HOT-SMOKED SALMON WITH CREAMY PASTA & PINE NUTS



Hot-smoked salmon with creamy pasta & pine nuts image

Add a few special ingredients to this simple pasta sauce and you have an impressive meal for friends in just 15 minutes

Number Of Ingredients 6

600g trofie pasta
100ml white wine
142ml pot double cream
2 tbsp grated parmesan
450g hot-smoked salmon , skin removed and flaked into chunks
85g toasted pine nut

Steps:

  • Cook the pasta in boiling salted water according to pack instructions. Meanwhile, bring the wine to the boil in a large frying pan, then simmer for 1 min. Reduce the heat, stir in the cream and season well.
  • When the pasta is cooked, drain briefly and tip into the frying pan with the sauce. Add the Parmesan and flaked salmon pieces, and mix gently together. Pile into bowls, sprinkle with pine nuts and serve with the watercress salad (recipe below) alongside.

Number Of Ingredients 6

320g sheet puff pastry
1 egg , beaten
1 tbsp poppy seeds
5 tbsp cream cheese
100g smoked salmon
small bunch chives , snipped

Steps:

  • Unroll the pastry and brush one side all over with the beaten egg. Sprinkle over the poppy seeds, then flip over the pastry. Spread the cream cheese over the pastry and top with the smoked salmon, then scatter over the chives. With one of the longer sides facing you, mark a line roughly down the centre, but don't cut all the way through. Tightly roll each end in towards the middle until you reach the centre. Slice into 1cm-thick pieces and place, cut-side up, on a baking tray lined with baking parchment. Chill until ready to bake, or freeze for up to 2 months.
  • Heat oven to 200C/180C fan/gas 6. Bake for 20-25 mins until puffed up and golden brown (if baking from frozen, cook for an extra 5 mins). Leave to cool on a wire rack before packing for your picnic.

4 cups fresh baby spinach
4 cups torn iceberg lettuce
1-1/2 cups sliced fresh mushrooms
1/2 pound bacon strips, cooked and crumbled
DRESSING:
1/4 cup red wine vinegar
1/4 cup chopped red onion
3 tablespoons sugar
3/4 teaspoon salt
1/4 teaspoon ground mustard
1/2 cup canola oil
1-1/2 teaspoons poppy seeds

Steps:

  • In a large bowl, combine spinach, lettuce, mushrooms and bacon. Place vinegar, onion, sugar, salt and mustard in blender. While processing, gradually add oil in a steady stream. Transfer to a bowl; stir in poppy seeds., Divide salad among 6 plates; drizzle with dressing.

6 tablespoons mayonnaise
1 1/2 tablespoons Dijon mustard
1 1/2 tablespoons sour cream
1 tablespoon chopped fresh tarragon
1 tablespoon fresh lemon juice
1 tablespoon poppy seeds
2 cups penne pasta
1 1/2 pounds asparagus, tough ends trimmed, cut into 1-inch pieces
1/2 cup thinly sliced green onions
4 ounces smoked salmon, cut into 1/2-inch pieces

Steps:

  • Whisk first 6 ingredients in medium bowl. Season with salt and pepper.
  • Cook pasta in large pot of boiling salted water until almost tender but still firm to bite. Add asparagus and cook until crisp-tender, about 2 minutes longer. Drain, reserving 1/4 cup cooking liquid. Rinse with cold water until cold. Drain well. Transfer pasta and asparagus to large bowl. Add green onions and smoked salmon. Mix reserved cooking liquid into dressing. Add to salad; toss to blend. Season with salt and pepper. Chill at least 1 hour and up to 6 hours.

Drizzling smoked salmon with this fresh dressing helps to cut through its natural richness and makes a great change to the usual squeeze of lemon

1 tbsp poppy seed , lightly toasted
2 oranges , zest of both, juice of 1
2 tsp red wine vinegar
2 tsp olive oil
½ tsp sesame oil
300g smoked salmon
85g radish , trimmed and finely sliced
3 spring onions , finely sliced
toasted rye or soda bread, to serve

Steps:

  • Whisk together the poppy seeds, orange zest and juice, vinegar and oils with some black pepper and a pinch of salt - be sparing with the salt, as smoked salmon is naturally quite salty.
  • Carefully separate the slices of salmon, then put into a mixing bowl with most of the radishes and spring onions. Drizzle over the dressing and gently toss together lightly - using your hands is best. Let the salmon marinate for just 5-10 mins while you toast the bread - any longer and the vinegar will begin to 'cook' the fish.
  • Spread the salmon over a large plate or platter, pour over any dressing left in the bowl, then scatter over the reserved radishes and spring onions. Bring to the table with toasted bread and a few forks, and let everyone help themselves.
