CHILI SAUCE

Chili Sauce image

Classic, old fashioned sweet and spicy chili sauce. PERFECT with potato pancakes, chicken and pork.

Provided by Karen Bertelsen

Categories     Canning/Preserves

Number Of Ingredients 15

18 quarts tomatoes
2 bunches celery
3 quarts banana peppers
10 red peppers
12 onions
6 cloves garlic
1/4 cup coarse salt
4 cups vinegar
4 peaches
2.5 lbs brown sugar
2 tsps. cayenne pepper
3 tsps. cloves
3 tsps. cinnamon
2 whole cinnamon sticks
10 whole cloves

Steps:

  • Peel tomatoes by placing them in boiling water for 30 seconds and then plunging them into cold water. The skin will slide right off. If it doesn't, plunge them in the hot water again.
  • Wrap all the whole spices in a little cheesecloth bag.
  • Rough chop the remaining ingredients. Don't worry about it being pretty, just chop them up into pieces between 1/4" - 1/2".
  • Put all the ingredients into a large stock pot and bring to a boil. Once boiling, reduce heat to a simmer and simmer until thick and reduced by 1/3rd. This will take many hours. 5-10 hours depending on the type of tomatoes you use.
  • Taste as you go! If after 3 hours you find you like the taste of it, then remove the spice bag and continue to simmer until thickened. I always leave my spice bag in until the end though.

CHILI SAUCE

Chili Sauce image

This is Top Secret's version of Heinz's Premium Chili Sauce. I use it all the time and usually have to run to the store to buy it for a recipe. I am posting this so I won't have to run to the store all the time. Per Todd Wilbur: you can make this into Heinz Cocktail Sauce by stirring in 2 teaspoons of prepared horseradish when the sauce has cooled.

HOMEMADE CHILLI SAUCE

Homemade chilli sauce image

This homemade sriracha recipe blends plenty of hot red chillies and garlic with a touch of sugar, salt and vinegar for a sweet, tart, spicy taste sensation!

Provided by Nancy Anne Harbord

Number Of Ingredients 6

400 g red bird's eye chillies
10 fat cloves garlic
200 g water
70 g apple cider vinegar
60 g raw sugar
1 tbsp fine sea salt

Steps:

  • Trim the stalks of the chillies and deseed - slice each chilli down its length, open up the chilli and scrape out the seeds with a teaspoon. It's important that you wear gloves for this task! The build up of chilli juice on your hands from these quantities will make your hands burn for days - DAYS!
  • Add all the ingredients except the sugar and salt to a high powered blender or food processor and blend until smooth. If your food processor isn't quite up to par, don't worry! You can sieve out any larger pieces after cooking.
  • Add the chilli mixture, the sugar and salt to a large saucepan and bring to the boil. Reduce the heat and simmer gently, stirring fairly regularly to stop the bottom sticking and burning. The sauce is done when the mixture is reduced and thickened, about 20 minutes of simmering. You can decide now how thick you want your sauce to be - add a little extra water if you want to thin it, or simmer a little longer if you want it thicker. Taste the mixture - this is quite a hard one to sample as it's pretty spicy and your palate will become blown out after a few tastes, but someone's got to do it! I added a little extra salt (1/2 teaspoon) and vinegar (1 teaspoon) for my tastes, but yours will be different. You might want some extra sugar, but for me the chillies were pretty sweet themselves.
  • Fill the bottle or jar you want to store your sauce in with boiling water and leave for 10 minutes. If you have used a high-powered blender, just decant the sauce into this clean bottle (a funnel is very useful here). If your blender wasn't quite able to purée the sauce and it still looks a little chunky, press it through a fine mesh sieve before bottling. Store in the fridge - it will last for several months.

"Spicy, tangy, sweet tomato sauce condiment for sandwiches and salad dressings."

Provided by Judy Purcell

Categories     Sauce

Time 10m

Number Of Ingredients 10

8 ounces tomato sauce
2 tablespoons tomato paste
1/4 cup minced sweet onion
1/4 cup coconut palm sugar (, or 3 tablespoons refined sugar)
2 tablespoons apple cider vinegar
2 teaspoons chipotle Tabasco (, or 1/2 teaspoon chili powder)
1 teaspoon Worcestershire sauce
1 teaspoon smoked paprika
1 clove minced garlic
Salt and freshly ground pepper

Steps:

  • Add all the ingredients to a saucepan, stir to combine, and simmer for 5-7 minutes to meld flavors.
  • Remove from heat and puree with an immersion blender right in the pot or allow to cool and transfer to a blender. Blending will create a smoother texture and completely incorporate flavors. Taste and adjust seasoning, adding salt or pepper, if needed (this will depend on the amount of salt in the tomato sauce).
  • Cool completely and taste again to adjust seasoning further if needed. Transfer to a jar with a lid and refrigerate for up to 2 weeks.

Provided by Dini from The Flavor Bender

Categories     Appetizer     Sauces & Dips

Time 15m

Number Of Ingredients 9

½ cup rice vinegar (unseasonsed)
3/4 cup water
4 oz white sugar ((1/2 cup + 2 tbsp))
5 garlic cloves (chopped finely)
1 tbsp soy sauce (gluten free soy sauce or salt if you'd like to keep the recipe gluten free or soy free, OR 1/2 tbsp fish sauce)
1/2 tsp cayenne pepper (optional - halve it or leave it out if you like it less spicy)
2.8 oz sambal oelek (a generous 2 1/2 tbsp (please see recipe notes))
4 tsp cornflour / cornstarch ((see recipe notes))
2 tbsp water

Steps:

  • Add the vinegar, water, sugar, garlic cloves, soy sauce, and cayenne pepper (if using) in to a non-stick pan. If you're using dried chili instead of sambal oelek, add it to the pan at the same time.
  • Heat over medium heat while stirring, to dissolve the sugar. Increase the heat to medium-high and bring it to a boil. Let it simmer for about 2 minutes.
  • Add the sambal oelek and mix through. Let it cook for a few minutes until it's slightly thickened (2- 5 minutes)
  • Mix the cornstarch and water into a smooth slurry and add this to the sauce as well.
  • While stirring frequently (to prevent the sauce from burning at the bottom), simmer the sauce for a further 2 - 5 minutes or until it reaches a desired thickness. Remember, the sauce thickens as it cools as well. If it thickens too much, add a little extra water to thin it out. If you're using Clear Jel, the sauce will thicken mostly only as it cools down.
  • Pour into glass jars with air-tight lids (OR heated and sterilized jars to store for longer).
  • Cool to room temperature and store in the fridge.

HOMEMADE SWEET CHILI SAUCE

Homemade Sweet Chili Sauce image

Step by step guide to making your own home made sweet country style chili sauce. This recipe is three generations old and oh so tasty!

Provided by Steve Cylka

Categories     condiments

Number Of Ingredients 7

11 quarts tomatoes ((44 cups))
3 cups green peppers (, diced)
4 cups onions (, diced)
1 cup vinegar
1/4 cup pickling spice
8 cups sugar
4 tbsp dried chili peppers

Steps:

  • To prepare the tomatoes you need to remove the skin and chop or crush them. Fill a large pot 3/4 full and heat the water so it is almost boiling. Drop a bunch of tomatoes in the pot, about 10 at a time. Leave in the pot for about 5 minutes or so. Then transfer them to a sink filled with cold water. After the tomatoes are cool (5 minutes or so), take a knife and slit the skin. The tomato skin should peel off easily. Once, peeled, they can be chopped or crushed in a food grinder. Do this with all the tomatoes.
  • In a pot large enough, add all the ingredients. Bring to a boil and low to a very low boil. Stir it regularly. Cook the sauce for about 4 hours. The sauce should reduce in size and thicken. Ensure that the sauce is not sticking to the bottom of the pot and burning.
  • Pour the chili sauce in sterilized jars, seal and process them in a hot water bath for 15 minutes for 250ml jars, 20 minutes for 500ml jars and 30 minutes for 1 litre jars.

EASY CHILI SAUCE

Easy Chili Sauce image

Provided by Mormon.Cook

Number Of Ingredients 0

Steps:

  • Scald, then peel tomatoes; cut in quarters, or eighths if tomatoes are large. (We like to remove at least part of the seeds at this point, but this is the tedious part of the preparation, and it isn't necessary.) Remove seeds and veins from peppers and grind with onions fairly fine. Mix peppers and onions with the tomatoes in a large stainless steel or enamel bowl. (Don't use aluminum.) Sprinkle with salt. Let stand overnight or several hours. Stir well; then drain off most of the juice through a colander. Put drained tomato mixture in large preserving kettle or 6-quart Dutch oven. Add remaining ingredients. Bring to boil over medium heat, stirring occasionally, and boil gently for about 30 minutes or to desired thickness. Stir often so that mixture won't stick and burn. Pour hot sauce into 1-pint canning jars; seal and process in boiling water bath or steam canner or steamer for 5 minutes. Note: Eight green peppers may be used, but the color of the finished product won't be as nice as with half red peppers.

  • Hot Sauce + Honey. In a pinch, this is the best option to get a very similar flavor and texture. All you need to do is mix about 1 ½ teaspoon of hot sauce with one tablespoon of honey.
  • Plum Sauce + Hot Sauce. This choice seems a bit unconventional and could result in a different color, but it works wonders in terms of flavor. Mix a tablespoon of plum sauce with one teaspoon of the hot sauce of your choice.
  • Chopped Red Bell Peppers + Red Pepper Flakes + Honey. If you want to mimic the appearance of sweet chili sauce, then a good option is to use red bell peppers and red pepper flakes.
  • Hoisin Sauce + Red Pepper Flakes + Rice Vinegar. If you like hoisin sauce, then this is a great opportunity to use it. Like a plum sauce, hoisin sauce is sweet and dark in color.
  • Apple Cider Vinegar + Soy Sauce + Red Pepper Flakes + Honey. This is a healthy version of sweet chili sauce that you can make at home in only a few steps.
