Steps:
- Turn on broiler in oven or toaster oven.
- Combine the sherry and sesame oil. Grate the ginger, and add.
- Wash and dry fish. Coat it with marinade, until it's time to cook it -- just a few minutes.
- Remove the fish from the marinade, and broil it according to the Canadian rule: measure the fish at its thickest part, and cook it 8 to 10 minutes to the inch. Scrod will take about 5 minutes. Brush once with marinade.

- Mix Marinade ingredients together. Add chicken and mix to coat. Marinade in the fridge for a minimum of 1 hour or up to overnight.
- Heat oil in a large non stick skillet or BBQ over medium high heat. (See notes for other cooking methods) Add chicken and cook until each side is dark golden brown and chicken is cooked through (about 3 minutes each side). Transfer to plate, cover loosely with foil and rest for 3 minutes.
- Garnish with chillies, shallots and sesame seeds if desired. Serve with white rice and slices of cucumber.
CHINESE BBQ CHICKEN
The marinade for this chicken is based on the famous Chinese BBQ Pork (Char Siu), a very popular recipe on my blog! It's sweet, savoury, sticky, laced with Chinese Five Spice. Add your own touch like ginger and chilli for a kick! The red food colouring is optional - it gives the chicken the reddish tinge that Char Siu is known for. - Place Marinade ingredients in a ziplock bag or bowl and mix to combine.
- Add chicken and mix to coat. Marinade for 3 - 24 hours.
- Optional: Cut chicken into bite size or large pieces and thread onto skewers. Use 1 skewer for small pieces, 2 for large, like pictured in post.
- Heat half the oil in a heavy based skillet over medium high heat, or BBQ on medium (if using grill side, brush oil on bars).
- Remove chicken from marinade (RESERVE for basting) and place in the skillet - cook in 2 batches, don't crowd the pan. Cook for 4 minutes then turn.
- Use the Marinade to baste the cooked side of the chicken. After 3 minutes, turn the chicken over so the basted side is now cooking again - cook for 1 minute.
- Baste the chicken, then turn again and cook for 45 sec - 1 min.
- Transfer chicken to a plate, cover loosely with foil and rest for 5 minutes.
- Serve, garnished with green onions / scallions if using!

CHINESE PORK MARINADE

- Combine all ingredients, except pork, in a bowl and mix well.
- Coat pork in mixture. I store mine in quart sized zipper bags, 2-3 chops per bag.
- Let pork marinade in refrigerator for a minimum of 1 hour. I marinate for 24 hours.
- Cook outdoors on grill until done. On my grill that's 4-5 minutes per side.
- They also cook well indoors on a contact type grill. I generally cook for 5-6 minutes indoors.
- Pork filled bags may be frozen with marinade and thawed to cook later.
- **Note - Marinating time is not included in my "time to Make".
SPICY GRILLED FISH
Grilled fish with spicy and garlic sauce made with Chinese doubanjiang, garlic sauce and sichuan peppercorns

- Clean the fish. Cut several cuts on both sides of the fresh. Sprinkle some salt to add flavor to the meat inside.
- Wash all the vegetable ingredients listed above. In a large container, add salt and mix thoroughly.
- Cut fresh pepper and onions into slices as well as the Shitake mushrooms.
- Prepare a pan and heat up some cooking oil and then add garlic,shallots and ginger to stir fry until the aroma can be smelled. Then put doubanjiang and sichuan peppercorn in to stir-fry until the oil becomes red. Turn off the fire. Put the pan aside.
- Put the fish cleaned in the middle of ovenware, and then lay the vegetables around the fish.
- Pour the sauce made in above steps onto both sides of the fish. Marinade for around 1 hour.
- Sprinkle five spice powder and cumin powder on top.
- Preheat the oven to 220 degree centigrade; Oven 30 minutes.
- Get the ovenware out and sprinkle some coriander on top to add fresh aroma.

I found this recipe on the internet. It was originally for tuna steaks, but I've found that it is just as delicious for catfish and other white fish fillets, and for shrimp. Original recipe is for 1 pound of fish, but I think this makes enough to marinate a bit more than that. Preparation time includes 20 minutes marinating time.

I've developed this recipe to be used with my bamboo steamer. Use your favorite oriental sauce or try my favorite bottled sauce, Iron Chef's Orange- Ginger Sauce. Or try the sauce used in Recipe #376279 Since my steamer has two baskets, I cook the fish in the bottom basket, and veggies in the top. Serve over rice; makes for a great one pot dinner! - Combine the marinade ingredients in a shallow nonmetalic baking dish or ziplock bag,.
- Add the salmon strips and turn gently to coat.
- Refrigerate for a minimum of 30 minutes or up to 6 hours, turning often.
- Steamed Salmon:.
- Remove salmon from marinade and place in a casserole dish that will fit inside your bamboo steamer. (I use a disposible aluminum cake pan that has been slightly modified to allow steam to filter around the sides.).

- Cut to the fish into thick, but bite size pieces. Add corn starch to the fish fillet.
- Coat the fish with the corn starch. Set aside.
- Peel the ginger, slice and cut into thin strips.
- Mix all the ingredients for the Sauce in a small bowl. Stir to mix well and make sure that the sugar melts.
- Heat up a non-stick skillet or well-seasoned wok with the cooking oil on medium to high heat. When the oil is fully heated, add the ginger and stir-fry until they turn light brown. Remove them from the oil and set aside in a bowl.
- Using the ginger-infused oil, pan fry the fish until both surface turn light to golden brown. Make sure you turn the fish very gently with spatula or tong, or preferably with a pair of long cooking chopsticks. Fish fillets are very delicate; you don't want to break them up while pan-frying.
- Add the Sauce to the fish. As soon as the sauce bubbles. Turn off the heat and dish out. Top the fish with the ginger strips and scallion. Serve immediately with steamed rice.

- For fish:
- Rinse fish and pat dry. Mix green onions, ginger, 1 tablespoon rice wine, 1 tablespoon oil, and soy sauce in 11x7x2-inch glass baking dish. Add fish and turn to coat. Let marinate 1 hour at room temperature.
- For sauce:
- Bring first 6 ingredients to boil in heavy small saucepan, stirring to dissolve sugar. Reduce heat to medium and simmer until sauce is slightly thickened and reduced to 1/3 cup, about 4 minutes. Remove star anise sauce from heat and cool.
- Remove fish from marinade and place on several layers of paper towels to drain; reserve marinade. Pat fish dry. Heat 14-inch-diameter flat-bottomed wok over high heat until drop of water added to wok evaporates on contact. Add remaining 1 tablespoon oil to wok, then fish pieces, spreading evenly. Cover and cook 30 seconds. Uncover and loosen fish pieces with metal spatula. Reduce heat to medium and cook 1 minute. Turn fish pieces over; cook 1 minute. Add remaining 2 tablespoons rice wine and reserved marinade from fish. Cover and cook 1 minute. Remove wok from heat; let fish stand covered until just opaque in center, about 1 minute. Using metal spatula, transfer fish and sauce from wok to plate. Drizzle with some of star anise sauce. Refrigerate until cold. DO AHEAD Can be made 6 hours ahead. Cover fish and keep chilled. Cover remaining star anise sauce and let stand at room temperature.
- Spoon additional star anise sauce over fish; sprinkle with green onions and serve cold or at room temperature.
