CHINESE SWEET AND SOUR CHICKEN
A sweet marinade that is just so easy to make! I use this recipe whenever we bring dinner to another couple's house. I marinate it at home, then just cook it there. It's great with white rice.

Steps:
- Combine soy sauce, sugar, vinegar, cornstarch, cold water, ginger, garlic, and black pepper in a bowl.
- Add chicken breasts to marinade and stir to coat.
- Pour the marinade and chicken into a 9x9-inch square baking dish.
- Cover and marinate chicken in the refrigerator for 1 hour.
- Preheat oven to 325 degrees F (165 degrees C).
- Bake chicken in marinade until meat is no longer pink in the center and juices run clear, about 40 minutes, turning midway through cooking.

I love the pinkish red sweet and sour sauce that is served in Chinese restaurants...I have tried dozens of recipes and been disappointed so I made this one by trial and error...this is the closest I have come to getting that flavor.

Steps:
- Over medium heat bring Part 1 ingredients to a boil.
- Mix Part 2 ingredients and add to boiling mixture.
- Cook until bubbly and thick.
- Remove from stove and add Part 3 ingredients.
- This will keep in the refrigerator for weeks.
- Room temperature ketchup mixes easier than refrigerated.
- Serve warm.

Steps:
- Add 1 cup water, white vinegar and sugar to a saucepan and bring to a boil.
- Add the cornstarch to the remaining 1/4 cup of water in a small bowl and whisk until the cornstarch is dissolved.

SWEET AND SOUR PORK RECIPE

- If the recipe in advance is desired to prepare, I suggest cooking the sauce, and start the first cooking pork fritters. Then at the last second, finish with the second frying and pour sauce to coat everything! Start by cutting the roast pork into pieces of a size suitable for bites. Pour the clear soy sauce, Chinese wine, powder 5 spice, baking soda and cornstarch. Let cool at least one hour.
- Pour all the sauce ingredients except the cornstarch and water.
- Add vegetables, peppers, onions and pineapple. Put on low heat for ten minutes just to cook the onion and peppers. So you can cook a little more or a little less.
- Add to the end of these 10 minutes, the cornflour and 50g of water if the sauce thickens too much.
- Cook one minute and stop the fire.
- Prepare the batter for pork. Combine flour, cornstarch, egg white.
- Add hot water gradually to obtain a smooth paste. Too dry or too wet. Pour this batter over pork.
- Heat oil in a wok or saucepan. When the oil is hot, add the pork pieces one by one. Do not put too much pork pan simultaneously. Cook two or three times!
- Turn pieces of browned on all sides. Set aside each time on a paper towel while the other pieces cook. Once everything is cooked, allow the oil to warm up a little and then add all at once. We will fry again to make the extra-crispy pork !! Yum!
- Drain the oil from the wok into another container (an empty pan) and put the fried pork pieces into the wok, pour over donuts sweet and sour sauce.
- Cook just to warm up the sauce. Serve immediately with rice.

- In a medium size sauce pan add cornstarch, broth, pineapple juice, ketchup, rice wine, Amaretto, soy sauce, fish sauce, vinegar, ginger and sugars ; whisk to combine until smooth.
- On medium heat, whisk mixture and bring to a boil until thickened. Add food coloring and mix inches Serve hot over favorite entree or side dish.
- Cook's Note: You can use this recipe for canning for long term storage by doubling or tripling the recipe, also, if canning, you want to use 1 rounded tablespoon "Clear Jel" (cook type) in place of the cornstarch. (Can be purchased on Ebay.com).
- For canning: Fill prepared jars to the 1/2" headspace, clean rims of jars (according to manufacturer's directions) and place a hot sterilized lid and rim on each jar, screw on "finger tight" and place in a large canner pot with enough water to cover 2 inches over the top of the jars.
- Boil the filled jars, covered for 30 minutes, place on kitchen towel undisturbed, for several hours or overnight to allow jars to seal.
- In the morning, wash and dry jars, then label and date them.
- Makes 2 cups, or 1 pint = 2 x 1/2 pints.

SWEET AND SOUR SAUCE

- Combine the pieces of pork, oil and salt in a bowl.
- Mix well and marinate for 15 minutes while preparing the other ingredients for the sauce.
- Combine all the ingredients for the sauce in a bowl and set aside.
- Add the beaten egg to the pork bowl. Stir to combine well.
- Add the 4 tablespoons of cornstarch. Stir to coat the pork.
- Heat the oil over medium to high heat in a heavy-bottomed pan until it begins to smoke.
- Add the pork all at once and spread it in a single layer over the surface of the pan.
- Separate the pieces of pork with a pair of tongs or chopsticks.
- Cook without touching the pork for 3 minutes, or until the underside is golden brown. Flip to brown the other side for 2 to 3 minutes.
- Transfer the pork to a large plate and remove the pan from the heat. Let cool for 3 minutes.
- Add the scallions and garlic cloves. Sauté, stirring until they release their scent, for a few seconds.
- Add the peppers and sauté for 5 minutes over high heat, stirring constantly.
- Stir the reserved sauce ingredients again to completely dissolve the cornstarch. Pour the mixture into the pan.
- Stir and cook until the sauce thickens.
- Add cooked pork and stir to coat with sauce, about 30 seconds.
- Serve immediately with steamed white rice.
CHINESE SWEET AND SOUR SAUCE

- Gather the ingredients.
- Mix the potato starch with 1 tablespoon of water (or a little more, as needed) to make a slurry.
- Add all of the ingredients to a saucepan and mix evenly before you start cooking.
- You must continuously stir the sauce to prevent the sauce from getting lumpy.
- Bring the sauce to a boil and turn the heat to the lowest temperature and simmer until the sauce texture has turned thick and sticky. Then it's ready.
- You can stir fry some pork or chicken with vegetables and pour the sauce in.
