MAC AND CHEESE DOG CASSEROLE

Steps:
- Boil a large pot of water for macaroni. Salt water and under cook macaroni, cook about 7 minutes until just under al dente in doneness.
- Preheat broiler and set rack 12 inches from heat.
- While pasta works, heat a large deep nonstick skillet over medium-high heat. Add 1 tablespoon extra-virgin olive oil, 1 turn of the pan, then add hot dogs and brown on both sides, 4 minutes total. Remove the dogs with a slotted spoon to a paper towel lined plate. Add another tablespoon extra-virgin olive oil, 1 turn of the pan, and the butter. When butter melts, cook onions 4 to 5 minutes, then add flour and cook another minute. Add beer and cook off completely, 1 minute. Whisk in milk and bring to a bubble, then season the sauce with salt and pepper and stir in the mustard and ketchup. Lower heat and add 2 cups of the cheese. Stir to melt, 1 minute. Adjust mustard, ketchup, and salt and pepper, to your taste.
- Drain pasta well. Combine pasta and hot dogs with sauce and coat evenly then pour into large casserole and top with remaining cheese. Melt and brown cheese under broiler, 2 minutes. Serve.
CHILI MAC AND CHEESE
Steps:
- Preheat the oven to 400 degrees F.
- Bring a large pot of water to a boil. Add some salt and then the macaroni. Cook to al dente according to the package directions. Drain and hold until the cheese sauce is ready.
- Heat the oil in a medium pot over medium heat. Add the red onions and cook, covered, until soft, a couple of minutes. Add the garlic and bell peppers and cook an additional 2 to 5 minutes, being careful not to burn the garlic. Add the ground beef and sprinkle with salt and pepper; cook until browned, stirring to break up the beef into small pieces. Add the chili powder, cumin, paprika and oregano, and cook until the spices are fragrant. Add the beans and their liquid, the tomatoes and their juices, and the tomato paste; simmer for 5 to 10 minutes.
- In a separate saucepot, melt the butter over low heat. Add the flour and cook, whisking, for 1 minute. Whisk in the milk, raise the heat to high, and bring the mixture to a boil; cook, whisking, until thickened. Removing from the heat and whisk in the cream cheese, Cheddar, mustard, Worcestershire and some salt and pepper. Pour the pasta into the cheese sauce and stir to combine.
- Mix the chili into the macaroni and cheese. Transfer to a serving bowl and top with additional Cheddar and the green onions. Serve with corn chips.
DITCH DOGS

- Make the mac and cheese: Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs until al dente. Drain the pasta well and let cool.
- In a medium saucepan, heat the milk and 2 cups heavy cream over medium heat until warm (do not boil). In a separate medium saucepan, melt the butter over medium heat. Add the flour to the butter and stir until incorporated, about 5 minutes, making sure it doesn't brown. Add the warm milk and heavy cream, in batches, and whisk until incorporated. Bring to a simmer and cook, whisking, about 15 minutes.
- Add the American, gruyere and parmesan cheeses to the milk mixture and whisk until melted, 2 to 3 minutes (do not boil). Remove from the heat. Puree with an immersion blender until smooth (or transfer to a regular blender in batches and puree). Let cool to room temperature and mix with the pasta.
- Make the hot dogs: Lightly oil a grill pan and preheat over medium-high heat. Grill the hot dogs until slightly charred, 5 to 7 minutes. Reheat the mac and cheese in a saucepan with the remaining 1/4 cup heavy cream; season with salt and pepper. Place the hot dogs on the buns and top with the mac and cheese. Season with pepper.
CHILI MAC N CHEESE
I combined two favorites of mine to make my family's ultimate comfort food! I took this to a pot luck and got rave reviews. I have even made it with cut up hot dogs for chili dog casserole. **Extra note based on reviews: This is not meant to be a spicy dish, if you like your chili hot you might want to use the hot chili seasoning packet, or else use two of the regular ones. You could also add a bit of hot sauce. My family does not eat spicy (hot spicy) food, so this dish is suited to our tastes, if you like extra kick, adjust it to suit yours!

Steps:
- Brown ground beef and drain fat.
- Add kidney beans, tomato sauce and chili seasoning; mix well.
- Bring to a boil; reduce heat and simmer 10 minutes.
- Meanwhile, boil macaroni according to package directions for al dente; drain.
- In a large saucepan, melt butter and stir in flour, mustard and paprika. Slowly add milk, stirring until smooth.
- Cook over medium heat until mixture boils, stirring constantly. Reduce heat and simmer 1 minute, continuing to stir.
- Remove from heat and stir in cheese until completely melted. Fold in drained macaroni.
- Add macaroni and cheese mixture to chili and mix well; pour into 9x13 baking dish.
- Bake at 350° for 20-25 minutes. Let rest 5 minutes before serving.

HOT DOG CHILI MAC AND CHEESE
Steps:
- 1. Cook macaroni. Grill hot dogs on table top grill. Warm up hot dog chili.
- 2. Drain macaroni. Place macaroni back in the pot. Cut hot dogs into bite sizes.
- 3. Mix macaroni, cheese, hot dogs, and chili. Then serve.

CHILI-CHEESE DOG MAC & CHEESE
Steps:
- Cut wieners into quarter inch slices.
- Bring to boil 6 cups water and 1 tsp. salt (optional). Add pasta and wieners and boil approx. 10-12 minutes until done. Drain pasta. Do not rinse.
- Return to pot. Add cheese sauce pouch and chili and mix thoroughly.
