CHILE-GARLIC MARINATED AND GRILLED SHRIMP



Chile-Garlic Marinated and Grilled Shrimp image

This quick marinade is a cheater's version of Vietnamese nuoc mam cham, which is a mixture of Asian fish sauce, lime juice, sugar and chiles. Using crushed red pepper flakes rather than the fresh variety means less chopping, and finely grating the garlic into the marinade ensures it doesn't burn on the grill.

3 large limes (about 10 ounces)
2 large cloves garlic
2 tablespoons fish sauce
2 tablespoons canola oil
1 tablespoon sugar
1/4 to 1/2 teaspoon crushed red pepper flakes
1 pound jumbo shrimp (16/20), peeled and deveined
1 small scallion, thinly sliced
1/4 cup lightly packed cilantro leaves

Steps:

  • Zest and juice 2 of the limes (you should have about 1 tablespoon zest and about 1/4 cup juice) and add to a medium glass bowl. Finely grate the garlic and add to the bowl along with the fish sauce, canola oil, sugar, red pepper flakes and shrimp. Toss to combine.
  • Marinate in the refrigerator for 30 minutes. Meanwhile, cut the remaining lime into wedges and reserve for serving.
  • Heat a large grill pan over medium-high heat. Remove the shrimp from the marinade and put on a baking sheet lined with paper towels. In batches, grill the shrimp until lightly charred in spots on both sides and just cooked through, about 3 minutes total. Transfer to a large plate.
  • Top with the sliced scallions and cilantro and serve with the lime wedges.

2/3 cup soy sauce
1/4 cup fresh lemon juice
1/4 cup fresh lime juice
3 tablespoons plus 1 teaspoon sugar
2 teaspoons finely grated peeled fresh ginger
2 teaspoons Asian sesame oil
2 lb large sea scallops (30), tough muscle removed from side of each if necessary
2 teaspoons vegetable oil
Garnish: 2 teaspoons sesame seeds (preferably black),toasted
Accompaniment: soba salad ;

Steps:

  • Whisk together soy sauce, lemon and lime juices, sugar, ginger, and sesame oil in a wide shallow nonreactive bowl. Add scallops and marinate, covered, at room temperature, 5 minutes on each side (do not marinate any longer, or scallops will become mushy once cooked). Transfer scallops to a plate and reserve marinade.
  • Heat 1/2 teaspoon vegetable oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then sauté scallops, 6 to 8 at a time, until golden brown and just cooked through, 2 to 3 minutes on each of the 2 flat sides, transferring to a plate as cooked. Wipe out skillet and add 1/2 teaspoon oil between batches.
  • Wipe out skillet again, then add marinade and boil until reduced to about 1/3 cup, about 2 minutes. Drizzle scallops with sauce.

QUICK MARINATED GRILLED SCALLOPS

Zest and juice of 2 lemons
2 cloves garlic, minced
1 tablespoon finely chopped fresh oregano plus 1 small bunch fresh oregano tied with butcher's twine to make a basting brush
Olive oil, for marinade
Kosher salt and freshly cracked black pepper
12 U-10 sea scallops, cleaned and patted dried with a paper towel

Steps:

  • Set up your grill for high heat by building coals evenly on the bottom of the grill.
  • In a mixing bowl, whisk together the lemon zest and juice, garlic, chopped oregano and 1/2 cup olive oil. Season with salt and pepper, then add the scallops, tossing to coat. Allow to marinate for 10 to 30 minutes.
  • Remove the scallops from the marinade, letting the excess drip off. Reserve the marinade for basting. Place the scallops on the grill and cook until charred, 3 to 4 minutes. Flip, and using the oregano brush, baste with the leftover marinade. Char on the other side, 1 to 2 minutes. Remove from the grill and serve.

4 stalks lemongrass, white part finely minced, green part cut into 2 1/2-inch skewers and soaked in water
4 scallions finely sliced, save a little for garnish
1 cup ponzu
1 tablespoon toasted whole green peppercorns
1 tablespoon sugar
1 tablespoon naturally brewed soy sauce
12 large sea scallops (U-8's), prepped and halved into disks

Steps:

  • Preheat a cleaned, oiled grill.
  • In a bowl, mix together the minced lemongrass, scallions, ponzu, peppercorns, sugar, and soy. Add the scallops and marinate for 8 minutes before cooking.
  • Remove scallops and lay them on a flat surface. Skewer each one with the soaked lemongrass. Season lightly with salt and on the hottest part of the grill cook the scallops for only 1 minute a side.
  • If available, lay out washed whole scallions and lemongrass stalks on a plate in a fan shape. Top with "lollipops".
  • Beverage: Veuve Clicquot Blanc de Blanc or DVX

This simple and sophisticated treatment is perfect for grilled scallops, but also works well on chicken or pork. One note on preparation: Err on the side of undercooking. Take the scallops off the grill before they're opaque all the way through. If you undercook a scallop, it will still be delicious, but if you overcook it, it will get rubbery.

Vegetable oil, for brushing
2 tablespoons miso
2 tablespoons mirin or sake
Freshly ground pepper
Large scallops
Sesame seeds and sliced scallions, for garnish

Steps:

  • Heat a charcoal or gas grill until very hot. Brush the grill with a little oil and position the grill grate 3 to 4 inches from the heat.
  • Whisk together the miso and mirin or sake; season to taste with pepper.
  • Thread the scallops through their equators onto metal or soaked wooden skewers and brush them all over with vegetable oil. Grill scallops until they're browned and release easily from the grill, 2 to 3 minutes per side.
  • When they're almost done, brush on both sides with the miso mixture, and continue to cook, turning once or twice, until the glaze caramelizes a bit and the scallops are done. Take the scallops off the grill before the interior becomes totally opaque.
  • Sprinkle with sesame seeds and scallions and serve immediately.

This is my Mom's easy recipe for scallop lovers. It is simple, quick, and delicious. The only tools you need are a grill and a grilling basket.

¾ cup butter
⅔ cup chopped onions
3 cloves garlic, chopped
¼ cup fresh lemon juice
1 pinch salt
1 ½ pounds sea scallops
⅓ cup chopped fresh parsley

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil grate.
  • Melt butter in a saucepan over medium heat. Cook onion and garlic until soft and translucent, about 5 minutes. Remove from heat, and stir in lemon juice and salt. Place scallops in a large bowl, and toss with butter mixture. Let stand for about 2 minutes.
  • Thread scallops onto skewers, or use a wire grill basket. Cook on preheated grill for about 4 minutes per side.
  • Return butter mixture to saucepan, and bring to a boil. Reduce heat to low, and keep warm while scallops cook. Toss with grilled scallops and serve.

1 pound dry sea scallops
¼ cup vegetable oil
1 tablespoon crushed red chile flakes
1 tablespoon your favorite hot sauce (such as Tabasco)
1 tablespoon Old Bay seasoning
1 teaspoon salt
4 cloves garlic, pressed
1 whole lime, juiced

Steps:

  • Combine all ingredients, except scallops and lime juice, into a bowl large enough to hold the scallops and combine thoroughly. Add the scallops to the bowl with the marinade and toss well to coat. Allow to marinate at least one hour (out of the fridge) and up to four hours (keep in fridge except for the last hour). Prepare the grill for direct cooking. Just before grilling thread the scallops onto skewers (wooden ones should be soaked), leaving a little space between each scallop. Grill the scallops over a medium-hot fire about 2-3 minutes per side. These may also be done inside on a hot grill plate if an outdoor grill is not available. When done, place the skewers of scallops on a serving platter and sprinkle with the lime juice. Serve immediately.
