A touch of lemon juice gives a fresh taste to this simple side dish from Ruth Andrewson of Leavenworth, Washington. "Slivered almonds look so pretty with the French-style green beans, and they add a tasty crunch, too," she notes.

1 package (16 ounces) frozen French-style green beans
1/2 cup slivered almonds
1/4 cup butter, cubed
2 teaspoons lemon juice
1/4 teaspoon salt

Steps:

  • Place beans in a large saucepan and cover with water. Bring to a boil. Cook, uncovered, for 8-10 minutes or until crisp-tender; drain. , Meanwhile, in a small skillet over low heat, toast almonds in butter. Remove from the heat; stir in lemon juice and salt. Drain beans. Add almond mixture and toss to coat.

Chili Buttered Green Beans and Almonds image

A spicy twist on green bean almondine! The red pepper butter adds a new zest to this classic side dish that's perfect for a summer dinner or a holiday table.

1/2 cup butter
1/2 tsp. Chili flakes
8 oz. green beans, ends trimmed
1/2 cup sliced almonds
salt

Steps:

  • Roast almonds in a shallow baking pan in a 350ºF oven for 5 minutes. Set aside.
  • Blanch green beans in boiling salted water for 3 minutes. Drain. Then immediately put the beans in a bowl of ice cold water to stop the cooking process. Drain and set aside.
  • Add butter and chili flakes to a sauce pan and heat over medium low to melt. Add the green beans and almonds and toss. Saute for 2 to 3 minutes. Serves about 4 people.

1 lb fresh green beans or 1 (15 ounce) can green beans, drained

Steps:

  • Heat oil in skillet.
  • Add onion and garlic and saute until golden brown.
  • Add green beans and cook slowly until hot.
  • Season with salt and pepper.
  • Stir in almonds.
  • Sprinkle with cheese just before serving.

Many beans are grown here in Georgia, so we find lots of ways to serve them. This is one of my favorite side dishes for holiday meals. To make it even more special, substitute hazelnuts for the almonds.

1-1/2 pounds fresh green beans, trimmed
3 tablespoons butter, softened
2 teaspoons lemon juice
1/2 teaspoon grated lemon zest
1/4 teaspoon salt
1/8 teaspoon garlic powder
Dash pepper
1/4 cup slivered almonds, toasted and finely chopped

Steps:

  • Place the beans in a large saucepan and cover with water. Bring to a boil; cook, uncovered, for 8-10 minutes or until crisp-tender., Meanwhile, in a small bowl, combine the butter, lemon juice and zest, salt, garlic powder and pepper. Stir in the almonds. Drain the beans and return to the pan. Add almond butter and toss to coat.

1 -1 1/2 lb fresh green beans
1/3 cup butter
1 -2 tablespoon fresh minced garlic
1/8 teaspoon crushed red pepper flakes
1 tablespoon brown sugar
3 tablespoons soy sauce
2 teaspoons white vinegar
1/4-1/3 cup toasted sliced almonds

Steps:

  • Steam or boil the green beans until tender but still crisp; plunge into ice water or very cold water then drain well.
  • Place the beans onto a clean tea towel then pat dry using paper towels.
  • Place the beans into a heat proof bowl.
  • Melt the butter in a saucepan over medium heat; add in fresh garlic and chili flakes and stir 2 minutes (do not allow the butter to brown).
  • Mix in the brown sugar, soy sauce and white vinegar; bring to a boil mixing constantly.
  • Remove from heat then pour over the beans toss to coat.
  • Mix in the almonds.
