2 pounds boneless skinless chicken tenders
12 pieces thick cut bacon
1/4 cup light soy sauce
2 Tablespoons chili paste
4 Tablespoons honey
2 Tablespoons dark brown sugar
2 Tablespoons, minced garlic
2 Tablespoons lime juice
2 Tablespoons sesame oil
2 Tablespoons cornstarch
12 wood skewers, that have been soaked for at least 20 minutes
Lime wedges for garnishing (optional)

Steps:

  • Preheat oven to 375 degreesInsert skewers through each chicken tender vertically, and wrap with a piece of bacon. Place on a rimmed baking sheet lined with parchment paper.Pour soy sauce, chili paste, honey, brown sugar, mince garlic, lime juice, sesame oil, and cornstarch into a medium saucepan on stove over medium heat and stir to combine. Bring to a boil stirring often. Remove from heat and baste chicken with sauce.Cook chicken for 30 minutes, turning halfway through and basting opposite side.Set oven on high broil, and broil for 2-3 minutes. Garnish with limes and baste with more sauce if desired.

Steps:

  • Prepare grill for medium-high heat. Whisk brown sugar, vinegar, chili paste, fish sauce, Sriracha, and ginger in a large bowl. Add chicken and toss to coat. Thread 4 or 5 chicken pieces onto each skewer.
  • Transfer marinade to a small saucepan. Bring to a boil, reduce heat, and simmer until reduced by half (about 1 cup), 7-10 minutes.
  • Grill chicken, turning and basting often with reduced marinade, until cooked through, 8-10 minutes.

This recipe comes from Edward Khechemyan, the chef of Adana in Los Angeles. The food is not easily categorized. He learned to cook from his father, but given that that man was from Iran, that his upbringing was Armenian-American and that the Russian influence was strong everywhere, the menu is a hodgepodge in the best sense of the word, boasting of innumerable kebabs and more than a few intriguing salads and dishes of beans, and of rice and other grains. In his kitchen, Khechemyan moves quickly, and within 30 minutes, we had done four kebabs. The marinades are simple (he uses a lot of mild dried red chili powder, the kind you can most easily buy in Korean markets), and the grilling technique is not difficult. But it's unusual: he grills slowly (over briquettes fired with gas, by the way), not too close to the fire, he insists, until gorgeously browned. The fire is not superhot, but it's even - gas is good for that - and he keeps the grill grate a good six inches above the fire

Steps:

  • Soak skewers in water for at least 20 minutes to prevent burning.
  • Cut chicken into 1" cubes and place into bowl. Add olive oil, garlic and cilantro in a food processor and pulverize. Pour the marinade into the bowl with the chicken, add teaspoon of salt and pepper and marinate overnight if possible.

One 2-inch chunk fresh ginger, peeled and roughly chopped
1 small onion, roughly chopped
Kosher salt
1 pound boneless, skinless chicken thighs, cut into twelve 3 1/2 to 4-inch strips
1/2 cup prepared dipping sauce, such as cilantro chutney, sweet chili sauce or ponzu sauce

Steps:

  • Combine the cilantro, oil, chili sauce, sugar, soy sauce, garlic, ginger, onions and 1/2 teaspoon salt in a mini food processor or blender and process until smooth.
  • Drain the skewers and thread a piece of chicken onto each skewer. Place the skewers in a large nonreactive baking dish and rub with the marinade mixture. Cover and marinate in the refrigerator 1 to 2 hours.
