1 small onion, diced
4 cloves garlic, minced
15.5 oz chickpeas, 1 can, rinsed and drained
½ cup whole wheat breadcrumbs
2 teaspoons fresh parsley, chopped
1 teaspoon dried oregano
½ teaspoon salt
½ teaspoon pepper
½ teaspoon red pepper flakes, optional
1 egg

Steps:

  • Preheat oven to 375°F (190°C).
  • In a skillet over medium heat, add cooking oil or water and onions. Cook until onions are translucent, stirring occasionally.
  • Add the garlic and stir until fragrant. Transfer to a blender or food processor.
  • To the food processor, add the chickpeas, breadcrumbs, parsley, oregano, salt, pepper, red pepper flakes, and egg. Pulse until a dough forms.
  • Use your hands to form 1-inch (2-cm) balls from the chickpea mixture. Place in rows on a parchment paper-lined baking sheet.
  • Bake for 20 minutes, or until golden, flipping halfway.

1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
1/2 cup chopped sweet onion
1/3 cup grated Parmesan cheese
1 large egg
4 fresh basil leaves, torn
3 garlic cloves, halved
1/4 teaspoon fine sea salt
1/4 teaspoon pepper
1 cup dry bread crumbs, divided
Cooking spray

Steps:

  • Place first 8 ingredients in a food processor; add 1/3 cup bread crumbs. Process until combined (mixture will be soft). Shape into 1-1/2-in. balls. Place remaining 2/3 cup bread crumbs in a shallow bowl. Gently add balls, a few at a time, and toss to coat; shake off excess., Preheat air fryer to 375°. In batches, place balls in a single layer in greased air fryer; spritz with cooking spray. Cook until golden brown, 11-13 minutes. If desired, top with additional fresh torn basil leaves.

2 tablespoons olive oil
1 white onion, minced
6 cloves garlic, minced
2 cups canned chickpeas, drained
¾ cup dry bread crumbs
1 egg
2 tablespoons parsley
1 tablespoon salt-free seasoning blend
salt and ground black pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a baking sheet with cooking spray.
  • Heat olive oil in a large skillet over medium heat. Add onion and garlic; cook and stir until tender, about 5 minutes.
  • Pulse chickpeas in a food processor until finely ground. Add onion and garlic, bread crumbs, egg, parsley, seasoning blend, salt, and black pepper; process until mixture holds together like a dough.
  • Scoop out 2 tablespoons of the mixture and roll into a ball; set on the prepared baking sheet. Repeat with remaining mixture.
  • Bake in the preheated oven until bottom is golden brown, about 15 minutes. Turn each meatball over and continue baking until golden brown on top, about 10 minutes more.

1 tablespoon flax seed meal
2 1/2 tablespoons water
75 g white onions, minced
15 g garlic, minced
225 g chickpeas, cooked
10 g parsley, chopped
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
44 g almond meal
25 g flour, gluten-free
1/2 teaspoon salt
1/4 teaspoon pepper
3 tablespoons olive oil
1 tablespoon olive oil
20 g garlic, finely chopped
400 g crushed tomatoes
1 teaspoon red pepper flakes
2 tablespoons balsamic vinegar
1 teaspoon maple syrup
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Make the marinara sauce. Sautee garlic in olive oil. Add all remaining ingredients and simmer for 10 minutes.
  • Combine flax seed meal and water in a small bowl. Set aside for 5 minutes.
  • Heat 1 tablespoon of olive oil in a skillet. Sautee garlic and onions until translucent. Leave to cool for about 5 minutes.
  • Combine chickpeas, sauteed garlic and onions, parsley, basil, oregano, flaxseed mixture, salt, and pepper in a food processor. Pulse until smooth.
  • Mix chickpea puree with almond meal and flour.
  • Form "meatballs" approximately 30 grams each.
  • Heat 2 tablespoons olive oil in a skillet and brown the "meatballs" over medium heat, turning constantly. About 5 minutes. Drain on paper towels.
  • Serve over spaghetti with marinara sauce.

2 teaspoons cayenne pepper
1 teaspoon kosher salt

Steps:

1 (16 ounce) can chickpeas
1 cup carrot, chopped
2 celery ribs, chopped
1 cup small shell pasta (salad macaroni)
2 tablespoons olive oil
1 lb ground beef
1/2 cup breadcrumbs
1/2 cup parmesan cheese, grated
1 egg
garlic powder
onion salt
white pepper
black pepper
dried basil
bay leaf
dried parsley

Steps:

  • Cook carrots and celery in olive oil in a large soup pot until soft (5 minutes).
  • Add chicken broth, water, tomato sauce, and chick peas. Season to taste with garlic powder, onion salt, basil, white pepper, black pepper, bay leaf, and parsley. Bring to a boil.
  • While broth is coming to a boil, make meatballs. Combine beef, bread crumbs, egg, garlic powder, and parmesan cheese.
  • Roll small meatballs and drop into boiling broth.
  • Add pasta.
  • Simmer for about 10 minutes until pasta is tender. Adjust seasonings to taste.

1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon italian herb
2 tablespoons grated parmesan cheese

Steps:

  • Preheat oven to 400°F (200°C).
  • Carefully dry the chickpeas. Removing the skins is optional and they will come off easily. The drier you get them, the crunchier they'll be!
  • In a medium bowl, add dried chickpeas, olive oil, garlic powder, herbs and parmesan. Toss well to coat evenly.
  • Spread chickpeas out on a parchment paper-lined baking sheet.
  • Roast for 15-20 minutes.
  • Mix around on baking sheet and roast for additional 15-20 minutes, or until golden.
  • Cool for 5-10 minutes.
  • Enjoy!
