Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a 9x13 inch baking dish, place 1/2 of the shredded Cheddar cheese. Top with green chile peppers. Top the chiles with the remaining cheese.
- In a blender, mix eggs with the juice from the chile peppers. Pour the egg mixture over the cheese mixture.
- Bake in the preheated oven 30 to 40 minutes. Cool before cutting into squares.

CHILI CHEESE GRITS SQUARES
Found this in a Southern Living of indeterminate age. I NEVER liked grits until I fixed this with roast beef and gravy. NOW -- I pay much more attention to grits recipes, expecially when there is an unexpected, added twist. These go well with ANY beef and/or vegetables, and are just a little different. Refrigerate, covered, 8 hours or overnight., Remove dish from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake, uncovered, until a knife inserted in center comes out clean, 40-45 minutes. Let stand 10 minutes before cutting.

CHILE CHEESE SQUARES
This is a family favorite and it is very easy to make. We originally discovered it as an appetizer, but I think it is great for brunch. I also make it just for myself and freeze the squares to have for lunch in the future. The recipe is very open to substitutions. Fresh green chiles can be used if you happen to live where you can get them and the recipe can probably be made without them or with any amount according to your tastes.

- Sprinkle chiles and cheese in the bottom of a lightly greased 9-inch square baking pan.
- Combine biscuit baking mix, cream or milk, eggs, and salt in a medium-sized bowl.
- Beat until thoroughly blended.
- Pour over chili-cheese mixture.
- Bake in a 375º for 30 minutes or until puffed, golden, and a skewer inserted in center comes out clean.
- Let stand 10 minutes before slicing.

- Preheat a cast-iron skillet over medium-high heat. Place the beef in a thin, single layer and cook, undisturbed, until the bottom begins to brown, about 5 minutes.
- Meanwhile, make the seasoning. Mix the garlic powder, cayenne, cinnamon, cumin, mustard powder, onion powder and paprika and 2 teaspoons salt in a small bowl. Check to make sure the bottom of the beef is a brown color, add the seasoning, then stir to combine and cook for 4 minutes. Stir in the tomato paste and cook until the mixture is brick red, about 1 minute. Stir in 3 ounces of water, then remove from the heat.
- Preheat a large nonstick pan or griddle over medium heat.
- Place 4 of the bread slices on a work surface. On each slice, spread 1 tablespoon (0.5 ounce) of cream cheese, then top with 1 heaping tablespoon of Cheddar and set aside.
- Spread 2 heaping tablespoons of the chili on 4 more of the bread slices.
- Place 2 heaping tablespoons of Cheddar on the top left corner of the pan, spreading it out so it resembles the shape of a brioche slice as much as possible. Repeat three more times to create 4 squares or rectangles.
- Place each cheese-topped bread slice, cheese-side up, on top of a square of melting Cheddar. Top each with a chili-topped bread slice, chili-side up. Cook until the cheese starts to turn dark, golden yellow around the edges and is slightly crispy, about 5 minutes. Transfer the sandwiches to a plate.
- Place 2 heaping tablespoons of Cheddar on the top left corner of the pan, spreading it out so it resembles the shape of a brioche slice as much as possible. Repeat three more times to create 4 squares or rectangles.
- Place each of the 4 remaining bread slices on top of a square of melting Cheddar. Top with the sandwiches, chili-side down. Cook until the bottoms are crunchy and golden, about 5 minutes more. Transfer to a cutting board. Cut each sandwich into 4 squares and serve immediately.
