Steps:
- In a large bowl toss together all of the ingredients for the salad. Set aside. In a small jar add all of the ingredients for the salad dressing. Shake until well combined. Pour salad dressing over the salad, tossing to combine until everything is well coated. Serve immediately.

ASIAN PASTA SALAD
Steps:
- Mix together dressing ingredients in a jar or bowl with tight fitting lid. Shake well and set aside.
- Boil bow tie pasta for 10 minutes or about one minute shy of the package directions. Pour cooked pasta into a colander and rinse with cold water to stop the cooking process and cool down the pasta. Drain well and transfer to a large bowl.
- Mix in remaining salad ingredients. Give dressing a good shake and pour over the salad. Mix well.

- Heat canola or corn oil in a skillet over medium-high heat. When oil starts to shimmer, fry the wonton skins in batches of 5-7 strips for 30 seconds each side or until lightly browned, working quickly so they don't burn. Remove from the oil and drain on paper towels until cooled.
- In a large bowl, combine lettuce, chicken breast, green onion, almonds, and pasta.

- In a small skillet, add the cashews and toast gently over low heat. Transfer to a cutting board to cool. Chop into bite-sized pieces and set aside for garnish.
- To make the vinaigrette, add the first 7 ingredients to a bowl and whisk well to combine. Slowly add the the olive oil and continue whisking to emulsify.
- Remove both breasts from the chicken and thinly slice (or shred with your hands). Save the rest of the chicken for another use.
- To a large bowl, add the cabbage, carrots, cilantro and chicken.
- Add a small amount of vinaigrette and toss well. Taste the salad, and add more vinaigrette if desired.

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Place in large bowl with chicken.
- In large skillet or wok, heat 1 tablespoon oil. Cook carrots with 1/4 teaspoon salt until tender-crisp, 3 to 5 minutes. Remove carrots, place in bowl with chicken and pasta. Add 2 tablespoons oil to wok and cook mushrooms with 1/4 teaspoon salt until tender, 5 minutes. Remove mushrooms and place in bowl.

- Preheat the oven to 350 degrees F.
- Place the chicken breasts on a sheet pan and rub with the skin with olive oil. Sprinkle liberally with salt and pepper. Roast for 35 to 40 minutes, until the chicken is just cooked.
