweet-and-sour pork is not an authentic Chinese dish and was probably invented here in the United States to suit American tastes. It is most often served with a mix of carrot, green and red bell pepper, pineapple, and onion, and glazed with a sweet-and-sour sauce that includes a heavy dose of good old ketchup. We've tried to make it successfully without the ketchup in order to stay truer to it's Asian roots, but it just isn't the same as that old standby we used to eat as kids back in the heyday of the mom-and-pop Chinese restaurant. Food for Thought: According to press reports, China released a new set of stamps to celebrate the Year of the Pig, which began on February 18, 2007. They are scratch and sniff, lick and taste stamps that smell like sweet-and-sour pork when you scratch the front, and taste like the dish when you lick the back. From the Take-Out Menu Cookbook.

Time 1h

Yield 4 serving(s)

Number Of Ingredients 24

1 lb pork tenderloin, cut into bite-sized cubes
1 tablespoon rice wine or 1 tablespoon dry sherry
2 teaspoons soy sauce
1/4 teaspoon szechwan pepper or 1/4 teaspoon fresh ground black pepper
2 -3 cups peanut oil or 2 -3 cups vegetable oil, for frying
1 cup ketchup
1/4 cup sugar
1/4 cup cider vinegar
1/2 cup chicken stock
1 tablespoon soy sauce
2 teaspoons dark sesame oil
1/2 teaspoon chili-garlic sauce
1/3 cup unbleached all-purpose flour
2 tablespoons cornstarch
1 egg white
1 tablespoon vegetable oil
1 pinch salt
1 garlic clove, minced
1 green bell pepper, cut into 1-inch squares (1 cup)
1 red bell pepper, cut into 1-inch squares (1 cup)
1 small onion, cut into 1/2-inch slices (1 cup)
5 slices pineapple, cut into 1-inch squares
white rice, # 318419 for serving
2 green onions, thinly sliced, for garnish

Steps:

  • In a medium bowl, toss the pork with the wine, soy sauce, and pepper. Marinate for at least 15 minutes.
  • Fill a wok or large frying pan with 3 inches of oil and heat to 360º.
  • In a bowl, combine the ketchup, sugar, cider vinegar, stock, soy sauce, sesame oil, and chili sauce. Set aside.
  • In a separate bowl, combine the flour, cornstarch, egg white, vegetable oil, salt and 1/4 cup water to form a batter. Dip the pork in the batter, then carefully add about 10 pieces of pork to the wok and fry for 3 minutes. Remove the cooked pork with a slotted spoon and drain on paper towels. Continue to dip and cook the remaining pork in the same manner. (If you would like the pork to be extra-crispy, fry it again in small batches for 1 minute. Be careful not to let the oil's temperature drop below 350º or the pork will absorb oil).
  • Pour off all but about 3 tablespoons of the oil in the wok or heat another pan with 3 tablespoons of oil. Add the garlic to the pan and cook for about 30 seconds, being careful not to burn it, then add the bell peppers, onion, and pineapple. Stir-fry the vegetables until they begin to soften, about 3 minutes.
  • Stir the reserved sauce and add it to the vegetables along with the fried pork. Toss until the sauce lightly coats the vegetables and meat.
  • Serve hot with rice and garnished green onions.

  • Stirring constantly, bring the sauce to a boil and then reduce the heat to a simmer. Cook the sauce, continuing to stir, until the texture has turned thick and sticky, about 25 minutes.
  • Gather the ingredients.
  • Place the pork in a bowl and add both kinds of soy sauce, rice wine, five-spice powder, ground white pepper, and minced garlic; marinate for 10 minutes.
  • Add the egg, corn flour, and all-purpose flour into the pork marinade and mix evenly. Place in the refrigerator for 30 minutes.
  • Gather the ingredients.
  • Heat the oil to 325 F/170 C in a wok or deep saucepan.
  • Gently slide in some of the pork tenderloin cubes, without overcrowding, and deep-fry, in batches if necessary, until golden brown in color, stirring occasionally. Make sure the oil comes back up to temperature before each batch.
  • Place the cooked pork on a plate lined with a couple of sheets of paper towel.
  • Remove all but 1 tablespoon of oil from the wok and stir-fry the garlic and onion over medium-high heat until fragrant.
  • Add the bell peppers and pineapple to the wok and stir-fry for a minute or two.
  • Return the pork to the wok, along with the sweet and sour sauce, and mix evenly. You can add as much sweet and sour sauce as you prefer.
  • Garnish with the sesame seeds . Serve with cooked white rice , if desired.

  • In a large bowl with a lid or a large ziplock bag, combine the meat with the water, sesame oil, soy sauce, garlic, powder, and onion powder. Stir or squish to combine, then set aside for 20 minutes to marinate.
  • While the meat marinates, make the sauce in a small bowl by combining the chicken broth, ketchup, apple cider vinegar, sugar, garlic, ginger, salt, and the white parts of the green onions. Whisk well. In a separate bowl, combine the cornstarch and water, then set both aside.
  • Once the meat has had a chance to absorb the flavors of the marinade, sprinkle with the salt and pepper, then add the cornstarch and shake well until each piece of meat is evenly coated with a light layer of cornstarch.
  • Heat the oil in a large skillet or cast iron pan over medium-high heat. When the oil is hot, add the meat in a single layer. Let it cook without moving or stirring the meat for 2-3 minutes until nicely browned on the bottom. Flip each piece of meat with tongs and cook on the other side for another 2-3 minutes until nicely browned and the meat is cooked through. Transfer to a plate.
