CHICKEN TACO SALAD

1 tablespoon vegetable oil
1 small onion, sliced
1 tablespoon chili powder
1 1/2 teaspoons ground cumin
2 cups shredded rotisserie chicken
1 15-ounce can black beans, drained and rinsed
1 cup low-sodium chicken broth
Juice of 1/2 lime, plus wedges for serving
Kosher salt and freshly ground pepper
1 head romaine lettuce, shredded

Steps:

  • Shredded pepper Jack cheese, salsa, guacamole, sour cream, sliced scallions and fried tortilla strips, for topping
  • Heat 1 tablespoon vegetable oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Stir in the chili powder and cumin and cook for 30 seconds. Add the chicken, black beans and chicken broth, then stir, bring to a simmer and cook until thickened, about 5 minutes. Stir in the lime juice and season with salt and pepper.
  • Fill 4 serving bowls with the romaine, then add the chicken mixture. Top with cheese, salsa, guacamole, sour cream, scallions and tortilla strips. Serve with lime wedges.

½ cup chopped onion
3 stalks celery, chopped
1 (15 ounce) can chili
1 (14.5 ounce) can peeled and diced tomatoes with juice
¼ cup taco sauce
1 (15 ounce) can corn
1 (8 ounce) package egg noodles
¼ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium high heat, saute the beef and onion for 5 to 10 minutes, or until meat is browned and onion is tender; drain fat. Add the celery, chili, tomatoes, taco sauce and corn. Heat thoroughly, reduce heat to low and allow to simmer.
  • Meanwhile, prepare the noodles according to package directions. When cooked, place them in a 9x13 inch baking dish. Pour the meat mixture over the noodles, stirring well. Top with the cheese.
  • Bake at 350 degrees F (175 degrees C) for 20 minutes, or until cheese is completely melted and bubbly.

1 tablespoon buttery spread
½ cup shredded cheese, or more to taste
½ cup sour cream, or more to taste

Steps:

  • Place a heavy pot over medium heat. Add onions and ground beef and cook and stir until beef is browned and crumbled and onions begin to turn translucent, about 5 minutes. Drain grease from pot.
  • Pour in beef broth; add beans, tomatoes, corn and Knorr® Fiesta Sides - Taco Rice. Stir in 1 buttery spread. Bring mixture to a boil. Reduce heat, cover, and simmer until rice is tender, about 7 minutes.
  • Remove pot from heat; let pot stand at least 2 minutes. Stir. Serve topped with shredded cheese and sour cream.

8 cups torn romaine

1 envelope ranch salad dressing mix
1 envelope taco seasoning

1 can (4 ounces) chopped green chiles
2 cans (14-1/2 ounces each) diced tomatoes, undrained

Steps:

  • In a large skillet, cook and crumble beef over medium-high heat until no longer pink, 8-10 minutes. Using a slotted spoon, transfer beef to a 5-qt. slow cooker., Rinse and drain beans and hominy. Add to beef, along with canned tomatoes and green chilies, tomato sauce, onion, the dressing and seasoning mixes and pepper. Puree green chilies and remaining diced tomatoes in a covered blender until smooth; stir into beef mixture., Cook, covered, on low until flavors are blended, 6-8 hours. 1 (1.25 ounce) package taco seasoning mix
1 (16 ounce) can chili beans
1 (16 ounce) bottle French dressing
1 head iceberg lettuce
1 (14.5 ounce) package tortilla chips
2 cups shredded Cheddar cheese
1 cup chopped tomatoes
4 tablespoons sour cream
½ cup prepared salsa

Steps:

  • In a large skillet over medium-high heat, brown the ground beef and drain excess fat. Stir in the taco seasoning, chili beans and French-style dressing. Fill the dressing bottle 2/3 full of water and add to the skillet. Bring to a boil, reduce heat and simmer for 15 minutes.

If you want to be an overachiever serve this in a tortilla bowl (I say this lovingly since I'm lazy and secretly wish I did this) or just put it on a plate. We use all vegan alternatives for the ingredients (vegetarian salsa, vegan sour cream, cheese, etc.) but I purposely chose to omit them from the recipe to make it less scary to non-vegans!

1 package corn tortilla
vegetable oil
shredded lettuce

  • Brown hamburger.
  • Add the chili and mix well and heat thru.
  • In another small pan, add enough veg.
  • oil just to cover bottom.
  • Fry tortillas until soft, but slightly stiff around the edges.
