I love the green beans found on Chinese Restaurant buffets! They are the bomb! I could easily pay for the entire buffet and only eat the green beans! I found this recipe while searching for the technique online as I was told the secret was that they were Dry-Fried. Oh Yum! Thanks to Ronda Parkenson for the recipe I adapted. I found that I did not need as much oil when making this recipe....so i reduced the oil amounts to what I used, if it does not look like enough for you, feel free to add more.

1 lb green beans
1 tablespoon chinese black bean sauce (available at Asian markets)
1 tablespoon dark soy sauce or 1 tablespoon tamari
2 teaspoons dry sherry or 2 teaspoons rice vinegar
1 1/2 teaspoons sugar
1 tablespoon chopped garlic
1 tablespoon chopped ginger
2 scallions, chopped, white part only
1/2 teaspoon chili paste or 4 -6 small dried red chilies
2 tablespoons peanut oil, for stir-frying more if needed
1 teaspoon sesame oil, for stir-frying (can use peanut oil, your preference)

Steps:

  • Wash the green beans and pat dry with paper towel. Cut ends on the diagonal leaving beans long.
  • Combine the sauce ingredients and set aside.
  • Warm a wok over medium heat and add 2 tablespoons peanut oil. Drizzle oil down the sides of the wok.
  • Once the oil is heated, add the green beans. Stir-fry for about 10 minutes, or until the skins pucker and turn brown and the green beans are tender (NOT mushy). Remove the beans from the wok.
  • Over medium-high heat, heat 1 teaspoon sesame oil. Once the oil is hot, add the chopped garlic, ginger and scallions. Stir-fry briefly for a few seconds until aromatic. Add the chili paste or dried chili peppers.
  • Add the sauce and the green beans to the wok. Toss and serve hot.

Easy Chinese Buffet Green Beans image

I always load up on the green beans at the local Chinese buffet and have attempted to recreate that tasty treat at home. At first I used raw green beans, until I had to use up some that I had steam cooked in my bamboo steamer the night before. What a difference precooking makes! Since I do most of my cooking on the fly, amounts listed aren't exact but were ballparked to allow publishing.

1 lb fresh green beans
1/2 cup peanut oil
1/4-1/2 cup oyster sauce
1/8 cup sesame seeds

Steps:

  • Precook the green beans preferably by steaming. Boiling works as well, just be absolutely sure to DRAIN THEM WELL since you will be adding them to HOT peanut oil, and you don't want any eruptions!
  • In a heavy wok, pour enough peanut oil to cover the bottom by about 1/8 inch deep. Heat until hot; test by breaking off a little piece of green bean and dropping it into the oil. Instant frying means it's hot enough.
  • You can use your hands to drop the beans into the oil, I prefer tongs just to be safe. Only add enough beans to sit comfortably in the hot oil without overcrowding.
  • Move them around a bit; flip them and cook until they are shriveled and a few are slightly browned.
  • Remove from wok with tongs; drain oil from wok; return the beans to the wok; reduce the heat but keep it hot.
  • Shake on as much oyster sauce as you like, adding a couple large pinches of sesame seeds or more also as you like.
  • Toss beans around to coat; heat the sauce and get the sesame seeds fragrant.
  • Done! Eat 'em up!

Every time my family and I go to a Chinese buffet we make a bee line for the green beans! This is a simple and tasty re-creation of that much loved side dish, goes well with any Asian meal. Make sure to slice the garlic, don't use a garlic press. Oyster sauce can be found in the Asian section of your grocery store, at an Asian grocery store, and online.

1 tablespoon oil, peanut or sesame
2 cloves garlic, thinly sliced
1 pound fresh green beans, trimmed
1 tablespoon white sugar
2 tablespoons oyster sauce
2 teaspoons soy sauce

Steps:

  • Heat peanut oil in a wok or large skillet over medium-high heat. Stir in the garlic, and cook until the edges begin to brown, about 20 seconds. Add the green beans; cook and stir until the green beans begin to soften, about 5 minutes. Stir in the sugar, oyster sauce, and soy sauce. Continue cooking and stirring for several minutes until the beans have attained the desired degree of tenderness.

A SUPER dish for green beans! Easy and quick! Very flavorful to add as a side dish to your meal. This dish goes well with chicken, pork and beef entrees.

1/2 lb fresh green beans
1/4 teaspoon sesame oil
1/4 teaspoon garlic powder
2 tablespoons light soy sauce
1/2 teaspoon gingerroot, peeled, minced
1 teaspoon brown sugar
1 teaspoon lemon juice
1 tablespoon butter

Steps:

  • Rinse green beans and trim ends off. Leave beans in long lengths.
  • Blanche beans for 4 minutes in hot water. Immediately immerse into bowl of ice water to stop cooking and retain bright color. Remove and pat dry.
  • In a small bowl, mix all remaining ingredients except butter. Place beans in a saucepan with butter. Add mixture and sautee green beans for 2 minutes. Shake pan to gently let beans roll.
  • Serve immediately and enjoy!
