2 pounds shrimp, shell off, tail on
1/4 cup low sodium soy sauce
3 tablespoons honey
4 cloves garlic, minced or grated
2 tablespoons gochujang
1 tablespoon toasted sesame oil
juice of half a lemon
2 tablespoons butter, at room temperature
1/3 cup fresh orange juice
1/4 cup fresh lemon juice
1/4 cup fresh cilantro, roughly chopped
1 fresno pepper, sliced

Steps:

  • 1. In a large ziplock bag, combine the soy sauce, honey, garlic, gochujang, sesame oil, and lemon juice. Add the shrimp, seal the bag and toss to coat. If desired, you can marinate the shrimp for up to 24 hours, but it's not imperative. 2. To make the citrus butter. In a small sauce pan, combine the butter, orange juice, and lemon juice and cook over medium heat until the sauce is melted and smooth. Remove from the heat and stir in the cilantro and chiles. 3. Preheat an outdoor grill or grill pan to high.4. Thread the 4-5 shrimp on skewers and grill each skewer for 2 minutes per side or until the shrimp is cooked through. 5. Arrange the skewers on a platter or plate and serve drizzled with the citrus butter and top with sesame seeds and cilantro. Enjoy!

1 1/2 cups soy sauce
1/4 cup packed brown sugar
2 tablespoons dark sesame oil
1 tablespoon maple syrup
1 tablespoon granulated sugar
5 cloves garlic, finely chopped
3 tablespoons sliced green onions
2 teaspoons grated fresh ginger or 1/2 teaspoon ground ginger
1/2 teaspoon cracked black pepper

Steps:

  • Combine all ingredients in a small bowl until well blended.
  • Marinade shrimp for 1 hour in the refrigerator.
  • Thread shrimp and green onion strips on metal or bamboo skewers, alternating.
  • Grill, turning once, basting 5 minutes until tender.
  • Boil remaining marinade in saucepan for 1 minute.
  • Serve with shrimp.

24 large shrimp
1/2 cup light soy sauce
2 cloves garlic, finely chopped
1 tablespoon grated fresh ginger
1 tablespoon toasted sesame oil
2 tablespoons white wine vinegar
1 tablespoon fresh lime juice
1/4 cup peanut oil, plus extra for drizzling
Salt and pepper
2 tablespoons toasted sesame seeds

Steps:

  • Soak 4-inch wooden skewers in cold water for 1 hour. Thread 1 shrimp onto each skewer so that the shrimp lie flat.
  • Whisk together the soy, garlic, ginger, sesame oil, white wine vinegar, lime juice and peanut oil together in a small bowl. Place shrimp skewers onto a plate and drizzle with peanut oil to lightly coat. Season with salt and pepper.
  • Heat grill. Grill shrimp 2 minutes per side or until just cooked through. Place shrimp on a platter, drizzle with vinaigrette and sprinkle with sesame seeds.

To say this marinade is fantastic is an under statement --- the amounts listed enough for up to 4 pounds of shrimp and this also works well with lobster tails too --- if you are threading the shrimp on wooden skewers make certain to soak them for a minimum of 30 minutes in cold water before using, do not marinade the shrimp for more than 1 hour or the vinegar will start "cook" the shrimp, the hot sauce is only optional add in for extra heat.

3/4 cup olive oil
1/2 cup tomato sauce
4 tablespoons red wine vinegar
1/2 teaspoon black pepper (can use more)

3 tablespoons chopped fresh cilantro (or use fresh basil)
4 -5 large fresh garlic cloves (cut into large pieces, do not mince or use as much as desired!)

Steps:

  • In a resealable plastic bag, combine the soy sauce, 1 tablespoon sesame oil, lemon juice, garlic powder and lemon-pepper; add shrimp. Seal bag and turn to coat; refrigerate for 30 minutes., Drain and discard marinade. In a skillet, saute shrimp in remaining sesame oil until shrimp turn pink, about 3 minutes.
