SPICY PINEAPPLE CHILI

Number Of Ingredients 14

1 pound bacon (cut into thin strips)
2 medium onions (diced)
2 bell peppers (diced)
2 jalapeños (diced (seeds optional))
4 cloves fresh garlic (minced)
2 pounds (grass fed ground beef)
1/4 cup chili powder
2 teaspoons ground cumin
red pepper flakes (optional)
sea salt to taste
black pepper to taste
1 20-ounce can of diced pineapple
1 15-ounce can of tomato sauce
1 14-ounce can of fire roasted diced tomatoes

Steps:

  • Preheat a large Stock Pot or Dutch Oven over medium heat (You can do this in the Crock Pot as well, see notes below)
  • Brown your thin strips of bacon in your pan
  • Add in your onions, peppers, jalapeños, and garlic and continue to cook, stirring often for 5 minutes or until your onions become translucent
  • Now add in your Grass fed Ground Beef, chili powder, and cumin and stir until your ground beef is cooked through
  • Add in all your remaining ingredients, stir well, and increase heat until your chili comes to a boil
  • Once boiling, reduce the heat to low, cover, and simmer for 45 Minutes

SPICED PINEAPPLE LENTILS

3 tablespoons vegetable oil
2 onions, diced
1 teaspoon salt
1 teaspoon freshly ground black pepper
3 garlic cloves, crushed
2 cups lentils, washed and picked over
3 cups water
1/2 cup canned crushed pineapple

Steps:

  • Heat the oil in a medium pot over moderate heat. Saute the onions with the salt and pepper until golden, about 10 minutes. Stir in the garlic and lentils and cook 2 minutes, stirring frequently. Pour in the water, bring to a boil, reduce to a simmer and cook, covered, 45 minutes. Stir in the pineapple, remove from the heat and serve.

1 (15 ounce) can pineapple chunks
2/3 cup sugar
1/3 cup vinegar
1 teaspoon whole cloves
2 cinnamon sticks
1 dash salt
1/2 teaspoon allspice or 1 whole allspice berry
red food coloring (optional)

Steps:

  • Drain pineapple, reserving juice. Set pineapple aside and pour juice into saucepan. Add sugar, vinegar, salt and spices to pineapple juice.
  • Bring to boil, then simmer for 10 minutes, stirring occasionally. If desired, add red food coloring to tint a delicate pink.
  • Pour hot syrup over pineapple. Cover and let it cool, then chill for several hours.
  • Serve as is or with dip.

1 lb lean boneless pork, trimmed and cut into 1-inch cubes
1 cup dried small white beans, rinsed and drained
1 cup hot water
1 (14 1/2 ounce) can diced tomatoes
1 (6 ounce) can tomato paste
1 (20 ounce) can pineapple chunks, drained, juice reserved
1 (4 ounce) can diced green chilies
1 medium onion, chopped
1 tablespoon chili powder (or (to taste)
1 tablespoon cumin (or less to taste)
1/2 teaspoon garlic powder

Steps:

  • In a 3-1/2-quart electric slow cooker, combine the pork, beans, hot water, tomatoes with their liquid, tomato paste, juice from pineapple chunks, chilies, onion, chili powder, cumin, and garlic powder; mix well.
  • Cover and cook on the low heat setting 8-1/2 to 9 hours until the pork and beans are tender, stirring once halfway through the cooking time, if possible.
  • Stir in the pineapple chunks and serve.

Cool, tropical, refreshing...YUMM! The spiced part is chile powder on the rim of the glass. Made this for a Cinco de Mayo birthday party, they were gone in a hurry I had to make another batch just so I could get one. Courtesy of Everyday Food Magazine May 2011. Note: I used honey in place of agave nectar and canned pineapple instead of fresh/frozen and we added more tequila...much more.

1/4 cup fresh lime juice (from about 3 limes)
3 tablespoons agave nectar (or honey)
1 cup pineapple juice
2 cups pineapple (fresh or frozen)
1/4 cup triple sec
1/3 cup tequila
2 cups ice
1 1/2 teaspoons chili powder
1 1/2 teaspoons sugar
1/2 teaspoon coarse salt

Steps:

  • Stir together juices, triple sec and tequila in a blender add ice. Blend until smooth and frothy.
  • On a saucer combine ingredients for the rim of the glass. Wet rim with a lime wedge and dip glass in mix to coat rim.
  • Pour and enjoy!
