These golden-brown crescents, filled with melted cheese and Spanish flavors, make a classy start to any gathering. Simply cut rounds of ready-made pastry dough, fill, bake, and serve.

1 cup shredded pepper Jack cheese (4 oz)
1/3 cup Old El Paso™ chopped green chiles (from 4.5-oz can)
1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
1 egg, beaten
1 cup salsa

Steps:

  • Heat oven to 400°F. In small bowl, mix cheese and chiles.
  • With 3 1/4-inch round cutter, cut each pie crust into 8 rounds. Spoon cheese mixture evenly onto half of each dough round. Brush edge of crust rounds with beaten egg. Fold crust rounds in half; press edges with fork to seal. Place on ungreased cookie sheet. Brush tops with egg. Cut small slit in top of each.
  • Bake 12 to 16 minutes or until golden brown. Serve warm empanaditas with salsa.

2 cups flour (all-purpose)
1 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 tablespoon sugar (white)
2 tablespoons vegetable shortening (or lard, softened)
3/4 cup milk
1/2 cup water
16 ounces mozzarella (whole milk, or other meltable cheese)
2 to 3 cups vegetable oil (or amount needed for frying)

Steps:

  • Gather the ingredients.
  • In a large bowl, whisk together the flour, salt, baking powder, baking soda, and sugar.
  • Gently mix the vegetable shortening into the flour.
  • Place the milk and water in a saucepan and heat until almost boiling.
  • Stir the hot liquid into the flour mixture. Add more water (1 tablespoon at a time) if the mixture seems too dry and crumbly, or add more flour if the mixture is too wet and sticky.
  • Knead dough gently until well mixed and homogenous.
  • Divide dough into 16 portions, and roll each piece into a ball. Let the dough rest for 5 minutes.
  • Grate or finely chop cheese.
  • Roll each ball of dough into a 6- to 7-inch circle.
  • Place 1 ounce of cheese in the center of each dough circle.
  • Fold the dough in half over the cheese to form a semicircle.
  • Press down firmly along edges to seal.
  • Roll the edge inward over itself and press down again to seal.
  • Crimp edge decoratively with a fork, pressing to seal.
  • In a deep-sided skillet, pot, or deep-fat fryer, heat several inches of vegetable oil to 350 F. Fry empanadas in batches, turning at least once, until golden brown.
  • Drain empanadas on paper towels.
  • Empanadas can be kept warm in a 200 F oven for up to 1 hour before serving. Serve warm.

Queso con rajas and empanadas have always been one of my favorites. So I combined the two and came up with these tasty empanadas.

1 large poblano pepper
1 cup grated Manchego cheese
2 tablespoons grated Manchego cheese
12 empanada pastry discs (such as Goya® Tapas para Empanadas)
1 egg, beaten

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  • Place poblano directly on the grates of a gas stove. Cook over medium heat, flipping with tongs occasionally, until blackened and charred, about 5 minutes. Place in a sealed plastic bag and allow to cool, 7 to 8 minutes. Peel off charred skins, remove seeds, and cut flesh into 1-inch squares.
  • Place 1 1/2 tablespoons Manchego cheese onto each empanada disc. Top each with 1/2 tablespoon poblano peppers. Fold dough over on top of filling to close. Wet fingers with water and run them along the edges to help seal. Press edges together. Place empanadas on the prepared baking sheet and brush with beaten egg.
  • Bake in the preheated oven until golden brown, 24 to 26 minutes.

1 tablespoon olive oil
1/2 small red onion, finely chopped
1 jalapeno, finely diced, seeded and ribs removed
2 cloves garlic, minced
3 green onions, thinly sliced
Kosher salt and freshly ground pepper
1 1/2 cups shredded then diced cooked chicken breasts (from leftover chicken)
1 cup shredded Monterey and Cheddar cheese blend
4 ounces cream cheese, diced
Dash of hot sauce
1 egg
Flour, for rolling
One 15-ounce package refrigerated pie dough
1 tablespoon chipotle chile powder
Chili Lime Dipping Sauce, recipe follows
1 cup Greek yogurt
1 chipotle pepper (canned in adobo sauce), minced
Juice and zest of 1 lime

Steps:

  • Preheat the oven to 375 degrees F. Coat a baking sheet with nonstick spray.
  • Place a large saute pan over medium heat and add oil. Once the oil is hot, add the onion, jalapeno, garlic, green onions and saute until tender, about 3 minutes. Season with salt and pepper.
  • In a large bowl, combine the chicken, cheese, cream cheese, sauteed mixture and hot sauce together.
  • Whisk the egg in a small bowl. Set aside. Sprinkle flour on your work surface and unroll the pie dough.
  • Roll out each round to a 13-inch circle. Cut each crust into eight 4-inch circles with a biscuit cutter. You can knead the scraps and then roll out, if necessary. Spoon about 1 heaping tablespoon of the chicken mixture into the center of each round. Brush the edges with the egg wash and fold each circle in half. Gently press on the top of the empanada to release any air. Seal the edges with a fork and brush the top with the remaining egg wash. Sprinkle with chile powder. Bake until golden brown, about 20 minutes.
  • Serve the chicken empanadas with the Chili Lime Dipping Sauce.
  • Combine the yogurt, chipotle and lime zest and juice in a bowl.

GREEN CHILE BEEF EMPANADAS

2 (9-inch) refrigerated pie crusts
2 cups cooked shredded beef
1 cup shredded Monterey jack cheese
1 (4-ounce) can diced green chiles

Steps:

  • Preheat oven to 425 degrees F.
  • Unroll pie crusts onto a flat surface. Top each quadrant of crust with 1/2 cup of beef, 1/4 cup of cheese and about a tablespoon of chiles, making even layers and spreading ingredients to within 1/2-inch of the edges. Top with second pie crust. Using a pastry cutter or sharp knife, make an X across the circle, making 4 equal sections. Pinch around the edges with a fork to seal.
  • Transfer empanadas to a baking sheet and make small slits in the top of each one to allow steam to escape during cooking. Bake 8 to 10 minutes, until crust is golden brown.

CHEESE EMPANADAS

1 tablespoon vegetable shortening
1/2 tablespoon salt
1 cup precooked corn flour, such as Harina P.A.N. or Maseca
2 cups shredded mozzarella or any cheese that melts
Vegetable oil, for frying

Steps:

  • Mixing by hand, combine 2 cups warm water, the shortening and salt in a medium bowl. Slowly add the flour, mixing quickly to avoid lumps. Knead until the ingredients are evenly combined. Let the dough rest for 5 minutes, then shape into small balls (about 3 ounces each).
  • Using a hand tortilla press, place a piece of waxed paper on the bottom, center a dough ball on top and cover with another piece of waxed paper. Gently press down to flatten the ball into a thin circle (not too thin or it will crack). Alternatively, you can use a wooden board or large plate to press the dough.
  • Remove the top paper and add 1 tablespoon of the cheese to the middle of the pressed dough. Carefully fold one edge of the circle over the cheese to the other edge, and press the edges together to close the empanada. Using a small bowl, place it over the empanada close to the edge and press down slightly to cut the edge and evenly seal it. Repeat with the remaining dough and cheese. Set the empanadas on a large platter and refrigerate for 30 minutes.
  • In a large heavy-bottomed saucepan, add enough vegetable oil to fill the pan about a third of the way. Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 350 degrees F. Gently remove the wax paper from each empanada and fry two to four at a time (depending on the pan size) until golden brown, about 5 minutes.
  • Serve immediately.

½ x 198g can sweetcorn , drained well
small handful coriander , leaves and stalks chopped
1 spring onion , finely sliced
25g extra mature cheddar , grated
½ green chilli , chopped
230g sheet ready-rolled all-butter shortcrust pastry
1 egg , beaten
2 tbsp sesame seeds

Steps:

  • Make the filling by mixing the corn, coriander, spring onion, cheese and chilli with some seasoning.
  • Unroll the pastry sheet, roll a little thinner with a rolling pin, then use a 10cm circle cutter to cut out circles of pastry. (You should get 6 circles, then re-roll the trimmings for 2 more.) Brush edges of the circles with a little of the beaten egg, then spoon a couple of teaspoonfuls of filling mixture onto each. Fold over one half of the pastry, and seal by pinching the edge with your fingers, until you have 8 small pastyshaped empanadas. Arrange on a baking parchment lined baking sheet, brush with the rest of the egg and scatter with sesame seeds. Cover and chill for at least 30 mins before baking.
  • To serve, heat oven to 200C/180C fan/ gas 6 and bake for 20 mins until golden and crisp.

My mother is from Chile and these have been a staple of our household for years. I have searched and searched and never seem to find the right one, so here is our family favorite. My mom likes to sprinkle sugar on hers. I prefer a little mustard to dip it in. We all have our own cravings. This recipe makes about a dozen large empanadas, depending on the size.

1 tablespoon butter
1 large onion, chopped
1 teaspoon minced garlic
1 teaspoon dried oregano
1 teaspoon cumin
½ teaspoon salt
½ teaspoon ground black pepper
1 pound ground pork
3 hard-cooked eggs, chopped
1 cup raisins
1 cup chopped black olives
1 cup water
1 teaspoon cornstarch
1 cup lukewarm milk
1 cup shortening, melted
5 cups all-purpose flour
2 teaspoons salt
2 eggs, beaten

Steps:

  • Melt the butter in a large skillet over medium heat; cook the onion, garlic, oregano, cumin, salt, and pepper in the melted butter until the onion is golden brown, 5 to 7 minutes. Add the ground pork and cook until completely browned, 7 to 10 minutes more; drain the fat from the skillet. Stir the eggs, raisins, and olives into the mixture. Whisk the water and cornstarch together in a small bowl; pour into the skillet and stir until the liquid thickens. Remove from heat and set aside.
  • Whisk the milk and melted shortening together in a bowl until evenly blended. Stir the flour and salt together in a separate large bowl. Pour the wet mixture into the dry and whisk until well mixed into a dough. Set aside to rest for 10 minutes.
  • Preheat an oven to 400 degrees F (200 degrees C).
  • Place the dough onto a lightly-floured board and roll to about 1/8-inch thick; cut into circles with a round cookie cutter or glass. Drop equal portions of the pork mixture into the center of each circle. Fold each circle in half and press edges with a fork to seal. Brush the tops of the empanadas with beaten egg.
  • Bake in the preheated oven until golden brown, about 25 minutes.

1/2 lb lean ground beef
1/2 green bell pepper, chopped
2 tablespoons chopped garlic

1 3/4 teaspoons allspice
1 teaspoon cumin

  • Roll out one biscuit on lightly floured surface to 4-inch circle.
  • Brush half the dough with egg wash.
  • Place 1 rounded tablespoon filling on dough.
  • Fold over to crate half circle; press edges to seal.
  • Using fork, crimp edges.
  • Place on large baking sheet.
  • Brush with egg wash.
  • Bake until golden brown, about 12 minutes.
