BAKED BRIE WITH FIG COMPOTE

Steps:
- Combine the figs, orange zest, thyme, brandy, sugar, vinegar, a few grinds of pepper and 1/4 cup water in a small saucepan. Bring to a boil, then reduce the heat and simmer until the liquid is syrupy and the figs are softened, 15 to 20 minutes. Transfer to a small bowl, discard the zest and thyme and let cool, about 20 minutes. Transfer to a food processor or mini chopper and pulse until mostly smooth.
- Preheat the oven to 375 degrees F. Unroll the pie dough onto a lightly floured work surface. Roll out the outer 2 inches of dough with a rolling pin to make the edge slightly thinner than the rest of the dough. Put the cheese in the center of the dough and top with the fig compote. Trim about 1 inch off the outer edge of the dough. Pull the dough up and over the cheese, folding and pleating the dough all the way around until the cheese is covered. Pinch the dough together at the top to seal.
- Transfer the wrapped cheese to a parchment-lined baking sheet. Brush the dough with the beaten egg and bake until golden brown, 30 to 35 minutes. Let cool about 10 minutes, then transfer to a cutting board to slice. Serve warm or at room temperature.

JAMIE'S BAKED FIGS
Steps:
- You should have no problem getting nice figs at Christmas time and they're wonderful to make in so many ways so when you see them, buy them up! Here's one really gorgeous way to have them. I promise you won't get bored of these; there are so many lovely ways of using them up.
- Personally, I like to make a sort of bruschetta with them or put them out on a platter with some nice cheese. As it's Christmas and your kitchen is probably well-stocked, you'll hopefully have the ingredients for the bruschetta on hand already. If not, you can always improvise with whatever you've got in the fridge.
- Preheat your oven to 110ºC/225ºF/gas ¼. Lay your figs, cut-side up, in a baking tray. Using a fine grater, zest your clementines over the figs then dust the figs with a sprinkling of cinnamon and a teaspoon of sugar. My flavoured sugar is also great for this so if you've made a batch of that, feel free to use that instead.
- Pop the figs in the oven to bake for 4 hours, checking on them every hour or so. When they come out of the oven you'll have semi-dehydrated figs, which will be a bit like wine gums.
- Fig bruschetta Get yourself a few slices of nice warm bread, crumble over some lumps of cheese, and a few pieces of walnut then put a few fig halves and a drizzle of runny honey over the top to finish it off. I think the combination of salty goat's cheese with these figs and a bit of honey is absolute heaven.
- Figs in honey You'll be able to put any leftover figs to good use in all sorts of ways. A really nice way of using them at Christmas is to turn them into a bit of a gift by popping a stack of them in a sterilised jar, covering them completely with honey then sealing the jar with an airtight lid. They'll be beautiful as part of a cheese platter, baked in a tart, a sticky toffee pud, or even thrown into a roasting tray with some pork or other meat for a bit of added sweetness. Give them to your mates when you go round to theirs for dinner. They'll love getting something unique, especially when you explain all the different things they can do with them.

FRESH FIGS BAKED
Easy fresh fig recipe. Can be used as appetizer, side dish, or dessert... or all three! I could eat figs three times a day, I only wish the season were longer. I changed the amount of Gorgonzola for the figs, as I believe the review I recently got was right... too strong for the fig. It read 6 tablespoons before I changed it. I believe 1/2 teaspoon per fig would be better. As would less port be better.

- Bacon-Wrapped Figs. Figs and bacon are a match made in heaven—the sweet and salty complement each other beautifully—and this recipe is a perfect example of how simple is best.
- Blue Cheese-Stuffed Figs. This tasty appetizer looks like you spent a lot of time preparing it, but all you need is just 10 minutes to assemble and cook.
- Figs in Spiced Syrup. When you have figs that aren't as sweet as you'd expect, it's a good idea to cook them in a sweet syrup and make them almost preservelike, perfect for adding them to pancakes, waffles, sandwiches, or pairing with cheese.
- Fig Coulis. This recipe for fig coulis is good on pretty much anything. Spread it on bread to add a sweet note to sandwiches, use it to top focaccia and add nuts and a drizzle of honey, serve it on the side with roasted meats, including your next holiday turkey, or put it on a charcuterie plate.
- Fig Crostini. This pretty appetizer never gets old, as it has many variations. Start with tossed figs in olive oil and balsamic, and place on top of warm crusty baguette.
- Honey-Fried Figs. These chewy and sticky figs are a delicious dessert by themselves but can be included in other preparations as well. They are also simple to make—just mix honey, butter, and figs in a pan, cook until soft, and serve hot.
- Figs in Brandy. This flavorful dessert would be the ideal grand finale at any dinner party. Fresh figs are cooked in a simple syrup until soft and then drizzled with a spiced brandy and sherry sauce.
- Labneh Stuffed Figs. Labneh is a yogurt cheese made by straining the yogurt of most of its liquid. This recipe teaches you how to make this versatile cheese, which you can then use in other recipes in lieu of mascarpone or soft ricotta.
- Fig Jam With Wine and Balsamic Vinegar. If you have a surplus of figs, this recipe will come in handy. The flavor from the red wine and balsamic vinegar make this jam perfect for cheese plates and preparations with pork and game meats.
- Fresh Fig Jam. Homemade fresh fig jam is wonderful for spreading on crostini, adding to cheese boards, and folding into sauces and dressings. Even better, it is as easy as simmering figs, sugar, lemon juice, and lemon zest until the mixture reaches the gel stage, which is just over an hour.
