CHILI SAUCE
Chili Sauce recipe from "Joy of Cooking". Posted in reply to a request. (NOTE: I use my blender as a measuring pitcher. I scald and peel tomatoes until I reach the Qt. line, then add pepper and onion, and puree all together. I keep a tally sheet, because it's easy to lose track when dealing with a large quantity. This method works well for me.)

Steps:
- Use a large porcelain or stainless kettle.
- Scald, peel and quarter tomatoes.
- Put peppers, pepper pods, and onions through a food grinder.
- Add remaining ingredients and simmer SLOWLY until thickened, about 3 hours.
- Stir frequently to prevent scorching, and do not scrape bottom of pan.
- Add salt if needed.
- Put sauce in sterilized pint jars and process in a water bath for 10 minutes, 20 minutes for quarts.
- TIP: I mix this in my porcelain canning kettle, then separate it into two heavy stainless steel pans to cook. There is less chance of scorching when cooking a smaller quantity, and a heavier-bottomed pan helps, too.

FRESH TOMATO CHILI SAUCE
This is a sweet chili sauce made according to an old family recipe. It is great on hamburgers, and pot roast. If you don't can the sauce in jars, it can be refrigerated.

Steps:
- Place the tomatoes in a large pot over medium heat, and simmer 1 hour. Skim off any excess liquid or foam. Stir in the chile peppers, bell peppers, onion, vinegar, lime juice, white sugar, brown sugar, and desired amount of salt. Reduce heat to low, and simmer 3 to 5 hours until liquid reduces and thickens. Adjust seasonings to taste.
- Remove chili sauce from heat, and skim off any foam. Pour into hot, sterilized jars, leaving 1/4 inch headroom. Adjust lids. Process for 10 minutes in a boiling-water bath.

- In a stock pot, combine the tomatoes, onions, peppers, sugar and salt; simmer, uncovered, for 45 minutes. , Place the pickling spices, celery seed and mustard seed on a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag; add to tomato mixture. Cook for 45 minutes or until very thick, stirring frequently. , Add vinegar; cook to desired thickness. Discard spice bag. Carefully ladle hot mixture into hot pint jars, leaving 1/2-in. headspace. Adjust caps. Process for 15 minutes in a boiling-water canner.

CHILI SAUCE
This is Top Secret's version of Heinz's Premium Chili Sauce. I use it all the time and usually have to run to the store to buy it for a recipe. I am posting this so I won't have to run to the store all the time. Per Todd Wilbur: you can make this into Heinz Cocktail Sauce by stirring in 2 teaspoons of prepared horseradish when the sauce has cooled.

EASY CHILI SAUCE
This makes a nice small batch, and it's easy to make more! Particularly tasty served with a meat-and-potatoes dinner. And if you heat it up with hot peppers or more cayenne, it can pass as a salsa.

- Use large tins (28-ounce) of plum tomatoes and do NOT drain.
- Combine all ingredients in a large heavy pot.
- Bring to a boil, then reduce heat to a simmer and cook, uncovered, until thick-- about 90 minutes.
- Tomatoes will break apart as they cook, although you can help this along by pressing them against the side of the pot with a wooden spoon.
- Stir chili sauce often as it cooks.
- Pour chili sauce into hot, sterilized jars and seal.
- Process in a hot water bath if you wish, but I store these jars in the back of my fridge-- they don't take up too much room because they seem to be eaten quickly!
- Recipe makes seven cups; I always do up 2 pint jars for my family then put the rest in 1-cup size jars to give away.

THE CHILI SAUCE RECIPE
I have not yet tried this, but it is from an overdue library book (From Our Mothers' Kitchens) and I want to return the book tomorrow, so need to get the recipes I want to try copied down, pronto. The author of the book, Anita Stewart, says this recipe has been perfected over the years by herself and her mother. She says this is "the ultimate recipe" for chili sauce. When late summer rolls around this year, I'll definitely be trying this one! The prep time includes the time needed to let the tomato and onion mixture stand.

Steps:
- Peel and slice tomatoes into very large bowl; add onions and salt and stir gently.
- Cover bowl and let stand for a minimum of 8 hours; overnight is best.
- Drain thoroughly and place in a large, heavy saucepan with a lid.
- Stir in celery, red peppers, pickling spice bundle, red pepper flakes and vinegar, then cover; over medium heat, bring this to a boil.
- Once boiling, uncover and simmer over low heat until thickened, at least two hours; stir often to prevent sticking.
- Add brown sugar and stir well; taste for sweetness (if your tomatoes are very tart or acidic, you may need a little more brown sugar).
- Simmer mixture until thickened again, about 25 minutes.
- Remove spice bundle in cheesecloth bag and discard.
- Ladle mixture into hot sterilized 2-cup jars, leaving 1/2-inch headspace; seal jars.
- Process in a boiling water bath for 10 minutes.
- Let cool at room temperature before refrigerating, or storing in a cool dark place for up to one year.

GREEN TOMATO CHILI SAUCE FOR CANNING

- Place green tomatoes, bell peppers, onions and chilis in food processor and process till smooth. Place in a very large non-reactive stock pot and cook for 3 hours to reduce.
- Hot pack in quarts or pints and water bath process for 15 minutes.

GRANDMOTHER'S CHILI SAUCE
Pamela R. says this is an old family recipe passed down from her southern grandmother. It is a traditional old south condiment served with all kinds of meat (especially great on top of meatloaf). A good homemade chili sauce has chunks of tomatoes and a rich burgundy color.This is a medium spice level, but you can add more or leave out entirely. Traditionally it's used with fresh tomatoes, but the recipe was converted to use canned tomatoes years ago. You can store this in the refrigerator for several weeks. I found this very quick and easy to make and the flavors are outstanding. Serving size is estimated. YUM!

- Place 7 clean mason jars on a rack in a boiling water canner; cover jars with water and heat to a simmer. Set screw bands aside. Heat the sealing discs in hot water. Keep jars and sealing discs hot until ready to use.
- The most efficient way to peel tomatoes is to cut a cross into the bottom of the tomato, then place in a pot of boiling water for about a minute until you see the skin start to wrinkle.
- Combine tomatoes, onions, green pepper, celery, red pepper, jalapeño pepper, vinegar, sugar and salt in a large stainless steel saucepan.
- Ladle sauce into a hot jar to within 1/2 inch of top of jar (headspace). Using nonmetallic utensil, remove air bubbles and adjust headspace, if required, by adding more chili. Wipe jar rim removing any food residue. Centre hot sealing disc on clean jar rim. Screw band down until resistance is met, then increase to fingertip tight. Return filled jar to rack in canner. Repeat for remaining chili.
