1 small onion (finely chopped)
1/2 red bell pepper (finely chopped)
3/4 cup panko
1/2 cup whole milk
1 large egg (lightly beaten)
1/4 cup freshly grated Parmesan cheese
1/2 cup chili sauce (such as Heinz)
1 tablespoon Worcestershire sauce
1 teaspoon salt
Freshly ground black pepper (to taste)
1 1/2 pounds ground chuck
1/2 cup chili sauce (or the rest of the bottle)
1 teaspoon Worcestershire sauce
1 tablespoon brown sugar
1/2 teaspoon chili powder

Steps:

  • Preheat oven to 350 degrees. In a large bowl, combine all ingredients except the beef and mix well. Add beef and combine well.
  • Turn mixture into a 9 x 5-inch loaf pan and pat down to form a nice loaf shape.
  • Bake 40 minutes. Brush glaze ingredients over meatloaf and bake another 20-25 minutes or until cooked through to 165 degrees.
  • Let rest 10 minutes before slicing.
  • Combine glaze ingredients in a small bowl.

1/2 cup milk
4 slices white sandwich bread, torn into pieces
1 1/2 pounds ground sirloin
1 1/2 pounds ground pork
2 small onions, finely chopped
6 garlic cloves, minced
1/2 cup chili sauce, plus 1/4 cup for glaze
1 cup chopped fresh parsley
1/2 cup grated Parmesan cheese
2 large eggs, lightly beaten
Coarse salt and ground pepper

Steps:

  • Preheat oven to 350 degrees, with rack in center. In a large bowl, pour milk over bread; let soak, about 30 seconds. Add sirloin, pork, onion, garlic, 1/2 cup chili sauce, parsley, Parmesan, eggs, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper. Using your hands, mix until combined; do not overmix or meatloaf will be dense.
  • Divide mixture in half. Gently pat each half into a log, and place each log in an 8 1/2-by-4 1/2-inch loaf pan. Do not press down or into corners.
  • Bake 50 minutes. Brush tops of loaves with remaining 1/4 cup chili sauce; continue cooking until juices run clear and an instant-read thermometer inserted into thickest part registers 160 degrees, about 10 minutes.
  • Remove from oven; let rest 5 minutes. Turn loaves out of pans; slice each into eight 3/4-inch-thick slices.

1 large onion, finely chopped
1/2 cup seasoned bread crumbs
1 small green pepper, chopped
2 large eggs, lightly beaten

2 tablespoons spicy brown mustard
3 to 4 garlic cloves, minced
3/4 teaspoon salt
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
2 pounds lean ground beef (90% lean)
Additional chili sauce, optional

Steps:

  • Cut four 20x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on bottom and up sides of a 5-qt. slow cooker. Coat strips with cooking spray., In a large bowl, combine the first 10 ingredients. Add beef; mix lightly but thoroughly. Shape into a 9-in. round loaf. Place loaf in center of strips in slow cooker., Cook, covered, on low 3-4 hours or until a thermometer reads at least 160°. If desired, spoon additional chili sauce over meat loaf; let stand 10 minutes. Using foil strips as handles, remove meat loaf to a platter., Freeze option: Cover and freeze leftover meat loaf slices in a greased 2-qt. shallow baking dish. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. 3/4 cup quick-cooking oats

Be careful though, the way that this is written it's very spicy. (Well at least to me anyway :)). I let this simmer for about 30 minutes for a better flavor. 1/4 cup chili powder (I used Chili Seasoning Mix)
1 (15 ounce) can undrained pinto beans
1 (14 1/2 ounce) can undrained diced tomatoes
1 cup sharp cheddar cheese, divided (optional)

Steps:

  • In a medium sized saucepan, combine beans, tomatoes, and chili seasoning.
  • Heat and stir until seasonings are well blended.

1 cup drained red kidney beans

  • In a large bowl, beat egg with a fork.

10 rye cocktail bread, squares broken into small pieces

  • Make foil handles for slow cooker. Do this by cutting three 18x3 inch strips of heavy duty foil paper; place in bottom of slow cooker in criss-cross strips to resemble bicycle spokes on a wheel.
  • Spray foil paper in slow cooker with cooking spray.

1 cup chicken-flavored stuffing mix
½ cup milk
1 ½ (4 ounce) cans chopped green chilies
½ cup diced yellow onion
1 large egg
1 tablespoon jalapeno ketchup
1 tablespoon Worcestershire sauce
1 teaspoon dried parsley
¾ teaspoon salt
½ teaspoon garlic powder
¼ teaspoon black pepper
½ cup jalapeno ketchup
2 tablespoons brown sugar
1 tablespoon red wine vinegar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix ground beef, stuffing mix, milk, green chiles, onion, egg, jalapeno ketchup, Worcestershire sauce, parsley, salt, garlic powder, and pepper together for meatloaf in a bowl until thoroughly combined. Form into a loaf shape and place in a baking dish.

2/3 cup beef broth
2 (15-ounce) cans black beans, rinsed and drained

Steps:

  • Gather the ingredients.
  • In large pot heat olive oil over medium heat. Add onion and garlic; cook and stir for 5 minutes. Add jalapeño pepper; cook and stir for 3 minutes.
