CHILLED COCONUT CORN SOUP



Chilled Coconut Corn Soup image

Fresh and bright, with the pure flavors of sweet corn and lime juice, this creamy vegan soup is exactly what you want for a light meal on a late summer day.

Number Of Ingredients 12

2 tablespoons virgin coconut oil
1 medium onion, finely chopped
1 (1/2") piece ginger, peeled, finely chopped (about 1 1/2 teaspoons)
1/4 teaspoon ground turmeric
1 teaspoon kosher salt, divided, plus more to taste
6 ears of corn, kernels cut off (about 5 1/2 cups), cobs reserved
1 Yukon Gold potato (about 5 ounces) peeled, cut into 1/2" cubes
1 (14-ounce) can coconut milk
2 (2") strips lime zest
1/2 cup unsweetened coconut flakes
2 tablespoons fresh lime juice
Diced avocado, cilantro leaves with tender stems, and lime wedges (for serving)

Steps:

  • Melt coconut oil over medium heat in a large pot. Add onion, ginger, tumeric, and 1/2 tsp. salt and cook, stirring occasionally, until onion is translucent, 8-10 minutes.
  • Break corn cobs in half and add to pot along with corn kernels, potato, coconut milk, lime zest, and 1 1/2 cups water. Bring to a boil over high heat, then reduce to a simmer and cook until potato is tender, 20-25 minutes.
  • Discard corn cobs and lime zest, then transfer soup to a blender. Add 1/2 tsp. salt and purée until smooth. Let cool to room temperature. Transfer to a large bowl and chill, covered, at least 2 hours.
  • Meanwhile, preheat oven to 350°F. Spread coconut flakes on a small rimmed baking sheet and toast, tossing occasionally, until golden, about 5 minutes; transfer to a plate.
  • Stir lime juice into soup and adjust seasonings, thinning with water, if needed. Divide soup among bowls, then top with toasted coconut, avocado, and cilantro. Serve with lime wedges alongside.
  • Do Ahead
  • Soup can be made 4 days ahead. Cover and chill.

1 1/2 cups canned coconut milk
1 1/2 cups veggie broth or water
1 medium tomato, chopped (about ½ cup)
1 tablespoon minced fresh ginger
1 serrano pepper, chopped optional
2 cloves garlic, chopped
½ cup lime juice (about 4-6 limes)
1 tablespoon olive oil
1-1 1/2 teaspoons yellow curry powder
1/2 teaspoon salt
1/4 cup fresh chopped cilantro
2 tablespoons chopped green onions
1 red bell pepper, sliced into thin strips
corn kernels from 1 cob of fresh, raw corn
1 carrot, shredded or spiralized
1 cup snow peas, sliced into thin strips

Steps:

  • Grab your blender and pour in your coconut milk and veggie broth. Add the tomato, ginger, serrano if using, garlic, lime juice, olive oil, salt, and curry powder then blend until smooth and creamy. Taste and add the extra 1/2 teaspoon of curry powder if you think it needs it. Add the chopped cilantro and and green onion and pulse until they are kinda minced up in the broth. You can stick this broth in the fridge and let it chill for a couple of hours or serve it right away. Up to you and whateverthefuck you've got going on in your life. When you are ready to go, pour into serving containers and then add all the chopped veggies and corn to each bowl. Top with some more cilantro and green onions and serve right away. The soup is best the first 2 days afters its made.

2 stalks lemongrass
3 quarts vegetable or chicken stock
1 (2-inch) piece ginger, roughly chopped
5 cups butternut squash, peeled, seeded and cubed
1 (14.5-ounce) can coconut milk, light or regular
2 limes, juiced
Salt, as needed
1/2 cup cilantro leaves
1/2 cup cashews, toasted and crumbled
1/2 cup unsweetened, shredded coconut

Steps:

  • On a steady work surface, using a mallet or the back of a sturdy knife, bruise the root end of the lemongrass. In a large pot over high heat, add the lemongrass, vegetable stock, and ginger and bring to a boil. Reduce the heat and simmer for 15 to 20 minutes. Strain the stock and return it to the pot. Add the butternut squash to the stock and simmer until the squash is fully cooked and begins to break down, about 1 hour. Remove from the heat and cool. Add the coconut milk, blending the mixture in batches until smooth. Season with lime juice and salt, and chill. To serve, garnish the soup with cilantro, cashews and coconut.

5 cups milk
2 2/3 cups unsweetened dry shredded coconut
1 2/3 cups coconut milk
1 2/3 cups chicken stock (preferably fresh)
1 cup heavy cream (or half and half)
1/2 teaspoon salt
1/2 teaspoon white pepper
1 teaspoon sugar
1 small bunch cilantro

Steps:

  • Pour the milk in to a large saucepan. Bring to a boil, stir in the coconut, lower the heat and let simmer for 30 minutes.
  • Spoon the mixture into a food processor and process until smooth. This may take a while--up to 5 minutes--so pause frequently and scrape down the sides of the bowl.
  • Rinse the pan to remove any coconut that remains, pour in the processed mixture and add the coconut milk.
  • Stir in the chicken stock (homemade if possible) cream, salt, pepper, and sugar.
  • Bring the mixture to a boil, stirring occasionally then lower the heat and cook for 10 minutes.
  • Reserve a few cilantro leaves to garnish, then chop the rest finely and stir into the soup.
  • Pour the soup into a large bowl, let it cool, then cover and put into the refrigerator until chilled.
  • Just before serving taste the soup and adjust the seasoning as chilling will alter the taste.
  • Serve in chilled bowls, garnished with cilantro leaves.

1 jalapeno chile, seeded and chopped
3 cups fresh corn kernels
1 can (14 ounces) light coconut milk
2 1/2 cups water
Salt and pepper
1 tablespoon fresh lime juice
Fresh corn kernels, for garnish

Steps:

  • Bring chile, corn kernels, coconut milk, and water to a boil in a medium saucepan. Reduce heat, and simmer until corn is tender, about 20 minutes.
  • Filling a blender halfway and covering with a kitchen towel, puree soup in batches. Strain through a coarse sieve into a large bowl; discard solids. Season with salt and pepper.
  • Chill soup at least 3 hours or up to overnight. Stir in lime juice. Garnish each serving with fresh corn kernels if desired, and season with pepper.
