2 teaspoons olive oil
2 garlic cloves, chopped
1 carrot, chopped
1/2 small onion, chopped
Sea salt and freshly ground black pepper
One 8-ounce can tomato sauce or 8 ounces crushed tomatoes
2/3 cup chickpea flour
2 teaspoons garlic powder
1/2 teaspoon salt
2 teaspoons olive oil
1/2 teaspoon olive oil
1 cup grated provolone cheese
3 ounces chicken sausage (about 1 link), cut into 1/4-inch slices

Steps:

  • Preheat the oven to 425 degrees F.
  • For the tomato sauce: In a large pot, heat the oil over medium-high heat. Add the garlic, carrots and onion and saute until the vegetables are soft, approximately 5 minutes. Season with salt and pepper. Add the tomato sauce and bring to a simmer. Cover and simmer on low heat until thick, about 20 minutes.
  • For the crust: Meanwhile, in a bowl, whisk together the chickpea flour, garlic powder, salt and 2/3 cup water. In a 7 1/2-inch round nonstick pan, heat the olive oil over medium heat and pour the "dough" into the pan (about 1/8 inch thick). Cook the "dough" until the edges start to brown, approximately 3 minutes. Flip the crust over like a pancake and cook on the other side for another 3 minutes. Transfer the crust to a baking sheet.
  • To finish the tomato sauce, put the sauce into a food processor and process until smooth.
  • For the pizza topping: Brush the olive oil over the chickpea crust. Spread a thin layer of the tomato sauce over the crust, leaving a 1/2-inch border. Sprinkle on the grated provolone, covering the tomato sauce. Place the chicken sausage slices on top.
  • Bake until the cheese is melted and bubbling, 10 to 15 minutes.

2 cups chickpea flour
Kosher salt
6 tablespoons extra-virgin olive oil
1 teaspoon baking powder
Extra-virgin olive oil, for brushing and drizzling
8 ounces fresh mozzarella, thinly sliced
1/2 cup grated Parmesan
3 large ripe plum tomatoes, very thinly sliced
Kosher salt and freshly ground black pepper
1/2 cup fresh basil leaves

Steps:

  • For the crust: Whisk the chickpea flour and 1 1/2 teaspoons salt together in a medium bowl. Whisk in 1 1/2 cups water and 2 tablespoons olive oil until smooth. Cover and let stand at room temperature for 2 hours.
  • Preheat the oven to 425 degrees F with a pizza stone or baking sheet on the bottom rack. Line 2 baking sheets with parchment paper. Heat a large nonstick skillet over medium-high heat and add 2 tablespoons olive oil. Whisk the baking powder into the chickpea mixture and pour half of the batter into the hot skillet, swirling to evenly coat the bottom. Cook until just set, about 2 minutes. Transfer the skillet to the hot pizza stone and bake until the edges and top are browned and crisp, about 5 minutes. Flip the crust in the skillet and bake until the top is browned and crisp, about 3 minutes more. Transfer the crust to a parchment-lined baking sheet. Make another crust with the remaining 2 tablespoons olive oil and the remaining batter.
  • For the toppings: Brush the crusts lightly with olive oil. Arrange the mozzarella on top and sprinkle with Parmesan. Divide the tomatoes between the two crusts and sprinkle with salt and pepper. Roughly tear the basil leaves and scatter over the top. Bake on two sheet pans, switching the position halfway through, until the cheese is browned and bubbly, 10 to 12 minutes. Drizzle with some olive oil and serve.

Nonstick cooking spray, for the baking sheet
One 15-ounce can chickpeas, rinsed, drained and dried (I put them in a dishtowel and shake until dried)
1 tablespoon gluten-free flour
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1 teaspoon onion powder
1 teaspoon kosher salt
1 large egg
Freshly ground black pepper
Desired pizza toppings

Steps:

  • Preheat oven to 400 degrees F. Line a baking sheet with parchment paper and spray with nonstick cooking spray.
  • Combine chickpeas, flour, garlic powder, Italian seasoning, onion powder, salt, egg and some pepper in a food processor until smooth. (The mixture will be creamy, like hummus.) Transfer to prepared baking sheet and spread into a 10-inch circle with a rubber spatula.
  • Bake 15 minutes. Remove from oven and add desired toppings. Return to oven and bake an additional 10 minutes. Slice and serve.

You can add garlic, oregano, basil or parmesan cheese to dry ingredients, to make a flavored crust, and top with your favorite pizza toppings. Prep time includes rising time. Although spelt flour does have gluten in it, it is used in many gluten free recipes since people with wheat allergies can usually tolerate spelt flour.

1 tablespoon dry yeast
1 cup chickpea flour
2 cups spelt flour
1 teaspoon salt

Steps:

  • Mix dry ingredients together.
  • Dissolve yeast in warm water.
  • Pour liquid into dry ingredients in Kitchenaid mixer and add olive oil.
  • Mix until dough forms, knead in mixer 5 minutes.
  • Remove from bowl and oil bowl.
  • Replace dough and turn until dough is oiled.
  • Cover and let rise until double.
  • Preheat oven to 420 degrees.
  • Form dough into 2 12 inch pizzas and place on stone or greased pizza pans.

You will not believe this pizza crust is gluten-free. It has a fantastic texture, you can pick it up and it doesn't fall apart, and it's easy to make! It's based on a recipe in a Bette Hagman gluten-free cookbook, I don't remember which one. I just tried it for the first time tonight, and I'm so excited with how it turned out, I just had to share it. (btw, I used chana flour for the bean flour, that's chickpea or garbanzo flour)

3/4 cup gluten-free flour, mix
1/4 cup light bean flour or 1/4 cup dark bean flour
1/4 cup cornstarch
1/4 cup tapioca starch
1 teaspoon xanthan gum
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 tablespoon vegetable oil
1 egg
1/2 teaspoon vinegar
2 teaspoons sugar
1 cup lukewarm water
1 package yeast

Steps:

  • Spray a baking sheet or a 15 inch round pizza pan with vegetable oil.
  • Preheat oven to 425 degrees.
  • In a small bowl, whisk together the gluten free flour, bean flour, corn starch, tapioca flour, xanthan gum, baking powder, and salt.
  • Set aside.
  • In a larger mixing bowl, place the oil, egg, vinegar, and 1 tsp sugar.
  • Measure the water and add the rest of the sugar to it.
  • Drop in the yeast to dissolve.
  • Beat the egg-oil mix slightly, adding the yeast water.
  • Beat in half the flour.
  • Stir in the remaining flour and beat until smooth.
  • Pour the batter into the prepared pan, and spread, allowing the edges to stay slightly thicker.
  • Spread on your pizza sauce and add the toppings.
  • Bake for 25 to 30 minutes.

  • While the pan is heating up, add the chickpea flour to a medium-size mixing bowl with a sprinkle of salt and pepper and whisk. Continue whisking the flour while you slowly pour in 1 cup of warm water. Let the batter sit on the counter for a few minutes to thicken up a bit.
  • Once the pan is ready, brush it with 1-2 tablespoons of olive oil. Enough to coat the bottom of the pan. Be careful, the pan gets very hot! Add the other 1 tablespoon of olive oil to the chickpea flour and whisk lightly.
