- Break corn cobs in half and add to pot along with corn kernels, potato, coconut milk, lime zest, and 1 1/2 cups water. Bring to a boil over high heat, then reduce to a simmer and cook until potato is tender, 20-25 minutes.

- Pour the milk in to a large saucepan. Bring to a boil, stir in the coconut, lower the heat and let simmer for 30 minutes.

- Stir in the chicken stock (homemade if possible) cream, salt, pepper, and sugar.
- Bring the mixture to a boil, stirring occasionally then lower the heat and cook for 10 minutes.
- Reserve a few cilantro leaves to garnish, then chop the rest finely and stir into the soup.
- Pour the soup into a large bowl, let it cool, then cover and put into the refrigerator until chilled.
- Just before serving taste the soup and adjust the seasoning as chilling will alter the taste.
- Serve in chilled bowls, garnished with cilantro leaves.

CHILLED COCONUT LEMONGRASS SOUP WITH WARM PINEAPPLE DUMPLING
Steps:
- Heat the simple syrup with the ginger, kaffir lime and lemongrass until just simmering. Do not boil or reduce syrup. Remove from heat, and allow mixture to steep for at least 1 hour. Stir in the coconut milk and heavy cream, and strain through a chinois. Chill soup and serve with dumplings, pineapple lime bombe, tropical fruit salsa and basil oil.
- In a medium skillet, caramelize 3 ounces of sugar until golden brown. Add the diced pineapple and vanilla beans and stir until sugar dissolves and pineapple is softened. Set pineapple aside to cool. In the bowl of an electric mixer, beat the cream cheese until light and fluffy. Add 1-ounce sugar, pinch of salt and egg and mix until just combined. Fold in pineapple mixture and chill until firm. Fill wrappers with 2 tablespoons of the filling and chill until ready to fry. Heat oil to 350 degrees F and fry dumplings until golden brown. Drain dumplings well before serving. Yield: 1 to 2 dozen
- Whip egg yolks and 1/2 of the sugar and salt until tripled in volume. Fold in the pineapple puree. Whip the egg whites on medium speed until foamy. Increase the speed of the mixer to high and add the remaining sugar. Whip to stiff peaks and fold into the yolk mixture. Fold in whipped cream, lime zest and lime juice. Place in a large container or small containers and freeze until set. Serve frozen.
- To make the pineapple puree, peel, core and chop 1 pound 4 ounces of fresh pineapple into medium chunks. Toss with 3 ounces of sugar and cook until fruit is soft and sugar is just starting to caramelize. Puree in a food processor until smooth. Chill and reserve for use in bombes.
- Dice fruit and toss with minced ginger.
- Blanch basil and shock with ice water. Drain and squeeze water from basil. Place basil in blender; add oil slowly to form green oil. Strain through cheesecloth.
CHILLED BUTTERNUT SQUASH AND COCONUT SOUP
Steps:
- On a steady work surface, using a mallet or the back of a sturdy knife, bruise the root end of the lemongrass. In a large pot over high heat, add the lemongrass, vegetable stock, and ginger and bring to a boil. Reduce the heat and simmer for 15 to 20 minutes. Strain the stock and return it to the pot. Add the butternut squash to the stock and simmer until the squash is fully cooked and begins to break down, about 1 hour. Remove from the heat and cool. Add the coconut milk, blending the mixture in batches until smooth. Season with lime juice and salt, and chill. To serve, garnish the soup with cilantro, cashews and coconut.
CHILLED COCONUT SUMMER SOUP
Steps:
- Grab your blender and pour in your coconut milk and veggie broth. Add the tomato, ginger, serrano if using, garlic, lime juice, olive oil, salt, and curry powder then blend until smooth and creamy. Taste and add the extra 1/2 teaspoon of curry powder if you think it needs it. Add the chopped cilantro and and green onion and pulse until they are kinda minced up in the broth. You can stick this broth in the fridge and let it chill for a couple of hours or serve it right away. Up to you and whateverthefuck you've got going on in your life. When you are ready to go, pour into serving containers and then add all the chopped veggies and corn to each bowl. Top with some more cilantro and green onions and serve right away. The soup is best the first 2 days afters its made.

From foodal.com

- Cucumber. This chilled cucumber soup is one of my favorite recipes (so far!) on Foodal. It’s creamy and refreshing, made with fresh herbs and vegetables, lemon juice for brightness, and a yogurt base.
- Creamy Asparagus. Though I was a chilled soup skeptic for awhile after trying gazpacho for the first time in my tweens (before the word “tween” was a thing…) at a fancy New York restaurant, my first sip of a chilled asparagus variety very similar to this one was pure bliss.
- Roasted Red Pepper. If you love roasted peppers, especially the homemade variety, then you have to try this. After roasting, peeling, and removing the seeds from a few red bell peppers, onion, garlic, and sage are combined with spices and vegetable broth.
- Traditional Gazpacho. As promised, this recipe is a summertime go-to for some, and a somewhat confusing reminder of salsa to others. Depending on which camp you fall into, you either love it or hate it.
- Green Pea Gazpacho. … Why not give this cold green pea soup a try? Sure, tomatoes are the main ingredient in most soups of this variety, but that rule certainly isn’t set in stone.
- Bloody Mary. Made with four different types of tomatoes, shallots, and the classic bloody mary spices and other accoutrements, this is more of a meal (or at least an appetizer) than a cocktail.
- Creamy Avocado Coconut. First, I’ve got to recommend another Foodal recipe. Not only is it creamy, cooling, and packed with healthy fats and nutrients from the avocado and fresh vegetables, it’s also made with a light and sweet coconut base, the perfect dairy-free option.
- Avocado Cucumber. In this entry on the Catching Seeds blog, Laurel Cornwell asks: chilled soup, or blended salad? Regardless of your answer, there’s no doubt about it: this recipe is sure to whet your appetite, and you can whip up a batch in minutes.
- Cucumber, Avocado & Shrimp. Take your shrimp cocktail to the next level with this chilled soup from Jessica Pinney at Cooking With Janica. The shrimp that top the dish are marinated in paprika, honey, and lemon juice before quickly pan frying.
- Strawberry Coconut. Another quick option, after just five minutes in the blender you can whip together this sweet recipe from Jen Stately at Carlsbad Cravings.

- Heat olive oil in a large sauce pan set over medium-low heat. Add the onion and jalapeno pepper, and sweat (cook without browning) until the onion is soft and translucent, 7 to 10 minutes. Add the garlic and cook for additional 2 minutes. Stir in the mint. Let cool slightly.
- Place the avocados in a food processor or heavy-duty blender, along with 1½ cups vegetable broth. Pulse until finely chopped.

- Slice the mangos in half around the large seed in the middle. Cross hatch the fruit, scoop it out with a spoon, and put into the bowl of a food processor fitted with a blade.
- Add the remaining ingredients to the bowl, and whirl like crazy until smooth. If you don't have a food processor, I'm sure a blender would work fine too.
