Steps:

  • Combine 2 bottles dry white wine, 1/2 cup honey and 1/4 cup calvados or brandy in a large dutch oven. Add 6 each allspice berries, black peppercorns and star anise pods, 4 slices fresh ginger, 2 cinnamon sticks and 2 wide strips each lemon and orange zest. Bring to a low simmer and cook 10 to 15 minutes (do not boil). Add a few lemon and orange slices to the pot before serving.

750ml white wine
100ml madeira
½ lemon , sliced
4 dried apricots
5 cardamom pods , bruised
1 star anise
1 vanilla pod , split in half
1 tbsp honey
a few drops rosewater

Steps:

  • Start by pouring the white wine and Madeira into a large saucepan. Add the lemon, dried apricots, cardamom pods, star anise, vanilla pod and honey. Bring to a simmer then strain into a jug through a fine sieve. Stir in the rosewater before serving.

1 cup water
1/2 cup honey, preferably orange-blossom
2 lemons, zest of, cut into long strips
1/4 cup fresh lemon juice (from 2 lemons)
4 whole star anise
4 cinnamon sticks
12 whole cloves
2 (3/4 liter) bottles dry white wine (dry wine, such as Sauvignon Blanc)
1 cup orange muscat wine, such as Essencia
1 golden delicious apple, cored, halved, and thinly sliced
1 bartlett pear, cored, halved, and thinly sliced
2 lemons, preferably Meyer, thinly sliced crosswise
12 kumquats, thinly sliced crosswise

Steps:

  • 1.
  • Bring water, honey, lemon zest and juice, star anise, cinnamon sticks, and cloves to a simmer in a large saucepan over medium heat. Reduce heat to low, and cook for 15 minutes.
  • 2.
  • To serve cold: Mix spice mixture, wines, and fruit in a large pitcher. Cover, and refrigerate overnight. Transfer to a large punch bowl, and serve with ice. To serve hot: Heat spice mixture and wines in a large pot over low heat until heated through. Add fruit, and divide among mugs.

750ml bottle red wine
1 large cinnamon stick, or 2 small ones
2 star anise
4 cloves
2 strips lemon zest, pared using a vegetable peeler
4 tbsp caster sugar

Steps:

  • Put the red wine, cinnamon, star anise, cloves, lemon zest and sugar in a large pan. Cook on a low heat for 10 mins.
  • Remove from the heat and cool, leaving to infuse for about 30 mins.
  • To serve, heat without boiling, stir in the sloe gin (if using, see tip below) and pour into mugs or heatproof glasses.

1/2 cup peach juice
2 lemon slices
1 slice fresh ginger, 1/4 inch
1/8 teaspoon ground cinnamon
2 teaspoons honey
2 slices crystallized ginger, for garnish

Steps:

  • Add the first 6 ingredients in a saucepan over low heat; stir to dissolve the honey.
  • Bring to just a simmer and cook for 2 minutes; do not let the wine come to a boil.
  • Discard the lemon slices and fresh ginger; pour the wine into 2 warmed mugs or heatproof glasses; garnish with crystallized ginger and serve.

12 large scallops
1 pinch kosher salt
fresh cracked black pepper
4 tablespoons clarified butter
1/4 cup granulated sugar
1/2 cup dry white wine
1 lemon, zested and juiced
1 tablespoon flat leaf parsley, finely chopped
8 chives (optional garnish)

Steps:

  • Check each of your scallops for a small crescent-shaped muscle that may be attached on the side. If you find one, just peel it off with your fingers - it is easily removed. This muscle toughens during cooking.
  • Rinse the scallops and dry them thoroughly. Season both sides with salt and pepper.
  • Spread the sugar in a thin layer on a plate.
  • Heat a skillet over medium-high heat. Add the clarified butter - when it starts to foam, you are ready to add the scallops. Dip only one side of each scallop in the sugar and place that side down in the pan. Cook for 2-3 minutes, or until nicely seared. Flip and scallops and cook for another minute. Add the wine and lemon juice to the pan. Reduce the liquid by half. After about 1 1/2 minutes, transfer the scallops to a warm platter and pour pan juices over top.
  • Serve the scallops with the pan sauce and garnish with the parsley, chives and lemon zest.

150ml elderflower cordial

4-5 tbsp caster sugar

Steps:

  • Put all the ingredients into a pan and heat until steaming but not boiling. Ladle into mugs or glasses to serve, while you keep the rest warm on a low heat.

  • Prepare the syrup: Gently run the ginger under water to remove any traces of dirt. If the ginger is thin-skinned, leave the skin on. Otherwise, peel. Use the larger holes on a box grater to grate the ginger, and add to a small saucepan. Place over medium-high heat.
  • Add 1 1/2 cups water, cinnamon sticks, cloves and peppercorns. Bring to a boil, then lower the heat and simmer on medium until the liquid reduces by about half and is very fragrant, about 20 minutes.
  • Add the sugar and cardamom, and stir until the sugar dissolves. Remove pan from the heat, and set aside to cool completely. Strain through a fine mesh sieve. This makes about 1 cup. Store in the refrigerator for up to 2 weeks. (You can use this in place of a standard syrup in another cocktail.)
