MMMmm these are tasty wings, sticky but tasty. Excellent as an appetizer or part of your Dim Sum Brunch. Have them as part of your home cooked Chinese dinner.

2 lbs chicken wings
2 tablespoons peanut oil
1/3 cup dark soy sauce
1 tablespoon honey
2 tablespoons Chinese wine or 2 tablespoons dry sherry
1 garlic clove, crushed
1/2 teaspoon finely grated fresh ginger

Steps:

  • Cut wings intp three pieces (save tips for making stock).
  • Heat oil in wok and fry the larger joints on high heat for 3-4 minutes or until browned.
  • Add Soy, Honey, Wine, Garlic and Ginger, stir well.
  • Reduce heat to low, cover and simmer for 30 minutes or until the wings are tender.
  • Towards the end watch the wings carefully, stir frequently to make sure the glaze does not burn.
  • Serve warm or at room temperature.

1 to 2 lbs. (0.5 kg-1 kg) chicken wings, drummettes, mid section, or both
white sesame
1 tablespoon soy sauce
1/4 cup cooking sake or rice wine 1/2 tablespoon sesame oil
1 scallion, cut into strips
3 dashes black pepper powder
2 inch (5 cm) ginger, peeled and coarsely diced
3 tablespoons honey
2 tablespoons soy sauce
1 tablespoon mirin
1 tablespoon cooking sake or rice wine

Steps:

  • Clean the chicken wings thoroughly and pat dry with paper towels. Add all the Marinade ingredients to the chicken and marinate for 30 minutes.
  • Heat up all the ingredients in the Glaze on low heat, stir and when it thickens, it's ready to use.
  • Heat up the oven to 400°F (207°C). Bake the chicken wings for 10 minutes, and then brush the glaze, and then bake again for 10 minutes. Repeat again with the glaze and bake for another 10-12 minutes until the surface slightly brown and charred. Remove from the oven, topped with some sesame seeds and serve immediately.

Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
2 tablespoons butter
1/2 cup honey
Sesame seeds, for garnish
2 pounds chicken wings
1 cup low sodium soy sauce,
1 tablespoon grated fresh ginger
2 tablespoons chopped fresh cilantro leaves
2 cloves garlic, minced
1/2 lemon, juiced

Steps:

  • Rinse chicken wings and pat dry. Remove tip and discard; separate each wing at the joint into 2 pieces. Place wings in a shallow dish and pour over the soy sauce, ginger, cilantro, garlic, and lemon juice. Toss well to coat; marinate, refrigerated, for 2 hours.
  • Remove wings from marinade and pat dry; season with salt and pepper. In a large saute pan over medium-high heat, melt the butter in the olive oil. When the butter stops foaming, add the honey and chicken wings and fry until browned on each side, about 5 minutes. Continue cooking the wings, turning them over often to coat them as the glaze reduces. Cook until the wings are sticky and cooked through. Garnish with sesame seeds and serve.

12 large chicken wings, cut in half at the joint (remove wing tips if still attatched.)
3 garlic cloves, crushed
2 teaspoons fresh ginger, grated
1 tablespoon peanut oil
1 tablespoon fish sauce
2 tablespoons soy sauce
100 ml honey
50 ml sweet chili sauce
1 teaspoon chili-garlic sauce
2 green onions, sliced thinl

Steps:

  • Combine chicken with garlic and ginger in a large bowl.
  • Heat oil in a wok, add chicken in batches and cook until browned all over, remove chicken, wipe wok clean, place wok on side, add sauces and honey, stir until well combined.
  • Return chicken to wok and place back on a medium low heat, cover wok and cook, 10-15 Min's, stirring occasionally or until chicken is cooked through.
  • To Serve: Place wings in a bowl and top with sliced green onion. I served mine with a nice big salad of greens, egg, avocado, cucumber, bacon, red onion, parmesan cheese and topped with alf alfa sprouts.

1kg pack chicken wings
2 tbsp clear honey
2 tbsp soy sauce
1 tbsp sesame seeds
100ml soured cream
100ml buttermilk
100g mayonnaise
2 tsp lemon juice
pinch of smoked paprika
2 red chillies , deseeded and finely sliced
celery sticks halved, to serve
baby carrots , peeled, to serve

Steps:

  • Heat oven to 220C/200C fan/gas 6. Put the chicken wings in a large roasting tin. Mix the honey, soy and 1/2 tbsp sesame seeds in a bowl, then pour over the wings. Use your hands to mix and ensure all the wings are coated, then roast for 20 mins until cooked through, sticky and golden.
  • Meanwhile, combine the soured cream, buttermilk, mayonnaise, lemon juice and paprika. Season well, then chill until ready to serve.
  • When the wings are cooked, scatter over the remaining sesame seeds and the chilli. Serve with the dip, and some carrot and celery sticks for dunking.

This is a quick Cantonese recipe for succulent, melt-off-the-bone tender chicken from Diana Kuan's excellent blog, "Appetite for China". The liquid should cover at 3/4 of the chicken; if you need more liquid maintain the 2 parts soy sauce to 3 parts water ratio.

2 cups soy sauce, more if needed (500 mL)
3 cups water, more if needed (750 mL)
1 piece ginger, peeled and sliced
3 tablespoons sugar (45 mL)
2 teaspoons cinnamon (10 mL)
1 teaspoon star anise (5 mL)
4 pieces chicken thighs (or a combination of the two) or 4 pieces chicken wings (or a combination of the two)
1 scallion, roughly chopped

Steps:

  • Begin heating soy sauce and water over medium flame. Add ginger, sugar, cinnamon, and star anise.
  • Bring mixture to simmer and add chicken. Reduce heat to very low and cover casserole dish/pot. Make sure heat is as low as can be without turning off; simmering soy sauce can easily become rapidly boiling soy sauce, which can easily become a big mess to clean up.
  • Cook chicken for 15 to 20 minutes, depending on the size of the pieces. Cut one open to check for doneness. Ladle chicken from sauce mixture and serve as is. Or if you're handy with a cleaver, chop up those thighs into smaller pieces. Garnish with scallions.

I found this recipe from the "easy Chinese recipes" section of About.com and modified it slightly to my taste. It is easy, not too time consuming and very few ingredients are needed.

8 chicken wings
1/2 tablespoon honey
2 1/2 tablespoons hoisin sauce (substitute with barbeque sauce if not available)
3 tablespoons soy sauce or 3 tablespoons teriyaki sauce
1/4 teaspoon salt (one or two pinches)
1/2 teaspoon black pepper
1 garlic clove, minced
1/4 teaspoon fresh ginger, minced
3 -4 scallions, minced

Steps:

  • Mix mix the hoisin sauce, honey, soy/Chinese teriyaki sauce, salt, black pepper, ginger, garlic and scallion together. Marinate the chicken wings in this mixture for 15 minutes.
  • Heat oven to 350°F Put the chicken wings onto skewers, two per skewer, and put on a baking tray or cookie sheet. Bake for 30-35 minutes, basting occasionally with the marinade.
  • Change oven setting to "broil" and broil for 5-8 minutes, changing sides and basting occasionally to prevent the chicken from burning.
  • Take out from the oven; remove from the skewers and serve.
  • Tip: Skewers aren't necessary, I just use skewers because basting is easier and there's lesser chances of the chicken skin getting stuck to the tin foil on the baking tray or cookie sheet.
  • Suggestion: I put in a tiny bit of extra-hot pepper paste when I make this for my boyfriend because he likes doesn't like anything too sweet. In case you don't have that, just increase the black pepper or use cayenne pepper instead.
